Prepare the dough for quick pizza:

In our world there are several dishes that have turned from purely national into a global culinary pleasure. And now every country has its own pizza, with its own characteristics, subtleties and charms.

To make pizza in the oven closer to ideal, you need to know a few rules:

  • Yeast pizza dough should be left to proof for as long as possible. Ideally, the dough should “walk” for 3 to 12 (!) hours. In the recipes, of course, they write differently, but try it;
  • Products for the filling (meat, fish, seafood) should first be boiled, stewed, fried, etc., since they simply will not have time to cook while the pizza is in the oven;
  • The pizza should be put into the oven immediately after the filling is laid out, otherwise the tomatoes will release juice and the dough will not bake;
  • The pan must be hot before cooking. While the oven is heating up, the baking sheet is heating up along with it. And the pizza should be rolled out on a sheet of parchment or foil and immediately transferred to a hot baking sheet. You will need some kind of tool like a wide shovel or a flat baking sheet with an open edge;
  • The baking temperature should be maximum, since in a wood-burning oven (in which real pizza is baked) the temperature reaches 450°C and higher. By the way, the following requirement (or rule) follows from this:
  • Baking time should not exceed 5-8 minutes. It is during this time that the dough will be baked, but will remain soft, and the filling will not lose its juiciness.

Pizza in the oven “Super”

Ingredients:
2-2.5 stacks. flour,
⅔ stack. water,
1 tbsp. vegetable oil (preferably olive),
½ tsp. salt,
6.5 g dry yeast,
1 tsp Sahara,
tomato paste, sausage, cheese, olives - to taste.

Preparation:
Mix water with vegetable oil, combine flour with sugar, salt, yeast. Mix water and flour and knead into a stiff dough. Keep it warm for 30 minutes, then divide it into 2 parts (use one part, freeze the second until appropriate) and roll it into a circle. Cover the dough with tomato paste, place thinly sliced ​​sausage on it, place olives on top and bake in an oven preheated to 250ºC for 10 minutes. Sprinkle the almost finished pizza with grated cheese. The cheese should melt, not bake.

Pizza with pickles and smoked sausage

Ingredients:
For the base:
120 ml warm water,
15 g fresh yeast,
1 tsp Sahara,
a pinch of salt,
2 stacks flour.
For filling:
2 pickled cucumbers,
100 smoked sausage,
100 g hard grated cheese,
1 bunch of greens,
4 tbsp. mayonnaise.

Preparation:
Dissolve sugar, salt and fresh yeast in warm water. Gradually add flour and knead into a sticky, sticky dough. Gather it into a ball, cover with a napkin and put it in a warm place for 25-30 minutes. Ingredients:
250 ml milk,
2 tbsp. Sahara,
11 g dry yeast,
125 g butter,
400 g flour,
salt, ground black pepper - to taste,

250 g cottage cheese,
100 g of greens,
100 g grated cheese,
1 tbsp. decoys.

Preparation:
For the dough, mix half a glass of warm milk, 1 tbsp. flour, 1 tbsp. sugar and yeast and leave for 10 minutes in a warm place. Sift the flour into a bowl, add the remaining warm milk, melted butter, salt, sugar and the prepared dough. Knead the dough and leave it in a warm place for 1 hour, then punch it down and leave for another 30-40 minutes. Divide the resulting dough into 2 parts, roll each into a flat cake about 1 cm thick and about 28 cm in diameter. Apply a layer of cottage cheese mixed with chopped herbs to the dough. Break the boiled chicken fillet into fibers and distribute evenly over the pizza. Sprinkle cheese on top and bake in an oven preheated to 200ºC for 20-25 minutes until done.

Pizza with minced meat, sweet peppers and tomatoes

Ingredients:
175 g flour,
125 ml warm water,
20 ml vegetable oil,
5 g dry yeast,
200 g minced beef,
100 g tomatoes,
1 orange bell pepper,
150 g hard grated cheese,
50 g ketchup,
greenery.

Preparation:
Mix flour with yeast. Add warm water and vegetable oil. Knead the dough for 2-3 minutes, then cover it with a towel or plastic wrap and let it rise in a warm place for 40 minutes. Fry the minced meat until done. Cut the tomatoes into slices and the peppers into cubes. Knead the risen dough for 1 minute, then roll it out into a circle with a diameter of 30 cm and a thickness of no more than 5 mm. Ingredients:
1 egg,

12 tbsp. flour,

5 champignons,

ketchup and mayonnaise - to taste.

Preparation:
Beat the egg with salt, add milk, soda and beat again. Add flour and knead the dough. Let it rest for 20 minutes. Meanwhile, cut all the vegetables into rings. Fry the champignons. Grease a baking dish with vegetable oil and pour the dough into it. Bake the dough for 15 minutes at 200ºC. Lubricate the workpiece with ketchup (you can use adjika). Let's start with the classic recipe for Pepperoni - the most popular pizza with salami sausage. It takes quite a long time to prepare compared to other recipes due to the fact that the yeast dough needs to be given time to rise, but the taste of this dough will be closest to classic pizza from a pizzeria.


Ingredients:

Pizza dough:

  • Sugar - 1 tbsp
  • Water - 50 ml.
  • Dry yeast - 1 tsp
  • Flour - 300 g
  • Warm water – 200 ml
  • Salt - 1 tsp
  • Olive oil - 1 tbsp

Pizza topping:

  • Salami – 100 g
  • Mozzarella cheese - 150 g

Tomato sauce:

  • Garlic - 3 cloves
  • Basil - 1 tbsp
  • Fresh tomatoes - 2 pcs.

Preparation:

1. To prepare the dough, mix sugar and yeast in 50 ml of water. Leave the resulting mixture for 10 minutes so that the yeast “wake up”.


2. In a separate deep bowl, combine the sifted dough with warm water, olive oil, salt and settled yeast. Mix thoroughly until a homogeneous dough without lumps is formed, then cover the bowl with a dry, clean towel and leave the dough to rise for 20 minutes.


3. While the dough is rising, prepare the tomato sauce. To do this, combine garlic with tomatoes and basil leaves, add salt and pepper and blend the ingredients with a blender until a homogeneous mixture is formed.


4. Take the risen dough out of the bowl and place it on a table sprinkled with flour. Knead the dough with your hands until it is no longer sticky, then roll it out with a rolling pin, achieving a thickness of no more than half a centimeter.


5. Then place the dough on a baking sheet, lightly sprinkled with flour, apply a layer of tomato paste on it, and put salami on top and generously sprinkle with coarsely grated cheese.

There is no need to grease the pan with oil; classic pizza is prepared on a dry basis

Place the pan in the oven preheated to 300 degrees for 15 minutes. If your oven maximum is 250 degrees, then increase the time by 5 minutes.

Another classic recipe, most often called “4 cheeses”. The dough is prepared from basically the same ingredients as in the previous recipe, but the cooking method itself is different.


Ingredients:

  • 250 grams of flour
  • 130 ml warm water
  • 1 tsp dry yeast
  • 1 tbsp olive oil
  • A pinch of salt
  • 100 grams Gouda
  • 100 grams mozzarella
  • 30 grams gorgonzola
  • 50 grams parmesan
  • 3-4 cloves of garlic
  • 30-40 grams of butter
  • basil or oregano

Gorgonzola is quite difficult to get, you can replace it with Dorblu

Preparation:

1. In a deep bowl, mix the sifted dough with salt, yeast, warm water and olive oil. Stir the flour first with a spoon, and after thickening, with your hands. Knead the dough until it becomes homogeneous and smooth. Place the resulting dough in a clean bowl, cover with a dry towel and put in a warm place for 1 hour.


2. When the dough has risen, knead it again, roll it out with a rolling pin and place it on a baking sheet lightly sprinkled with flour.


3. To prepare the sauce, finely chop the garlic and fry it over medium heat in melted butter.

There is no need to fry the garlic until it turns black, just wait for it to turn golden brown.


4. Grease the dough with the resulting garlic oil.


5. Then sprinkle the dough with basil and place pieces of Gorgonzola cheese on it


6. Grate Parmesan, mozzarella and gouda on a fine grater, mix and spread evenly over the pizza.

Place the pan in the oven preheated to 300 degrees for 10 minutes.

Seafood is another very popular type of pizza topping. This recipe will use fresh squid rings as the seafood. This is not the most tried and tested product in the central part of Russia, but it can be found on sale without problems.

If you don't want to experiment with squid, use shrimp or mussels. The main thing is that seafood should be fresh or frozen, but not canned.


Ingredients:

  • Flour - 3 cups (glass - 200 ml)
  • Warm boiled water - 1 glass (200ml)
  • Instant yeast - 1 package (9g)
  • Salt - 1 tsp
  • Vegetable oil - 2 tbsp
  • Ketchup
  • Squid carcass, cut into rings - 1 piece
  • Tomato – 1 pc.
  • Hard cheese

Preparation:

1. Knead the dough by combining water, salt, yeast, vegetable oil and sifted flour in one bowl.

Add the flour last after stirring the previous ingredients until smooth.

Knead the dough with your hands until it becomes smooth and no longer sticks to your hands. From the specified amount of ingredients you will get 3 pizza bases, so divide the dough into 3 parts and either prepare them all at once, or put the remaining 2 pieces in the freezer until the next time you cook.

The dough can be stored in the freezer for 1 week, then it will be difficult to make pizza from it - it will flake and fall apart


2. Roll out the dough to a thickness of 3-4 millimeters and place it on a baking sheet lightly sprinkled with flour.



4. Place thinly sliced ​​tomato slices on the seafood and sprinkle with finely grated cheese. Place the pizza in the oven preheated to 300 degrees for 10-15 minutes.

Using yeast dough left over from a previous recipe (or purchased at the store), you can very quickly prepare an excellent pizza with mushrooms and sausage.


Ingredients:

  • Yeast dough for pizza - 260 g
  • Tomato paste or ketchup - 4-6 tbsp
  • Champignon mushrooms - 1-2 pcs. (50-60 g)
  • Hard cheese - 300 g
  • Sausage (Salami) – 150-180 g


Preparation:

1. Since the dough is already ready, all you need to do is roll it out and place it in a suitable form.

When rolling out yeast dough, you do not need to press hard on the rolling pin. The movement should be done only with light pressure so as not to expel all the air bubbles from the dough, which give it tenderness and airiness.


2. Grease the dough with tomato paste (or any other sauce with a tomato base) and place thinly sliced ​​mushrooms on it.

If you are too lazy to start the yeast and wait for the dough to rise, you can prepare the dough with kefir. By adding kefir and soda to the flour, we will get a carbon dioxide release reaction, which will ensure the appearance of air bubbles in the dough and make it tender and airy.


Ingredients:

For the test:

  • Kefir - 1 glass (250 ml)
  • Soda - 1/2 tsp
  • Egg – 1 pc.
  • Flour - 1.5 cups (cup - 250ml)
  • Vegetable oil – 3-4 tbsp
  • Salt to taste

For filling:

  • Ketchup
  • Mayonnaise
  • Sausage
  • Tomatoes
  • Sweet pepper
  • Pickled cucumbers


Preparation:

1. First, mix kefir with soda and wait 10 minutes for the reaction to begin. Then break the egg into the kefir, add a pinch of salt and mix everything thoroughly. After this, we begin to add and knead the sifted flour in portions. First, mix the flour with a fork, and when the flour turns into dough, add vegetable oil to it and continue kneading it with your hands. The result is a smooth, non-sticky dough that needs to be set aside for 15-20 minutes to rest.

While the dough is resting, finely chop the ingredients for the filling.


2. Roll out the rested dough with a rolling pin, trying to give it a thickness of no more than 5 mm.


To ensure a perfectly round pizza, cut the dough using a wide plate.


3. Place the base on a baking sheet sprinkled with flour, grease it with ketchup and mayonnaise sauce and lay out the filling.

Don't try to put as much topping on your pizza as possible - it won't make it tastier.

Place the pan in the preheated oven for 7-10 minutes.

This crescent-shaped closed pizza is usually called a “Calzone,” but its classic recipe involves filling it with mozzarella cheese and sun-dried tomatoes. I offer a simple version of regular hard cheese and sausages to make it simple and tasty.


Ingredients:

  • Milk – 250 ml
  • Flour - 500 g
  • Butter (room temperature) - 50 g
  • Sugar - 50 g
  • Dry yeast - 20 g
  • Salt - 1 tsp
  • Sausages
  • Egg - 1 pc.


Preparation:

1. Combine sugar, salt, butter and milk in one bowl and beat with a mixer until a homogeneous mixture is obtained.

In another bowl, mix the dry ingredients - flour and yeast.

Then mix the contents of both bowls.

6. Break the egg into a bowl, stir it with a fork to mix the white with the yolk and grease the top of the pizza with the resulting mixture.
