But I still can’t go to the dacha... it’s too cold and wet, so here’s something else delicious. Surprisingly, I discovered several unpublished recipes, here’s one of them. For this pie, you need to bake a sponge cake, make a basket out of it, mix the crumb with cream, and then add berries. Amazingly delicious! By the way, this pie would be good with peaches or apricots; there is a similar option.

For the sponge cake, take 4 eggs, 120 grams of sugar and 120 grams of flour.
First, beat the yolks with sugar (two thirds) into a viscous light cream. Beat the egg whites until stiff peaks form, add the remaining sugar and beat well until stiff.

And mix the whites with the yolks.

Add sifted flour. Mix with movements from bottom to top from edge to center.

Place the dough in a greased and floured pan and level it out.

Bake at 200C for about 25-30 minutes, I check the readiness with a match; if you pierce the middle of the pie with it, it will remain clean.
Leave the biscuit to cool and stand for 8-10 hours.

Prepare sour cream: 250g sour cream, 50g powdered sugar, mix the core of the vanilla pod and leave for a while.

Cut off the top crust from the biscuit.

Remove the crumb to form a basket and add it to the sour cream. Mix.

Fill the basket with crumbs in sour cream, put berries on top. It's delicious to add some roasted nuts.

How to make berry sponge cake

Beat three chicken eggs into a dry wide bowl and add granulated sugar.

With a mixer, we begin to beat at low speeds, gradually moving to higher speeds. Continue beating until thick.

Then sift the flour using a sieve into the beaten eggs with sugar. You need to knead the dough with a wooden spoon.

Add a tablespoon of starch to the dough. Due to starch, the biscuit dough is more tender.

Next, you need to wash the lemon and remove the zest from the lemon.

Add fresh lemon zest to the dough.

Lightly grease the cake pan with butter.

Pour the prepared biscuit dough into the greased pan. Fill the cake pan halfway with dough. Make sure that the pan is level in the oven; the surface of the future cake depends on this.

Now let's prepare the cream for our sponge cake. Add lemon juice to the chilled cream.

The cream must be whipped with granulated sugar until it forms strong peaks.

Bake the biscuit dough at 170°C until golden brown. For 10-15 minutes when the biscuit is in the oven, do not open the lid, otherwise the dough will not rise.

Cool the finished biscuit, cut into two equal parts. To check if the biscuit is ready, pierce it in the center with a wooden stick. If it is dry and the dough leaves the sides of the pan, then the biscuit is ready.
The first part of the sponge cake should be generously coated with whipped cream.

Next you need to lay out the raspberries and mulberries.

Cover the top with the second cake layer; it should also be greased with cream.

Decorate the top of the sponge cake with raspberries, gooseberries, strawberries and mulberries.

One of the most popular desserts is sponge cake. After all, it is not at all difficult to prepare, and the taste is simply excellent. In addition, you can always diversify the filling for such baked goods, without ceasing to amaze your household. Today we'll talk about berries. The big advantage of this dessert is that it can be made not only in the height of summer, when there are a lot of fresh strawberries, raspberries, blackberries, etc. on sale. The sponge cake can be prepared even in winter, using frozen berries for its filling. So, let's look at a few easy-to-prepare and very tasty recipes.

Berry sponge cake with sour cream

This dessert will become a real decoration for your table. And since there is hardly a person indifferent to raspberries, cherries and strawberries, then carefully calculate the portions! After all, before you even blink an eye, there will be only crumbs left on the plate where the cake was before!

Ingredients

The biscuit with berries, the recipe for which we are now considering, is prepared from the following ingredients: 5 eggs, 120 grams of sugar and flour, a pinch of vanillin and 180 grams of butter. We will make dough from these ingredients. For the filling we will need: 100 grams of cherries, strawberries and raspberries, 400 grams of sour cream, 20 grams of gelatin, 100 grams of powdered sugar and half a glass of cream. If you like chocolate baked goods, you can also add cocoa powder when preparing the dough.

Cooking process

First, in a deep bowl, you need to thoroughly beat the eggs with sugar. It is advisable to do this with a mixer for about ten minutes. Add pre-sifted flour and vanillin. Using a whisk, stir the contents of the bowl until smooth. Pour the resulting dough into a baking dish. Place our biscuit in an oven preheated to 180 degrees for about half an hour. You can check readiness with a toothpick. Stick it into the biscuit. If it is dry, then the baked goods can be removed from the oven. If it remains wet, then the biscuit is not ready yet.

Now we need a suitable sized bowl or mold with a round bottom. Cover it with cling film. We wash the berries and, if necessary, remove the stems and seeds. Large fruits can be cut.

Soak the gelatin for a couple of minutes in cold water. At this time, heat the cream. Combine sour cream with powdered sugar and beat until fluffy. Combine the squeezed gelatin with warm cream and mix thoroughly. Now you need to let the mass cool a little. The main thing is not to let it freeze. Now you can mix it with sour cream. Cut the baked biscuit into small pieces.

Place a layer of berries on the bottom of the mold, lined with cling film. Then add a layer of sponge cake. Fill with sour cream. Please note that it should spread well and fill all the voids. Repeat layers as long as the size of the mold allows. Please note that it is advisable to do this quickly, until the gelatin begins to harden. So, our magnificent cake is almost ready! Place the biscuit with berries and the mold in the refrigerator. It should harden thoroughly in two to three hours. Before serving, you must turn the mold over and remove the dessert from it. This original cake will surely please you, your family members, and guests. Bon appetit!

Biscuit with berries in a slow cooker

We bring to your attention a very simple recipe for making dessert. For this biscuit, you can use a variety of berries to suit your taste, fresh or frozen. The dessert itself turns out very tender and airy. Your family will surely appreciate it.

So, to prepare this dessert we will need the following ingredients: one and a half cups of flour, half a cup of sugar, two teaspoons of baking powder, half a cup of sweet yogurt, three tablespoons of vegetable oil, half a lemon (we will use both zest and juice), two eggs, a glass of berries (fresh or frozen), a pinch of salt.

Instructions

Let's start with the test. To prepare it, mix the dry ingredients in a bowl - sugar, flour, salt and baking powder. Add oil, zest and lemon juice, yogurt. In a separate cup or bowl, beat the eggs. We also add them to the rest of the ingredients. Mix the mixture thoroughly until it has a homogeneous consistency. Add berries. Mix the dough carefully.

Place the resulting mass into a multicooker saucepan. You can pre-lubricate it with a little oil. Our biscuit with berries will take an hour to prepare in baking mode. After this time, you need to open the lid and use a toothpick to check the readiness of the dessert. As a rule, one hour is quite enough. When the dessert is ready, just remove it from the mold and cool slightly. You can also decorate our sponge cake with powdered sugar. Now you can serve dessert and invite your household members to drink tea! Bon appetit!

  • 1. Sprinkle berries (in my case black currants) with 1 tsp. starch (if there is no starch, use regular flour in the same proportions) and 1 tsp. sugar. Stir until each berry is coated with the starch-sugar mixture.
  • 2. Beat 4 eggs with 250 g of sugar and a bag of vanilla sugar (about 10 g) with a mixer at high speed for about 2-3 minutes, then add flour sifted through a sieve (200 g). Thanks to sifting, you will saturate the flour with oxygen, which, in turn, will raise the biscuit.
  • 3. Beat the dough with a mixer at high speed for at least 5 minutes. You will see bubbles begin to burst in the dough, which will be “raised” by the biscuit during the baking process.
  • 4. For sponge cakes, I recommend always using the “French shirt” preparation method: grease the bottom and sides of the pan with cold butter, sprinkle with flour and turn the pan, allowing the flour to cover the surface with a thin layer. Remove excess flour.
  • 5. Pour the finished dough into the prepared pan.
  • 6. Spread the berries over the dough in an even layer.
  • 7. Place in an oven preheated to 180C for 35-40 minutes. (It took me 45 minutes). Check the readiness of the pie with a wooden stick by making a puncture in the center of the pie. If the skewer comes out without traces of dough, the pie is ready.
  • 8. Cool the finished berry pie, sprinkle with powdered sugar, garnish with berries and fresh mint.
  • 9. Bon appetit!
