What mother doesn't want to please her child? One way to express your love is to make a colorful and original children's cake. Today I will tell you how to decorate it so that it leaves a lasting impression not only on children, but also on adults. I believe that all the details and decorations on the cake should be completely edible and easy to prepare even for novice pastry chefs. Therefore, I propose to prepare a family of funny hedgehogs from biscuit scraps. This original homemade Hedgehog cake can be used not only for a large cake, but also as an independent small dessert. After all, it is prepared on the basis of the widely known and beloved Potato cake.

Ingredients for the cake base:

  • biscuit - 180 g;
  • condensed milk - 2 tbsp;
  • ground walnuts - 70 gr;
  • butter - 70 gr.

Ingredients for cream:

  • egg white - 1 piece;
  • sugar - 50 g;
  • butter 80 g;
  • dark chocolate ‒ 50 gr.

First of all, we need to prepare the mass, which serves as the basis for the Potato cake. For this you will need a prepared biscuit. I baked it. I used some for the cake and the rest went into the crumb blender. You can use any sponge cake, store-bought cookies, or even prepare such a base from crackers and condensed milk.

How to make Hedgehog cake

We start cooking by combining biscuit crumbs and ground walnuts in a deep bowl.

Add condensed milk and soft butter to them. Knead with your hands until you obtain a homogeneous plastic mass. It feels like plasticine to the touch. If your mixture is too thin, add a little more crumbs or coconut. Too dry and crumbly mass can be saved by adding condensed milk.

Now we can sculpt the bodies of our hedgehogs. According to my idea, the result should be a mother hedgehog and two hedgehogs. Therefore, I divided my mass into two parts. From one I molded a large torso, and the second part was divided in half for the torsos of the hedgehogs. We sculpt the bodies like this: roll a large ball, then give it the shape of a drop and flatten it a little in the thin part, forming a nose and muzzle.

We will make needles for hedgehogs. His step-by-step recipe is at the link. I prepared a large portion at once, and then divided it and tinted it in the desired colors. If you are preparing this cake as an independent dessert, then prepare white buttercream on one egg white, and then add melted chocolate to it and cooled to room temperature. Don't forget to put a teaspoon of chocolate in a pastry bag. We will later make eyes and a nose from it.

Whip the cream again until smooth.

To work, you will need a “grass” attachment, which you see in the photo. It is suitable not only for creating floral decorations. With its help, it is very convenient to make long fur for animals or, in our case, quills for hedgehogs.

Fill the bag with this attachment with cream. The algorithm for planting “needles” is as follows: hold the nozzle perpendicular to the surface, touch the cake, press on the bag and sharply tear it off, stopping the pressure. In this case, short, standing “needles” are obtained. We draw the nose and eyes with melted chocolate, which we put in a pastry bag in advance. Place the finished hedgehogs in the refrigerator so that the cream hardens.

Step-by-step preparation

  1. The best part is that there is nothing complicated at all about how to prepare a “Potato” cake in the shape of a hedgehog. And now I will tell you how to do it simply and quickly.
  2. First of all, grind the cookies. It is convenient to break it in a regular plastic bag or in a piece of fabric. You can use a masher, or you can grind the cookies in a blender (then you don’t need a bag or cloth).
  3. Pour the crushed liver into crumbs into a deep plate, add condensed milk and cocoa to it.
  4. Heat the butter; you can use the microwave for this.
  5. Add the butter to the plate with the rest of the ingredients. Mix everything thoroughly. You should get a homogeneous, elastic mass.
  6. Using a tablespoon, scoop up a little of the resulting mixture and form balls with your hands. Once you have the ball, slightly flatten it on both sides to give it a hedgehog shape.
  7. Use the peeled seeds to decorate the cake. Stick them into the cake, it’s best to stick them deep, otherwise they will fall out.
  8. Once you've made all the cakes, place them on a tray and put them in the refrigerator for a couple of hours.
  9. Once the dough has hardened in the refrigerator, the cakes can be served.
  10. I would also like to draw your attention to the fact that, in principle, such “hedgehogs” can be decorated as you like, you can make eyes and a nose out of various confectionery toppings - decorations.

Pastries and cakes that don’t need to be baked, mixed together and ready

Cake "potato", and also "sausage", and also "Hedgehog"- cake and pastry - are prepared in principle according to the same recipe, with minor variations. All of them are based on a biscuit-chocolate mass, which is given different shapes and you can add some ingredients if desired.

The main advantages of these sweets are, firstly, of course, that they are delicious, and secondly, they are easy to make - you don’t even need to turn on the oven - crushed, mixed, shaped, cooled - ready!

Potato cake

To prepare a decent amount of cakes, you need to take 3 packs of 272 grams of Zhiten Dar cookies (or 2 of 370 Zakuska, see below), 1 can of condensed milk from cow's milk, 200 grams of butter, 3-4 tablespoons of cocoa, 1-2 teaspoons of cognac.

Grind the cookies through a meat grinder (if they are loose, like Zakuska, you can grate them or grind them in a blender), add cocoa, stir, add softened (but not melted) butter, and grind with the cookies. Pour in condensed milk and stir thoroughly. The mass should be quite thick, but still stirable. If it turns out liquid, you need to add some cookies. If it is too thick and you cannot mix until smooth, you can splash in a little hot water - 1-2-3 tablespoons and mix well. At the end, add cognac and stir again.

Next, form “potatoes”, place them on plates so that they do not touch each other and put them in the refrigerator to cool. “Potatoes” can be sprinkled or rolled in nuts, or decorated with cream, for example, adding “leaves” or “roots”.

Cake "Hedgehog"

The recipe is the same, only you need to form not a potato, but a round “hedgehog” with an elongated triangular muzzle.
You can use seeds or almonds for needles. If you want something really luxurious, you can make chocolate custard and make needles from the cream. Place the finished hedgehog, especially if it has cream, in the refrigerator for an hour - it will be tastier.

Sweet "Sausage"

The chocolate-biscuit mixture is made according to the same recipe, but some of the cookies should not be rolled through a meat grinder, but broken into pieces and these pieces should be put into the mixture so that they imitate pieces of lard in the sausage. Divide the mass into three parts, roll into dense sausages, wrap in polyethylene, cellophane, foil or other wrapping material at hand and put in the freezer.

After 3 hours, take out the sausage, cut into portioned rings, the dessert is ready.

What Bulgarian products do I use for this recipe?

About cookies: in Bulgaria they don’t sell vanilla crackers and “Yubileinoe” cookies, from which I made “potatoes” in Russia. There are crackers made from white bread, but they contain so many leavening agents and “improvers” that they are absolutely not suitable for cooking - when wet, they leaven and completely lose their structure. Breadcrumbs (here called "Galeta") are also not suitable, they have a specific taste, this is not for everyone.

I got a successful result with cookies:
first - "Zhiten Dar" - "biscuit biscuit" from Nestle (produced in Sofia), packaged in 272 grams,
the second is the biscuit "Zakuska" ("snack" in Bulgarian - breakfast), it is packaged in 330 grams without cocoa and 370 grams with cocoa in the composition (produced in Burgas), you can take both, but without additional cocoa Powder is still indispensable.

Butter: the best is Rhodopa Milk butter, but it is possible, but a little worse than Filipopolis, Rodopea or Bor Chvor.

Condensed milk: they sell Ukrainian and Russian “Condensed Milk”, they have it in “Beryozka”, sometimes in “Gastro” and “Piccadilly”, or you can take condensed milk “Dutch Lady”, better - a red jar, I got it in “Kaufland” ". The blue one contains plant products, and the milk is somewhat empty.

Dry cocoa powder I use is Greek "Cocoa Ion".

What can you replace some products with:


  • instead of cookies: leftover gingerbread (chocolate ones harmonize better in taste), waffles, cracker cookies (unsalted);
  • instead of butter - nothing can replace it :-(, it must be Natural Butter; if it’s not there, it’s better not to start;
  • instead of condensed milk - if there is no condensed milk, you can take half a glass of sugar, it should be added at the stage of dry ground cookies, before the butter; and after adding butter, heat a glass of milk to 40-50 degrees and add it warm, gradually stirring the mass; the spoon in the mass should “almost, but not quite” stand; in this case, do not rush, give the sugar time to melt;
  • instead of cocoa, you can rub dark chocolate into the still dry mass, 100 grams will be good;
  • Instead of cognac, you can add vodka or rum, gin, liqueur, wine - white or red, or do without alcohol at all, although the charm, of course, will not be the same.

Since childhood, I have loved potato cake, although I know that in the food industry of my childhood it was prepared from various leftovers and substandard products. So don’t be shy - add what you have, experiment.

Ingredients:

Any cookies (I have Yubileiny) 0.5 kg

Vanilla sugar - 1 sachet (30 g)

Butter - 150 g

Cocoa 4 tbsp. l

Condensed milk 8 tbsp

Nuts - 50 g (I have almonds)

How to cook:

Grind the cookies through a meat grinder, add vanilla sugar and butter.

In a saucepan, bring condensed milk and cocoa to a boil, stirring constantly.

Combine the mass (cocoa + condensed milk) with cookies and mix.

We make cakes in the shape of potatoes or “hedgehogs”.

Sprinkle with chopped nuts.

Place in the refrigerator for 1 hour.

My second-grader son found this recipe in a children’s newspaper (it also said “Even a first-grader can make such a cake”) and for a long time he tried to persuade me to help him make such cakes. And today is Friday, the groceries are bought, we did a little magic and... the cakes are ready...

These hedgehogs can be prepared for a birthday or any other children's holiday. You can decorate with potato hedgehogs.

Ingredients for Hedgehogs:

  • Shortbread cookies – 400-500 g;
  • Butter – 150-200 g;
  • Condensed milk – 150 g;
  • Cocoa - 100 g;
  • Pine nuts - 100g;

How to make potato hedgehog cookies:

Store-bought shortbread cookies (although if time permits and you have the desire, you can) need to be crushed to very fine crumbs; it is better to do this in a bowl or wide saucepan.

You need to add softened, or even almost melted, butter, condensed milk and cocoa powder to the cookies, mix everything well. After this, add condensed milk and mix well again. You should get something similar to modeling clay.

From the resulting mass you need to form the torso and faces of small hedgehogs. You can make them the same size, or you can make a family or several families like mom, dad, me...

When all the hedgehogs are ready, you can start decorating the hedgehogs. To do this, let's prepare a poppy seed. Let's steam it in boiling water and when the water has cooled, salt it. Dry the poppy seeds a little on a saucer. Now sprinkle the hedgehogs with poppy seeds. And from pine nuts we make needles on the body. We also make eyes and a nose. Then we put the hedgehogs in the refrigerator for about half an hour.


Now all the cookie hedgehogs are ready, you can prepare tea and invite everyone to the table. Not only children, but also adults will be happy with such a treat, because it is not only tasty, but also lifts the spirits, takes you back, albeit briefly, to childhood...
