Turkey with zucchini in the oven is a vegetable stew with turkey fillet, baked in layers under a cheese crust with homemade tomato sauce. The dish is very tasty and aromatic. Turkey with zucchini turns out light, but satisfying and, importantly, consists only of healthy ingredients. An ideal dish in the summer, during the season of ripening your own vegetables.

Compound:

  • Turkey fillet – 800-1000 g
  • Zucchini – 2 pieces (small)
  • Eggplants – 2 pcs.
  • Bell pepper – 1-2 pcs
  • Cheese – 100 g
  • Salt - to taste

For the sauce:

  • Tomatoes – 6 pcs.
  • Onion – 1 pc.
  • Garlic – 3 cloves
  • Fresh herbs (basil, parsley or dill) – 1 bunch
  • Ground black pepper - to taste
  • Sugar - to taste
  • Salt - to taste

Preparation:

Let's make the sauce first. To do this, peel the onion and cut into cubes. Heat vegetable oil in a frying pan and add onion. Fry the onion over low heat for 10-15 minutes, stirring occasionally. The onion should take on an appetizing golden hue.

Peel the garlic and chop finely. Do not put the garlic through the press, otherwise it will burn. Add the garlic to the fried onions, stir and fry for 2-3 minutes.

Wash the tomatoes, make a cross-shaped cut on them and pour boiling water over them for 5 minutes. After this, remove the tomatoes from the water and peel them.

Coarsely chop the peeled tomatoes and puree using a blender.

Place the resulting tomato pulp over the fried onions and garlic.

Immediately add salt, sugar and pepper to taste. Season the sauce with dried herbs if desired.

Cook the sauce over low heat for 15 minutes. The liquid in the sauce will evaporate and it will become thicker. At the end of cooking, add finely chopped fresh herbs and stir. The sauce is ready.

Wash the turkey and cut into small cubes. Heat a little vegetable oil in a frying pan and fry the turkey over high heat for 3-5 minutes. Salt and pepper the turkey. Such frying is necessary so that all the juices remain inside and the meat is juicy. Place the turkey in a baking dish greased with vegetable oil.

Cut the zucchini into quarters, fry in the same oil you used to fry the turkey, and place them in a baking dish on top of the turkey.

Do the same with eggplants.

Cut the bell pepper into large pieces and place on top of the eggplants. There is no need to fry the peppers.

Place the pre-prepared tomato sauce on top of the peppers and distribute it evenly over the entire surface of the mold.

Cover the pan with foil and place in an oven preheated to 200 degrees for 1 hour.

Grate the cheese. 15 minutes before the end of cooking, remove the turkey from the oven, sprinkle with cheese and return to the oven, but without foil.

The turkey with zucchini is ready in the oven. Serve it hot, arranging it into portioned plates.

The procedure for preparing a dish in a multicooker is quite simple. It is enough to prepare all the products, place them in the multicooker bowl and set the required cooking mode. And after the allotted time, you will be able to enjoy the finished dish.

Ingredients:

The first step is to prepare all the products.

Step 1

To cook turkey and zucchini in a slow cooker, wash the zucchini and remove the peel. If the zucchini is very young, with soft skin, it does not need to be removed. Simply rinse them thoroughly under running water. After this, cut the zucchini into cubes.

Step 2

We wash the mushrooms and cut them into small pieces. We also wash the onion, peel it and finely chop it.

If instead of mushrooms you take tomatoes and bell peppers, wash them thoroughly, remove seeds and stems from the pepper and cut into small pieces.

Step 3

Select the “Baking” mode on the multicooker and fry the onions and mushrooms in oil for ten minutes, remembering to stir them often so as not to burn.

If you took tomatoes or sweet peppers, then fry them along with onions, instead of mushrooms.

Step 4

After this, add the zucchini to the bowl, mix everything thoroughly and cook on the “Baking” mode for another 5 minutes.

Step 5

We thoroughly wash the turkey fillet, remove all unnecessary veins and cut the meat into small cubes. Place in a slow cooker, and then add salt and ground black pepper to taste.

Set the multicooker to “Stew” mode and leave the dish to cook for 40 minutes. After this, you can take a sample. If desired, you can add sour cream to the turkey and zucchini stew to taste.

Turkey with zucchini in the oven is an excellent dietary dish to diversify your home menu. The meat is first lightly fried in a frying pan and then cooked together with the zucchini in the oven. The dish turns out incredibly tasty, and there is room for imagination, since you can change the spices and get a new taste of the dish every time. I also do not cook the only version, but add different herbs and spices.

Heat sunflower oil in a frying pan, place turkey pieces in it and fry until golden brown. Cut the onion into quarter rings, but not thinly, but so that it can also be felt well in the dish. Add the onion to the pan and fry along with the meat until translucent. At the end of frying, salt and pepper the meat.

Grease a baking dish with vegetable oil, lay out some of the zucchini, then the fried turkey fillet with onions. Place the remaining zucchini on top.

Cover the pan with foil, securing it on all sides. Preheat the oven to 180 degrees and bake the dish for 30 minutes.

Then remove the foil and pierce the meat with a fork. If the fork is difficult to insert, cook the turkey and zucchini in the oven for another 25-30 minutes until the meat is tender. If the fork goes in easily, brown the dish for 10 minutes.

Hot turkey and zucchini can be immediately sprinkled with chopped herbs. I chose dill and basil.

Place the dish on plates and top with fresh tomatoes.
