The longer you cook the squid, the tougher and rubberier it becomes.

First of all, the squid must be cleaned of film. It can be easily removed if the carcass is first doused with hot water and then cold. Then the skin is removed almost in one piece and almost without effort. If there is a dorsal chord inside, then it must be pulled out. The finished squid carcass goes to an empty bag.

For cooking, it is best to boil salted water in a saucepan and lower the squid there for five minutes. After that, take it out immediately. An alternative to this method is to place the squid in boiling water, but remove the pan from the stove. Cool boiling water will be enough for the squid to cook without active boiling. It is very tender and cooks extremely quickly.

Canned squid is even less hassle. They are ready to eat and properly cooked, so they are always quite soft and tasty.

A simple and delicious salad with squid, cheese and pickled cucumbers

This squid salad is prepared in just a few minutes. Especially if you use canned squid and there is no need to waste time cooking it. The festive version just needs to be decorated a little and a delicious squid salad will complement the holiday menu.

You will need:

  • squid (boiled or canned) - 300 grams,
  • pickled cucumbers - 2-3 pcs,
  • hard cheese - 150 grams,
  • mayonnaise for dressing,
  • olives, herbs, cucumbers for decoration.

Preparation:

1. Boil the squid in advance and do not forget to cool it as soon as you remove it from the hot water. Prepare the rest of the ingredients.

2. Cut the squid into small strips.

3. Grate the cheese on a coarse grater. Use your favorite type of cheese that you like the taste of.

4. Cut into thin cubes, much like squid. You can also use pickled cucumbers for salad, even pickling your own.

Ingredients:
- 300 g squid
- 300 g chicken fillet
- 2 fresh cucumbers

- 150 g mayonnaise
- 100 ml white wine
- 100 ml water
- 1 tbsp. l. lemon juice
- 1 tbsp. l. red caviar
Description:
Boil the chicken fillet, cool, cut into cubes.
Mix wine with water and bring to a boil. Switch off. Place the cleaned squid carcasses there. Hold for a couple of minutes. Remove, cool and cut into cubes. The squid turns out very soft.
Cut the cucumber into cubes.
Prepare the dressing sauce. Add lemon juice and a spoonful of red caviar to the mayonnaise. Mix carefully so as not to damage the eggs.
Now put the salad in layers in the bowls.

Place chopped olives on top. Garnish with caviar and parsley.

7. Gulliver squid salad
Ingredients:
- 300-400 g squid fillet
- 500-600 g jacket potatoes
- 100-150 g pickled cucumbers

Peel the apple, grate it and place it on the squid.
Grate the eggs (leave 1 yolk), place on the grated apple, pour over the sauce.
Cut the cucumbers and place.
Place the remaining potatoes on top and pour the sauce over them.
For the sauce: mash the yolk with a fork, add spices, lemon juice, soy sauce and oil, mix well.
Let the salad soak, turn it over onto a plate, and garnish with an apple.

13. Chinese cabbage salad with squid
Ingredients:
- 300 g squid
- 2 fresh cucumbers
- 2 fresh tomatoes
- 300 g Chinese cabbage
- 1/4 bunch. dill
- salt - to taste
- 1-2 tsp. lemon juice
- olive oil
- pomegranate seeds (for decoration)
Description:
Clean the squid carcasses, boil and cut into thin strips.
Cut the cucumber into thin long strips or grate it on a Korean carrot grater.
Wash the tomato, dry it, cut it in half, remove the pulp, and cut into strips.
Wash and chop the leaves of Chinese cabbage. Add salt and mash with your hands.
Wash the dill, dry and chop.
Combine cabbage, squid, cucumber, tomatoes, dill and mix gently.
Lightly salt the salad, sprinkle with lemon juice, season with olive oil and mix again.

Ingredients:

For filling:

- a glass of 20% cream
- 20 g gelatin
Description:
Shred the liver with a fork.
Finely chop the crab sticks.
Finely chop the squid too.
Soak the gelatin in cold cream for 10 minutes.
Cut the cucumbers and tomatoes into small cubes and add salt.
