Homemade kefir cakes in a frying pan. Step-by-step recipe for making kefir flatbreads with photos. Potato cakes - what you need for cooking

Memories of a happy childhood are often associated with delicious fluffy flatbreads that grandma bakes in a frying pan. They attract with their golden color alone. There is simply not enough strength to wait until they cool down and stop burning their fingers and tongue... Today, many adhere to the rules of a healthy diet and exclude yeast baked goods from their diet. In this case, kefir flatbreads are a tasty alternative to regular bread. And any housewife can prepare this simple dish.

Armed with the proposed recipe and a good mood, get to work!

List of ingredients:

  • Kefir – 500 g;
  • Flour – 800 g;
  • Chicken egg – 1 piece;
  • Vegetable oil – 2 tablespoons;
  • Soda – 1 teaspoon;
  • Sugar – 1 dessert spoon;
  • Salt - a pinch;
  • Filling – mashed potatoes with dill;
  • Butter for greasing the finished flatbreads.

Cooking method

  1. Pour room temperature kefir into a suitable container. It will become this way if it sits outside the refrigerator for several hours. The “sourness” that appears will only improve the dough. You can use stale fermented milk product of any fat content.
  2. Add salt, sugar, soda to kefir and mix well. The soda must be completely quenched by the acid present in kefir. Add the egg and vegetable oil to the mixture, mix everything well. You can do without eggs. The taste of the dish will not be affected; even vegans can eat these flatbreads.
  3. Sift the flour (preferably 3 times). Now add the flour to the kefir-egg mixture little by little and knead until you get a soft, thick dough (like dumplings). It may be sticky.
  4. Leave it for 20 minutes, covered with a clean cloth. The dough must stand for the gluten to swell.
  5. Divide the standing dough into 8-10 parts with a knife (depending on the diameter of the pan). Sprinkle with flour and roll each part into a circle 0.5 centimeters thick. Place the filling in the middle.
  6. Pinch the edges to hide the filling. Shape the flatbread with your hands.
  7. Press down lightly with a rolling pin so that the thickness of the product is no more than 1 centimeter. Leave for a few minutes again.
  8. Heat a frying pan and heat some oil on it. Place the flatbreads one at a time in the pan and fry on both sides, covering with a lid.
  9. Place the finished cakes one on top of the other, brushing each with melted butter.
  10. Cover the slide with a towel and leave for a while.

Soft, airy, delicious flatbreads are ready!

By the way, the filling needs to be prepared in advance so that it has time to cool. Hot puree to raw dough is not a “comrade”. In addition to potatoes with dill, you can fill the flatbreads with stewed cabbage or mushrooms, cottage cheese with herbs, sausages or ham and cheese. If you prepare this delicacy without filling, you can eat it instead of bread. And if you use jam or sprinkle the scones with sugar, you will get a great dessert!

If you don’t like bread, then I suggest baking delicious flatbreads with kefir, using my recipe with photo, just in a frying pan, without filling. This is a quick option, very interesting - the cakes always turn out very tender, soft, but, most importantly, fluffy. If you grease the flatbreads with garlic sauce, you can safely press them to. If you grease the cakes with jam, they will complement strong tea or a glass of fresh milk. Today I made kefir flatbreads for the first time and I’ll be honest, they turned out to be simply amazing in taste.
I fried these flatbreads in a pancake pan, but you can use any Teflon-coated pan. If you prefer cast iron skillets, then use it for frying tortillas. To ensure that the flatbreads remain soft on the second day, I recommend greasing them with a piece of butter and wrapping them in a towel, or simply placing a plate with them directly in a plastic bag. This way, on the second and even third day, the tortillas will remain soft and tasty.
Ingredients:
- 1 egg,
- 1/3 cup kefir,
- a pinch of salt and granulated sugar,
- 2 tablespoons of vegetable oil,
- ½ teaspoon of soda,
- approximately 2-2.5 cups of flour.

How to cook with photos step by step

Beat a chicken egg into a deep bowl or enamel pan. Add salt and sugar to it literally a pinch at a time.

Then pour in 2 tablespoons of vegetable oil, it is better that it is store-bought and odorless.
Pour in kefir. Mix everything with a metal whisk or mixer.

Add baking soda. Please note that there is no need to extinguish it due to the fact that kefir is used. Any fermented milk product perfectly extinguishes soda.
Knead the dough. Leave it for 20 minutes.

After that, divide it into pieces.

Roll each into a layer.

Pour oil into the pan or place a piece of butter. When the oil is hot, add the flatbread and fry it until nicely browned. The fire should not be strong so that the cakes have time to bake inside.

Stack the finished flatbreads and serve with your favorite dish!
Bon appetit!

Another interesting option -

And I'm back with flatbreads. Well, what can you do - the heat makes its own adjustments to the menu, you don’t want to bake bread, and you can’t live without it. This time I made kefir cakes in a frying pan; I think the recipe with photos will be of interest to all lovers of quick baking. The dough is perfectly obedient, not capricious at all. I rolled it out and onto the frying pan. The flatbreads are very fluffy, with bubbles and a thin crispy crust. Kefir is not necessarily fresh; the more sour it is, the tastier and fluffier the cakes. You can replace it with sour milk or yogurt. In general, a simple and quick recipe for kefir flatbreads will be useful not only in the summer.

Flatbreads are fried on kefir in a frying pan very quickly. Literally a couple of minutes on each side - and you can shoot. Make two servings at once - they will scatter instantly, they won’t even have time to cool down!

Ingredients

To prepare kefir flatbreads you will need:

  • wheat flour – 400 g;
  • low-fat liquid kefir – 250 ml;
  • Sunflower oil – 2 tbsp. l. in dough + for frying;
  • large egg – 1 piece;
  • fine table salt – 1 tsp (more is possible, up to 1.5 spoons);
  • granulated sugar – 1.5 tsp;
  • soda - 0.5 tsp;
  • vinegar for extinguishing - 1 tbsp. l.

How to cook kefir flatbreads in a frying pan. Recipe

There is no need to beat or heat anything, the dough is kneaded in a matter of minutes. I pour a glass of kefir into a deep bowl and break an egg.

I add salt and a little sugar to balance the taste. I recommend adding more salt, one spoon was not enough for us, the cakes turned out a bit bland.

While pouring in the sunflower oil, I vigorously work with a whisk, whisking all the ingredients.

I sift a little flour, about a third of the total amount. I stir, at this stage you need to slightly thicken the kefir to add slaked soda.

I pour the soda with vinegar, and as soon as the reaction passes (the bubbles disappear) I add it to the dough. You can pour in earlier, before adding the flour, and leave for a few minutes.

After two or three minutes, when all the ingredients “make friends,” add more flour and stir. Add in portions until the mixture thickens.

I pour the remaining flour onto the board, lay out the dough and quickly knead by hand.

When kneading, I use flour very sparingly; under no circumstances should the dough for kefir flatbreads be made dense, otherwise it will be difficult to roll out. The bun will be very soft and a little sticky.

In the photo you can see how dense the dough is: elastic, soft, stretches easily. If it breaks, it means there is too much flour, add a little kefir and mix. After kneading, I leave it to rest for half an hour, covered with film.

I divide the bun into equal pieces and cut it on a board with lightly dusted flour.

Then I round each one, rolling it into a bun and kneading it slightly. This will make it easier to stretch to the desired thickness and shape.

You can roll it out with a rolling pin, but I find it easier to use my hands. I knead from the middle to the edges, making the size according to the diameter of the frying pan (about 15-20 cm).

So that when frying kefir cakes in a frying pan they do not swell and fry evenly, I prick them with a fork.

Every housewife should have a standard recipe for kefir flatbreads. In our hectic life, situations are not excluded when the house runs out of bread at the wrong time. Or the body requires something homemade, nourishing, floury, but there is neither the energy nor the time to prepare pies. Classic flatbreads differ from pies in the lack of filling and in their size. The cakes are baked the size of a frying pan, which makes the process less labor-intensive and faster.

Kefir flatbreads can be cooked in the oven, in a frying pan, or in a slow cooker. In the oven, the products are not as fatty, but do not have an appetizing crispy crust, as when fried. The flatbreads are prepared “empty” or with different fillings. It can be fried mushrooms, sausages, meat, cottage cheese, herbs, cheese and much more. Flatbreads allow you to economically dispose of leftover food in the refrigerator, use expired kefir, or stale pieces of sausage or cheese.

Most often, the dough is kneaded with wheat flour. But if you make it with rye or corn flour, you will discover new flavor combinations.

If desired, the flatbreads can be baked from a batter with a slightly thicker consistency than pancakes. These flatbreads are soft, go well with the fillings, and envelop them. You can also knead the dough thicker, like for pies. In this case, the dish will differ from pies in the absence of filling, and if your flat cakes are filled, then generally only in size.
