The dish is considered to be of medium difficulty in preparation. But using this step-by-step recipe, it is easy to repeat.

Ingredients:

  • boneless meat and pork ribs – 1 kg;
  • prunes with pits (you can take them pitted) – 700g;
  • salt;
  • ground black pepper;
  • turmeric;
  • sugar – 100g;
  • water – 200g;
  • sunflower oil – 30g.

Cooking method

  1. Wash the meat and ribs, pat dry with a paper towel, and then cut into medium pieces.

  2. Wash the prunes and soak them in cold water. Pour in enough water to completely cover the prunes. Leave for about 40 minutes (you can soak earlier and keep in water longer, then the plums will be softer and can be cooked faster).

  3. Salt and pepper the pork ribs and add turmeric.

  4. Heat the frying pan well, pour oil into it and heat it well, only after that put the meat and ribs in there, lightly fry them on all sides.

  5. Next, transfer the meat to a saucepan and pour boiling water over it. Pour in about a third of the volume of meat with water.

  6. We simmer the meat for 40 minutes over low heat, but if it is very tough, then it needs to simmer for an hour. It is advisable not to add water, since then the ribs will be stewed in sweet syrup, but if there is very little left in the pan, then you can add a little.

  7. We drain the water from the prunes and sort them out so that there is no debris, branches, leaves, etc. Place it on the ribs. Continue to simmer over low heat.

  8. Next you need to prepare the sweet syrup. To do this, add water to the sugar, boil for 5 minutes over low heat, pour over the drain with the meat.

  9. Continue to simmer the ribs with prunes until fully cooked (about 20-30 minutes), the plums should become soft.

    Important: do not stir the ribs when they are already stewed with plums! Otherwise, the prunes will “spread” and some of them will fall to the bottom, where they can burn.

  10. When the meat and plums are almost ready, you need to do one more little trick, namely, melt 2 tablespoons of sugar in a frying pan and pour this caramel directly into the pan with the ribs. Caramel will give a beautiful color to the meat, however, at first it will be a little hard, so boil the meat with plums and caramel for a few more minutes (maximum 5). If desired, you can add a bay leaf.

  11. Pork ribs stewed with prunes are ready! They should be served hot, as a separate dish. You may also be interested in tomato sauce and wine - try it.

How to cook:

Pour prunes with cold water for 25-35 minutes. Divide the washed ribs into portions and leave in water for 20-30 minutes. Remove from the water, dry the pieces and mix with pepper and salt. Heat the oil in a frying pan and add the ribs. Fry them a little until a crust forms. Place the ribs in a pan and cover completely with water. If necessary, add more pepper and salt. Add bay leaf. Stirring occasionally, simmer over low heat for 65-75 minutes. After 35-40 minutes. Add prunes to the meat in the pan. Simmer everything together until fully cooked.

Ribs with prunes, walnuts and white wine

Required ingredients:

  1. Pork ribs – 0.9-1.3 kg.
  2. Dried plum – 300-400 gr.
  3. Walnuts – 150-200 gr.
  4. Dry white wine – 150-200 ml.
  5. Bay leaf – 2-3 pcs.
  6. Onion – 1-2 pcs.
  7. Black peppercorns – 1 tsp.
  8. Juniper berries – 3-4 pcs.
  9. Salt to taste.

Cooking process:

Pour the washed and dried prunes with wine and let it brew for 25-30 minutes. Peel the nuts from the shell and divide them into small pieces. Wash the pork, add water and leave for a while. Dry the ribs and place the fatty part in the pan. Fry the ribs until golden brown in melted fat, so they will be juicier. Place the ribs in a pan and add a bay leaf there. Chop the onion coarsely and add to the pan. Grind the juniper and pepper in a mortar and add to the meat. Fill all contents with hot water. Simmer for 35-40 minutes. Remove the prunes from the wine and stuff them with walnuts. Add to the pan with the meat and simmer for another 25-30 minutes.

Step 1: Prepare the ingredients.

We don’t have many ingredients and the preparation is not complicated. The best place to start is with prunes. While you are working on the onions, peppers and ribs, it will just get soft enough. Wash the prunes and cover with cold water, leave for 15-20 minutes.

The ribs are prepared, and the frying pan along with the vegetable oil is already heated. It's time for the butter. Place it in the pan and after a minute add the ribs until the oil starts to burn. Why add butter and is it necessary at all? Even if you have a wonderful non-stick frying pan, you will not be able to fry meat well without fat, especially if it is not fatty. This way you will get juicy and rosy ribs, and the taste of butter will only benefit it.


Fry the ribs for about 10 minutes until a golden brown crust appears. Add onion and pepper, stir and fry over low heat for about 5-7 minutes until the onion is transparent.


Add prunes (if you want, you can pre-cut them) and pour in white wine, add spices, for example, suneli hops work well. Cover with a lid and simmer over low heat for about 20-30 minutes until ready.

Pork ribs can be bought either flat or cut into portions of 1-2 pieces. In the first and second cases, the ribs should be washed. Place the washed ribs in a bowl.

Sprinkle them with salt and spices.

Use your hands to coat them in the spices on all sides. Cover the bowl with cling film and place in the refrigerator. The marinating time for the ribs is about 1 hour.

Now we need prunes. To prepare pork ribs, it is advisable to use pitted prunes; if you cannot find one, you need to remove them yourself.

Pour hot water from the kettle over the prunes and let them sit for 10 minutes. Place the steamed and soft prunes in a colander. If necessary, remove the seeds from it. So, the pork ribs have already been marinated and the prunes have been prepared. But before you start baking pork ribs with prunes in the oven, they need to be fried.
