  1. For cookies, it is better to use margarine or low-fat butter (if the fat content is high, the cookies may spread during baking). Knead the softened butter well and mix with sugar and vanilla. Beat the mixture until smooth and fluffy.
  2. Then add milk and flour. Mix the mass well. The dough should not be dense, but not liquid either. It should come out easily using a pastry bag.

2. The mass should be homogeneous and quite thick.



3. Add half the flour to this mixture of butter and sour cream and stir with a spoon. Gradually add the remaining flour and then knead the dough. When it becomes difficult to do this with a spoon, transfer the “bun” of dough to the table, sprinkled with a very small amount of flour, and continue to knead the mass with your hands.





4. Form the dough into a tight ball (it should not stick to your hands), wrap it in cling film or a regular bag and place it in the freezer for half an hour. Be careful: if the dough sits too long in the freezer, you will have to waste extra time waiting until the dough softens to the point where it can be rolled out with a rolling pin.







5. Roll out the cool dough so that you get a cake 4-5 mm thick. Then cut the dough with a knife into squares 5 by 5 cm. Combine the excess pieces of dough that “do not fit” into the squares into another “bun”: it can be rolled out a little later.





6. Place a teaspoon of jam on the center of the square, spreading it out in the form of an oval, stretching from one corner of the square to the opposite.





7. And turn the other two corners in turn towards the center of the product so that they seem to hug the jam filling. Wrap the cookies from the remaining dough squares in the same way.
