Crab stick cutlets with cheese – recipe with photo:

Defrost a pack of crab sticks; if using a frozen product, remove the cellophane wrappers, place in a blender bowl and grind into small chips. You can grate the crab sticks, but then they should be slightly frozen. Separately, finely grate the cheese.

In a convenient cup, combine the chopped crab mass and grated cheese. The crab sticks themselves have a rather dry structure, so for juiciness we add mayonnaise, for fluffiness and binding - an egg with semolina, and for aroma - a crushed clove of garlic. There is no need to salt the mixture, since all products already have a sufficient degree of saltiness, but you can add pepper.

Stir the minced crab until smooth and let stand on the table for about 20 minutes. This time is necessary for the semolina grains to swell.

Wet our hands with water and form not too large cutlets. Give the crab stick cutlets a rounded and slightly flattened shape.

Then roll the cutlets in breading. In our recipe these are bread crumbs, but you can use flour or semolina.

Fry in refined oil over medium heat so that the crust sets immediately. Crab sticks cutlets with cheese turn out fluffy, rosy and very soft.

Serve the dish hot.

Hooray! everything worked out, I grated it in a food processor with the finest grater, it turned out to be a tender mass, there were no breadcrumbs, I had to take flour, and I got a crust, and inside there was a tender filling))))))))))))

Maria: | January 9th, 2013 | 8:56 am

Delicious! Although crab sticks are not the healthiest product, I can’t imagine how to replace them in this recipe

Juliana: | October 18th, 2012 | 9:05 am

I directly squeezed each bit before rolling them in breadcrumbs. So I don’t understand why everyone is falling apart. So the trick is that I ran out of cheese on half of the minced meat, and I continued without cheese. And again, nothing fell apart for me, so cheese is not a necessary holding element of this dish. Not only that, I put them in a glass liner in my favorite Italian casserole dish and steamed them. And again nothing fell apart. So it's a matter of pushing each bit hard. The dish is delicious: the cutlets are so tender.

Olga: | September 13th, 2012 | 8:40 am

mmm, delicious, just came from the kitchen, ate one, now let’s sit down at the table - enjoy))) thank you!
p.s. nothing fell apart, you really need to press it tighter, that’s all)

Natalya: | July 23rd, 2012 | 1:40 pm

Mine also fell apart a little at first. I added a spoonful of starch.
The main thing is to put it on the frying pan. Everything will grab and turn over without any problems.

Helen: | July 16th, 2012 | 7:50 pm

Sorry for such an unexpected question))) Should the eggs be raw? Or boiled and grated?

Answer: raw.

Natasha: | July 16th, 2012 | 2:47 pm

You know, mine also fell apart)) or rather, for some reason they didn’t even stick together)) I think because the cheese was hard on hand, I should use a softer one. Otherwise I don’t know why! but in order not to waste the ingredients, I made the resulting mass not into meatballs, but into a kind of casserole! Then I cut it into pieces and decorated it. it turned out delicious and beautiful!

Natalya: | July 3rd, 2012 | 6:44 dp

The bits turned out wonderful! My husband asked to leave them on our menu) Usually he evaluates all new items and predicts their future fate. And his taste is fine)
Dasha, you’re great for not deleting comments!! The first comment on this recipe really cheers me up)))

Answer: I honestly publish all comments, even if someone did not like my recipe. I think this is important for those who are about to try a new recipe for the first time. I'm glad everything worked out for you!

Ir: | June 7th, 2012 | 12:39 pm

Two out of five bits fell apart. As the play progressed, I realized what my mistakes were - maybe it will help someone:
1. The crab sticks were frozen. They had to be squeezed out a little to drain the excess liquid formed as a result of freezing. (I don’t know how to explain more precisely). Or make it from defrosted ones.
2. And the bits themselves need to be sculpted more tightly, pressed directly with your hands. I made the first two loose, and they fell apart. And I pressed the rest very tightly, and it turned out well.
My husband approved and said it could be cooked, but suggested frying it in olive oil.
Good luck everyone!

Answer: thanks for the addition! I'll even add it to the recipe, for everyone's benefit :)

Alexandra: | May 21st, 2012 | 8:44 pm

I was surprised by the recipe) Thank you very much for it! My husband was delighted)
I didn't think the preparation would be so simple. And yes.. nothing fell apart) The second time I cooked them, having already forgotten the recipe and used 1 egg, the process did not go so smoothly. You learn from mistakes) Now you don’t need to write down sales, I remember everything)

Natalyonok: | March 5th, 2012 | 4:04 pm

I did it, I’m very pleased with the taste and the process) I also don’t understand what could have fallen apart? They mold perfectly, and with dry hands. I had other ambushes due to my own stupidity. The first one was that yesterday, like a smart person, I put the sticks out of the freezer, knowing that I would be preparing these meatballs, but without really reading the recipe. Accordingly, there was no way to grate them, I had to chop them in a mug like eggs))) But I liked it - I’m not friendly with a grater, I always rub my fingers at least a little. And secondly, there weren’t any crackers in the house, I didn’t want to spoil the taste with flour, and the first batch of meatballs came off the frying pan with some effort. And I dipped the second one in the egg and everything turned over perfectly. Next time I’ll try baking it in the oven and brush it with egg for the crust. I'm adding this recipe to the family menu)))
Thanks for the advice with breadcrumbs, now I’ll do the same, otherwise I’ll eat all the stubs after the kids)

Answer: I’m glad, Natalya, that you liked it! I also pick up stubs for my daughter all the time, sometimes I find them in the most unexpected places (in shoes, a washing machine, in a flower pot). Apparently, he is stocking up for a rainy day :)

Natalyonok: | March 5th, 2012 | 7:14 am

I started making it and started thinking – do you make breadcrumbs yourself? How?:-)

Answer: We eat bread prepared in a bread machine. Mostly I cook regular wheat. I dry all the bits and half-eaten pieces that remain. I set some aside and use it when making cutlets, and grind some in bulk using a blender. I get those same breadcrumbs. I don’t dare throw away bread; I always try to find a use for it.

Alexandra: | February 23rd, 2012 | 3:08 pm

A great addition to Fish Thursday:)
The meatballs turned out great, even though I didn’t fry them, but baked them in the oven (15 minutes at 180 degrees).

Natalya: | February 2nd, 2012 | 2:08 pm

Excellent, quick, tasty recipe. I’ve been using it for a long time. Very helpful when you don't have time.

The dishes we offer are very simple to prepare, but can surprise even gourmets. Products for cooking are quite accessible to everyone; everything is easy to find in modern stores and hypermarkets.

To prepare cutlets, you can use both the sticks themselves and crab meat. It all depends on your taste and preferences. There are no restrictions on companies and composition; most often the composition contains surimi - a mixture of fish fillets of various breeds.

Due to the fact that crab sticks are an inexpensive product, the dish can be prepared even without a special reason. We invite you to consider recipes for making cutlets from crab sticks with visual photos.

Crab sticks cutlets with cheese: a simple recipe

This simplest method of cooking cutlets with cheese can be easily done by any cook. Three sticks and cheese on a grater; the cheese will add saltiness and unusual piquancy to the dish.

Salt and pepper the resulting mixture. Then you need to add eggs and garlic.

Mix everything thoroughly so that the mixture is homogeneous.

We form round balls from this mass, roll in breading and fry in a frying pan until crusty. The cutlets are ready!

They can be served both cold and hot. The best part is that in this recipe the cheese does not leak out, but remains inside the finished cutlet. As a side dish, a salad of tomatoes and fresh herbs with a dressing of sour cream and garlic is perfect.

Fried onion version

Crab sticks are not particularly juicy; they can even be called dry, since when preparing fish fillets, they are spun in a special “centrifuge” so that excess moisture is removed from it.

Therefore, when preparing them, they add not only products for “gluing”, but also those that give the dish additional flavor. One of these products can be onions, but not just raw minced onions, but fried ones, which can add smell and taste to this dish.

  • Flour as needed;

It is only important to warm it up slightly - bring it to a transparent golden color so that the bitterness and harshness go away and a pleasant smell and shade appear.

Grind the sticks with garlic, fried onions and pieces of white bread through a meat grinder. Add egg and mayonnaise to the mixture, add salt and pepper, add flour if necessary to make the minced meat dense. Form small cutlets from the resulting mass and let them brew for 15 minutes. Next, fry them in preheated vegetable oil until crispy. There is no need to fry the cutlets for a long time, since all the ingredients of the dish are already prepared.

The dish can be combined with various side dishes of your choice or vegetable salad.

Cooking tips

These are the 3 simple dishes we offer to your attention today. To make the cooking process easier and more enjoyable, we’ll tell you some culinary secrets:

  1. Chilled semi-finished products are better suited for making cutlets. If you purchased a frozen product, then to quickly defrost it, simply immerse the bag with chopsticks in hot water for 3 minutes to thaw;
  2. It is better to add not whole eggs to the minced meat, but only the yolks. Then the possibility of the protein folding when heated is eliminated and the cutlets will never turn out tough;
  3. You can carefully place butter inside each cutlet, then the finished dish will turn out very juicy;

Remember a few cooking tips:

  1. Crab cakes taste better if you can taste the stick pieces in them. Therefore, you can grate them, pass them through a meat grinder or grind them with a blender, but the main thing is not to overdo it.
  2. Be sure to add products that have binding properties to the minced meat. Soaked bread crumb, rolled oats, breadcrumbs, semolina, eggs are suitable.
  3. For juiciness, add cheese, onions, sour cream, and mayonnaise to the dish.
  4. Cutlets are cooked not only in a frying pan, but also in the oven, slow cooker, or double boiler. The method of heat treatment affects the calorie content of the finished dish.
  5. It is preferable to use chilled surimi rather than frozen. To bring the product to the desired temperature, remove it from the refrigerator in advance or keep it in warm water for a while.
  6. It will be better if you add not the whole part of the egg to the minced meat, but only the yolk. The property of protein to coagulate under the influence of high temperature makes the finished dish excessively tough.
  7. Before breading the pieces, you can dip them in batter. The crust will lie smoother and turn out more beautiful.
  8. When forming the cutlets, place a small slice of butter inside each. They will turn out much juicier.
