The simplest recipes for light salads without mayonnaise

Yes, they exist in nature - amazing and delightful in their simplicity. And they can be made in almost a few moments if the declared components are available. Cabbage

Today, probably, everyone knows that it is not citrus fruits that are the true suppliers of vitamin C to the human body, but simple and cheap white cabbage. It also contains folic acid and a lot of fiber! The taste of fresh and young cabbage is very rich and pleasant. We’ll also add strong cucumbers, bright carrots, a sour apple, juicy and sweet peppers, the freshest herbs and a spoonful of freshly squeezed lemon juice. Since we are preparing a light vegetable salad without mayonnaise, we season everything with fragrant and aromatic virgin olive oil. Either flaxseed or cold-pressed sunflower. By the way, we also recommend avoiding vinegar dressing; as a last resort, use natural apple or grape balsamic.

Ingredients: half a head of cabbage, several fresh cucumbers, a couple of sweet bell peppers, one large carrot, a bunch of fresh herbs, a spoonful of lemon juice and a spoonful of vegetable oil, salt.

"Caprese"

Refined and at the same time simple, quite cheap and very tasty - all this is about the Caprese salad, which will become a real decoration for any table, festive or everyday. The preparation is simple: cut the tomatoes and mozzarella into slices, place them in a container in layers, sprinkle with basil leaves and sprinkle with olive oil (you can use flaxseed, sesame, and sunflower). And that is all. We are preparing a light salad, without mayonnaise. However, there is one rather interesting option - season with liquid honey and lemon juice. The solution is, of course, unusual, but worth a try.

Ingredients: half a kilo of large tomatoes (fresh), 150-200 grams of mozzarella, several sprigs of basil, olive oil, salt.

Greek

Telling how and from what you can prepare simple light salads (without mayonnaise, of course), you can’t do without mentioning Greek. Moreover, classical traditions do not at all cancel creative freedom. Traditional feta (very high in calories, by the way) can be replaced with other cheeses: feta cheese, Adyghe cheese, suluguni (tofu for vegans). Onions - leeks or white, red salad. The dressing can be extra virgin olive oil, lemon juice, balsamic or natural apple vinegar. It is customary for us to cut the ingredients into cubes, season and mix. But the Greeks do it differently: they serve dressings separately, and coarsely chopped cheese and vegetables separately.

Ingredients: several fresh tomatoes, feta cheese - 150-200 grams, onion, one sweet pepper, pitted black olives, vegetable oil and lemon juice.

"Caesar"

You may be surprised, but this favorite dish can be prepared without mayonnaise. A light and tasty chicken salad will be a real decoration for your holiday table! Secret: to make the Caesar as juicy as possible (which is quite difficult to achieve if you boiled the breast - it is too dry), we will not use boiled meat. Cut the raw fillet into pieces and quickly fry (2 minutes is enough) in boiling oil. The fillet will turn out juicy, so the “lemon juice + olive oil” dressing will be quite enough. And fresh vegetables, crispy leaves of green salad or arugula provide the dish with rich taste and juiciness. Crackers with sesame seeds, garlic, eggs, which can be chicken or quail - well, just a feast for the stomach!

Avocado with squid

What other simple recipes for light salads without mayonnaise can you try for the New Year's table? So that everything would be festive and delicious? Take one ripe avocado, half a kilo of peeled boiled (or marinated) squid, freshly prepared crackers (half a loaf of toaster bread is browned in the same machine and cut), any hard cheese, lemon juice (1 spoon) and orange juice (1 spoon), a little mustard with spices . We cut everything and mix it - and here we have a fragrant, very airy, tender and festive representative of the glorious family of light salads without mayonnaise (see photo above). And believe me, on any holiday (including New Year’s) table this dish will not remain untouched for long.

Herring under a fur coat

We continue the holiday theme - and it is very extensive. All housewives probably know how to prepare such a familiar and traditional salad in the post-Soviet space as herring under a fur coat (although there are various variations of it). We offer another equally interesting method: cooking without mayonnaise. Yes, yes, this is quite possible. This is a lighter version of everyone's favorite holiday dish. Now it’s fashionable (in the sense of a healthy lifestyle), and some home cooks boldly remove fatty and unhealthy mayonnaise from the recipe, replacing the ingredient with sour cream and mustard sauce, and to give the salad an original look, they make it in the form of parts - separate portions, that is, they add classic layers not in large containers, but separately in cups. The recipe for “crab” salad is probably in every home cook’s arsenal. Some cheaper ingredients - crab sticks - are replaced with boiled and peeled shrimp, but this will make its cost more expensive. Otherwise, everything is according to plan: canned corn, egg, fresh cucumbers, onions.

Salad with chicken and sour cream sauce


Products:

— 1 chicken breast
- a little olive oil
- salt, ground pepper
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 2 cloves of garlic
- 2 tbsp. spoons of butter
- 10 lettuce leaves
For the sauce:
- 3 tbsp. spoons of sour cream
- 2 tbsp. spoons of honey
- 5-6 mint leaves
– 5 teaspoons fresh thyme
- shavings from one lemon
- 1 tbsp. spoon of olive oil
- salt pepper

Preheat the oven well at 180 degrees. Salt and pepper the breast and coat it well with olive oil with your hands. Heat the oil in a frying pan and fry the breast until golden brown. Take a small baking tray, put rosemary, thyme, oregano, garlic on the bottom and place chicken breast on top. This way, when the chicken bakes, it will absorb all the flavor from the seasonings.

Heat the butter to a boil and pour the boiling oil over the chicken. Bake in the oven for 15 minutes. When it cools down, cut into thin portions. Wash the lettuce leaves well and let dry.
In a small bowl, combine all the ingredients for the sauce and mix everything thoroughly. Place lettuce leaves on a plate, top with breast, and pour sour cream sauce over.

Athena salad


Products:

- 1 bunch of curly lettuce
- 0.5 cups of red cabbage
- 0.5 head of white cabbage
- 2 kiwis
– 1-2 walnuts
- 1 orange
- 2 teaspoons honey
- salt

This is a beautiful, simple and easy salad for a birthday or for a children's table. Wash the lettuce leaves, let dry and place on a large flat dish, along the edges. Finely grate the white cabbage on a special grater and place it in the center of the dish, in the shape of a circle. Cut the red cabbage in the same way and place it around the white cabbage, creating a ring. Place some red cabbage in the center, on top of the white cabbage.

Peel the kiwi, cut into thin slices and place on top of the red cabbage and one piece in the center of the dish. Break the nuts and place them on top of the white cabbage in the form of flower petals. Cut the orange and squeeze half the juice onto the salad. Drizzle with honey and olive oil. Add salt to taste, or without salt. This salad is sweet and sour.

Canned tuna salad


Products:

— 250 gr. rice
- 1 canned tuna in its own juice
- 100 gr. cheese
— 3-4 pickled cucumbers
— 6-8 green olives (pitted)
- 1 sweet red pepper
- 7 tablespoons olive oil
- 1 can of canned corn
- 2 tablespoons grape vinegar
- 1 spoon of mustard
- salt pepper

This fish salad will decorate any feast, be it New Year’s or birthday. Boil the rice in salted water until tender. While the rice is cooking, prepare the sauce for our salad. In a small bowl, whisk together and whisk the vinegar, olive oil and mustard. We leave it in the refrigerator until we prepare our salad. Cut peppers and cucumbers into small pieces, olives into small circles, cheese into small cubes. Place the rice in a colander, rinse with cold running water and place in a salad bowl. Add all the ingredients and pour over the sauce from the refrigerator. Mix everything well, add salt and pepper.

Italian salad with feta cheese

For the sauce:

- one bunch of parsley
- 10 fresh basil leaves
- ¼ cup oregano
- 2 cloves of garlic
- ¼ cup vinegar from red wine
- ¾ cup olive oil
- ¾ teaspoon salt
- ¼ teaspoon pepper
- 1 1/5 teaspoons honey

For the salad:

- 10 lettuce leaves
- 1 large red pepper
- 2-3 fresh cucumbers
- 1 large carrot
- 4-6 cherry tomatoes
- a few pitted olives
- 100 gr. feta

First prepare the sauce. Pass all ingredients for the sauce through a blender. Wash the lettuce leaves, dry them, chop them coarsely and place them in a deep salad bowl. Cut the carrots into very thin, full-length strips. Cut the cucumbers and peppers into cubes. Cut the olives into thin slices, cut the tomatoes into two or four parts. Place everything in a salad bowl, pour half of the prepared sauce, taste, if necessary, add the remaining sauce or less, not forgetting that you will also add feta, which is a little salty. Salad ready.

Salad with pomegranate and walnuts


An easy and delicious birthday salad that is simple yet sophisticated.

Products:

For the salad:

— 350 gr. smoked turkey (can be replaced with smoked chicken)
— 50-60 gr. feta
— 600 gr. spinach
- 1 small pomegranate

For the sauce:

- 2 teaspoons mustard
- 2 cloves of garlic
- 2 tbsp. spoons of grape vinegar
- 2/3 cup olive oil
- salt pepper

For nuts:

- 1 cup chopped nuts
- ½ teaspoon salt
- 1 tbsp. spoon of sugar

We need a non-stick frying pan. In it, fry the nuts with salt over low heat for about 5-6 minutes. Then add sugar, and stirring constantly, fry for another 6-7 minutes so that the nuts turn out to be a beautiful golden color. Place on a plate to cool. In a small bowl, whisk mustard, crushed garlic and vinegar. Gradually add olive oil and finally salt and pepper. Cut the turkey into very small pieces, wash the spinach, peel the pomegranate, cut the feta into small pieces. Place the spinach in a salad bowl and lightly pour the sauce over it, mix the turkey with a little sauce and top it with the spinach. Then sprinkle with feta, nuts and the remaining sauce. Bon appetit, this is delicious!

Corn salad

A simple salad made from simple ingredients, whether for a holiday table for children or adults, or for every day for household members. So, we continue the list of salads without mayonnaise for a birthday, offering simple and tasty recipes with photos.

Products:

- 3-4 heads of fresh corn
- 2 red peppers
- 2 bows
- half a bunch of dill

- 2-3 tbsp. spoons of olive oil

Finely chop the peppers and onions and place on a large baking sheet. Place the corn next to it without removing the leaves. Bake for 30 minutes at 180 degrees. When the corn has cooled, remove the leaves and cut off the kernels with a knife. Place in a bowl, mix with vegetables and finely chopped dill. Salt, pepper, grease with oil and mix well. Fresh corn can be replaced with canned corn. This salad can also be placed in molds, as shown in the photo.

Salad with shrimp and potatoes


A very tasty salad that adults and children will like, with seafood, simple and easy to prepare.

Products:

— 500 gr. peeled shrimp
- 2 tbsp. spoons of lemon juice
- 1 clove of garlic
- a little parsley
— 500 gr. boiled potatoes
- 200 gr. cherry tomato
- 2-3 lettuce leaves
- 4 green onions
- a little olive oil
- salt
- pepper

Wash the shrimp, place in a small bowl, add salt, pepper and lightly sprinkle with lemon juice. Place in a frying pan and simmer for 3-5 minutes over high heat. Then add a little oil, crushed garlic and some finely chopped parsley. After a few minutes, remove from heat.

Cut the boiled potatoes into small pieces into a salad bowl, cut the tomatoes into two parts and add to the potatoes. Add chopped green onions there.
Place the shrimp on top, season with salt and pepper lightly, and pour over the remaining oil. Lay out the whole lettuce leaves and sprinkle with parsley.

Tip: do not overcook the shrimp, be careful, otherwise they will be hard.

Salad with tuna and egg

Products:

- 6 lettuce leaves
- 2 leaves of red cabbage
- 4 boiled eggs
- 1 canned tuna in oil
- 1 tomato
- 1 cucumber
- salt
- oregano
- a little olive oil
- balsamic vinegar

Finely chop all the vegetables and put them in a deep salad bowl, open the canned food, pour out the soup and put it on the vegetables with a fork. Cut the eggs into four parts and place in a salad bowl. Season everything with salt, pour olive oil, sprinkle with oregano and sprinkle with vinegar.

Salad with baked pumpkin and arugula

— 2 kg. fresh pumpkin
- 2 tbsp. spoons of olive oil
- 1 bunch of arugula
- 100 gr. cream cheese
- a few fresh mint leaves

For the sauce:

- juice from one lemon
- ¾ cup olive oil
- shavings from one lemon
- 1 teaspoon (heaped) mustard
- 1 clove of garlic
- salt pepper

Preheat the oven at 200 degrees. Wash the pumpkin, cut in half, and then into slices, like a watermelon. Place on a baking sheet, grease with olive oil, add salt, and bake for 30-40 minutes until soft. When the pumpkin is ready, put it on a dish, let it cool, peel it and cut it into large pieces.

In a blender, beat the ingredients for the sauce. Pour most of it over the pumpkin. Mix well with your hands and place on a flat dish. Cut the washed arugula into two parts and place it on the pumpkin. Pour the remaining sauce over it and place the cheese on top.

Salad with arugula and porcini mushrooms


Products:

- a little olive oil
- 1 cucumber
- 1 tomato
- half a glass of walnuts
- salt pepper
- one bunch of arugula
- 5-6 white mushrooms
- 30 gr. white wine
- a little balsamic vinegar

Wash the arugula well and dry it with a paper towel. Then cut into large pieces by hand and place in a salad bowl. Cut the tomato into cubes, cucumber into circles. Cut the mushrooms into thin slices and simmer in a wide frying pan in a small amount of olive oil. Add wine, salt, pepper. Reduce heat, cover the pan with a lid and cook for 15 minutes.

When our mushrooms are ready, put them on top of the arugula, tomato and cucumber. Sprinkle with vinegar, pour olive oil, salt, pepper and sprinkle with nuts.

Salad with new potatoes, hot


Products:

— 500 gr. young potatoes
- 2-3 green peppers
- 2-3 red peppers
— 10-15 cherry tomatoes

For the sauce:

- 1 glass of olive oil
- 1/3 cup grape vinegar
- 1 onion
- 2 cloves of garlic
- 1 teaspoon oregano
- salt pepper
- 1/2 teaspoon hot red pepper

Wash the potatoes, dry them with a paper towel, and without peeling them, cut them into two parts and place them on a baking sheet, pouring them with olive oil. Bake at 180 degrees for about 35-40 minutes until a beautiful golden color appears.

On another baking sheet, place tomatoes, cut into two parts, and peppers, cut into large pieces. Drizzle all this with olive oil and place in the oven for 7-10 minutes. Place the baking sheet with tomatoes and peppers in the oven 10-15 minutes before the potatoes are finished cooking. All salad ingredients must be hot. The sauce for our salad should also be hot. Therefore, as soon as the baking sheet with tomatoes and peppers goes into the oven, prepare the sauce. Grate the onion and garlic, mix with the rest of the ingredients for the sauce, place in a small saucepan and heat.

Place the finished potatoes on a large plate, along with tomatoes, red and green peppers. Pour hot sauce over, sprinkle with oregano and hot red pepper.

Salad with pasta and octopus


Products:

— 500 gr. macaron
— 300-400 gr. octopus (can be replaced with squid)
- 1 small bunch of dill
- half a bunch of parsley
— 1-2 green peppers or 1-2 red peppers
— 2-3 salted and or fresh cucumbers
- 1/3 cup grape vinegar
- salt pepper

In a saucepan with plenty of water, set to cook our octopus. As soon as it boils, remove the foam with a slotted spoon, reduce the heat and leave to simmer for about 50-60 minutes. If you replace the octopus with squid, then you will need no more than 15-20 minutes to cook. In the first and second cases, there is no need to salt the water; these seafood products, when cooked in salted water, will be hard like rubber. While the octopus is cooking, cook the pasta, drain in a colander, rinse with cold water, and return to the pan with a light drizzle of olive oil.

Let them cool. Once the octopus is ready, place it on a board and when cool, cut into small pieces. Place in pan with pasta. Chop all other products and place in a saucepan. Season everything with salt, pepper, olive oil and vinegar. Mix well and place in a salad bowl. Your guests will be pleasantly surprised.

Salad with boiled zucchini


A very light and delicate salad, perfect for a birthday or a regular Sunday feast.

Products:

- 8-10 small zucchini
- 1 onion
- 2-3 green onions
- 3-4 carrots
- 1 red pepper
- 1 yellow pepper
For the sauce:
– 1 cup olive oil
- juice from one lemon
- 1 teaspoon mustard
- 2-3 cloves of garlic
- ½ teaspoon oregano
- salt pepper

Place a pan of salted water on the fire, as soon as the water boils, throw in the zucchini and cook for 8-10 minutes, reducing the heat. When the zucchini is ready, place it in a colander and cool under cold running water to prevent it from losing its color. Leave the water to drain well. Pour a small amount of water into a small saucepan and add some salt. When the water boils, place the carrots in it and cook until tender. But at the same time, considering that you are cooking vegetables for salad, try not to overcook them.

While the carrots are cooking, prepare the sauce by passing all the ingredients for the sauce through a blender. Cut the peppers into strips, finely chop the green and onions, place in a deep salad bowl. When the zucchini and carrots have cooled, chop them and add to the rest of the food. Pour over the prepared sauce, mix everything carefully, add salt and pepper if necessary.
