The New Year and Christmas holidays are not over yet and for those who love liver dishes, I offer a recipe for an excellent snack cake. Liver cake made from beef liver is tasty, satisfying and looks beautiful on the holiday table.

for pancakes:

  • 600 g beef liver
  • 3 raw eggs (there are 2 in the photo, but you need 3)
  • 2 tbsp. l. flour
  • 150 ml milk
  • salt, pepper to taste
  • vegetable oil for frying

for interlayer:

  • 1 large onion
  • 1 large carrot
  • 2 cloves garlic
  • 150 g mayonnaise or 75 g mayonnaise + 75 g thick natural yogurt
  • vegetable oil

For decoration:

  • handful of walnuts
  • greenery

Cooking method:

First, let's prepare the dough for the liver pancakes, from which we will assemble the cake.

Wash the beef liver, cut it into small pieces and grind it twice in a meat grinder.

Beat 3 eggs well with a whisk.

Mix the liver, eggs, 2 tbsp with a mixer (preferably) or a large whisk. l. flour, 150 ml milk, salt and pepper to taste. The dough for liver pancakes is ready.

Now in a small frying pan in vegetable oil we will bake thin (if possible) pancakes, turning them over with a wide spatula, the widest one you have.

I got 5 pancakes with a small addition, which I also fried and ate with pleasure. By the way, I checked the pancakes for salt, it was a little under-salted, which means I’ll add salt to the filling. If I had over-salted it, I wouldn’t have salted the filling at all.

Let's prepare a layer for the liver cake. Peel and finely chop the onion, and grate the carrots on a fine grater. Then sauté the onion in vegetable oil until transparent.

Add the carrots and continue to fry over low heat until the carrots are soft.

Add garlic passed through a press to the mayonnaise. By the way, you can quickly prepare mayonnaise yourself, it is much tastier and healthier than store-bought. See the recipe here. Half of the mayonnaise can be replaced with natural yogurt, the result will be no less tasty and not so greasy.

Mix onions with carrots and mayonnaise with garlic. I add a little salt because I didn’t add enough salt to the pancakes.

Each pancake, except the top one, is generously greased with filling. The top one is just mayonnaise.

Here we have such a nice beef liver cake.

We will use walnuts for decoration. First, lightly fry them in a dry frying pan, stirring continuously.

Chop the cooled nuts with a knife approximately as in the picture.

Sprinkle the top and sides of the cake with mayonnaise with nuts and decorate with a little greenery.

Prepare the necessary ingredients. To prepare the cakes, place the peeled onion and a clove of garlic in a deep bowl, puree them using a blender (you can also use a meat grinder, but then it is better to use a fine sieve and scroll the vegetables twice).

Place the liver in a bowl with the onions and garlic.

Blend the liver with a blender into a homogeneous mass (or grind through a meat grinder).

Mix everything thoroughly. The mass should become homogeneous, without lumps of flour. The consistency will resemble thick sour cream - if you lift part of the dough on a spatula, it will slowly slide off in wide ribbons.

Fry over medium heat for 2 minutes (the liver pancake should lighten completely on top), turn over to the other side and fry for another 2 minutes. Also prepare all subsequent cakes. Add 2-3 drops of vegetable oil to the pan after each baked cake.

Boil hard-boiled eggs, cool, peel and remove the yolks. Combine the yolks in one bowl with chopped garlic, sour cream and salt.

Mash the mixture thoroughly with a fork and pour the resulting cream into a pastry syringe.

Place the second liver cake on top and apply the cream again. And continue like this until the cakes are gone.

The top of the delicious beef liver cake can, if desired, be decorated with fresh vegetables or sprigs of herbs.

What do we need to prepare a dish?

  • 3-4 cloves of garlic;
  • A small pack of mayonnaise (200-250 grams);

Preparing the filling

  1. Cut the onions;
  2. Three carrots on a coarse grater;
  3. Heat a frying pan, pour the onion into it, fry lightly, then add carrots too. Fry until fully cooked.
  4. In a separate plate, mix mayonnaise with pre-squeezed garlic. You can add the amount of garlic as you wish. If you like spicier dishes, add a couple more cloves. If not, then reduce the amount.

Liver goes well with any vegetables, so if you don't like carrots, you can use champignon mushrooms instead. For the same amount of dough you will need somewhere 200-250 grams of mushrooms. You need to first fry them until half cooked, and only then add the onion. The rest of the cooking scheme remains unchanged.

The best way to excite people is to serve a cake at the snack table and not say that it is made from liver. Imagine the amazement of your guests when they take a closer look and realize that the red flowers on the “dessert” are made from cherry tomatoes, the pretty white specks that so wonderfully enliven the overall design are from mayonnaise, and the leaves on the sides are not creamy at all, but even real and very parsley! In my opinion, this aspect alone is worth spending a little time making a nice, delicious, colorful liver cake for tonight's dinner.

To prepare liver cake, it is best to use beef (veal) or chicken liver. Pork, alas, is mercilessly bitter, which is felt especially clearly in the cake. If you have unlimited access to goose (ah!) or duck (mmmm!...) liver, feel free to take them. A very worthy cake is also made from turkey liver.

The recipe is basic, which you just need to master, so that you can then set off on your own and serve the cake the way you personally like, get creative with fillings and “creams,” add and remove ingredients.

Ingredients for pancakes:

  • 0.5 kg of liver;
  • 0.5 liters of milk;
  • 5 eggs;
  • 2 onions;
  • 1 cup flour;
  • salt, pepper, vegetable oil for frying.

Ingredients for the “cream”:

  • 3 small onions;
  • 100 g mayonnaise;
  • vegetable oil;
  • 1 boiled egg for decoration.

HOW TO COOK

We wash the liver for the cake well, remove films and other ugliness. Let the water drain, then cut into pieces.
Peel the onion, set 3 heads aside, cut 2 into 4 parts and add to the bowl with the liver. Pass it through a meat grinder.

Beat the eggs into the liver-onion mixture, add salt and pepper, stir, pour in the milk and gradually add the flour, thoroughly stirring any lumps.
The consistency of the batter should be slightly thicker than regular pancake batter. Be sure to give it a little “rest” - when the gluten dissolves, frying such pancakes will be much easier, they will become stronger and more elastic.

Grease a well-heated frying pan with oil and fry the pancakes on both sides until lightly golden. Leave to cool.

Meanwhile, make the filling - cut the remaining onion into half rings and fry it in vegetable oil until golden.

Collect the cake: liver pancake, a little mayonnaise, part of the onion, again pancake, mayonnaise, onion - and so on until the pancakes run out.
Coat the top layer with mayonnaise and decorate with grated boiled egg. Before serving, the cake should soak for 3-4 hours, then you can treat your guests!

Liver cake with mushrooms

If you make liver cake quite often, I'm sure you want variety. These pancakes themselves are tasty and tender, however, sometimes it doesn’t hurt to dilute this tenderness a little - why not experiment today and put some champignons in the dough?

Ingredients for pancakes:

  • 400 g liver;
  • 3 eggs;
  • 1/2 cup flour;
  • 1 glass of milk;
  • 300 g champignons;
  • vegetable oil;
  • 3-4 cloves of garlic.
  • 2 large onions;
  • 100 g mayonnaise;
  • salt, pepper to taste.

HOW TO MAKE LIVER AND MUSHROOMS CAKE

Wash the champignons and cut them into slices. Fry in vegetable oil until excess moisture evaporates and acquires a pleasant golden hue.
We leave a few beautiful mushrooms for decoration and immediately put them aside.

We pass the liver through a meat grinder. Add eggs, salt, pepper and milk, stir and add flour. Mix again - when the dough is homogeneous, add the mushrooms.
Fry in a well-heated and oiled frying pan on both sides.

Ingredients for liver pancakes:

  • 0.5 kg of liver;
  • 0.5 cups sour cream;
  • 1 egg;
  • 0.5 cups flour;
  • salt, pepper, vegetable oil.

Filling ingredients:

  • 100 g mayonnaise;
  • 1 glass of freshly squeezed currant juice;
  • 1 tbsp. l. gelatin “without slide”;
  • 1/3 tsp. cardamom;
  • 1/3 tsp. cinnamon;
  • 1/3 tsp. hot red pepper;
  • 1/3 tsp. ground allspice.

RECIPE FOR LIVER CAKE WITH JELLY

First - jelly. You need to take a springform pan with a diameter equal to the diameter of the frying pan on which you plan to fry the pancakes.
3-5 hours before preparing the cake, add a few tablespoons of cold water to the gelatin and leave to swell.

Meanwhile, mix currant juice with spices, add salt if necessary.
Dissolve the gelatin over low heat until smooth, then add it into the currant mass in a thin stream, stir, pour into the mold and put in the refrigerator.

Pass the liver through a meat grinder, mix with salt, pepper, add egg and sour cream, then stir in flour. Achieve a homogeneous mass, then leave the dough to “rest” for half an hour.
Fry the pancakes in a well-heated frying pan on both sides until lightly golden. Don't forget to grease the pan with oil as needed.

After the pancakes have cooled completely, coat them with mayonnaise. Don't forget to put a layer of currant jelly in the middle - right on the pancake, not greased with mayonnaise.
Grease the top and sides of the cake with mayonnaise, if desired, decorate with herbs, boiled egg, and vegetables.

Liver cake with buckwheat flour

If you cook liver in, say, the usual fried form, what do you serve it with? In my family, they prefer buckwheat as a side dish - it seems to me that this grain is simply created to perform on the same stage with liver, it emphasizes its taste and reveals its undertones, balances the light bitter-tart taste and simply gives a feeling of deliciousness, lightness, satiety.

Ingredients for the recipe:

  • 5 eggs;
  • 1 kg of liver;
  • 5 tbsp. l. buckwheat flour;
  • 2 tbsp. l. starch;
  • 300 ml milk;
  • salt, pepper, vegetable oil;
  • mayonnaise, garlic.

Recipe for liver cake with buckwheat flour

Wash the liver, dry it and pass it through a meat grinder. Add eggs, milk, salt and pepper, mix and gradually add flour and starch. Let the dough sit for half an hour, then fry the pancakes in a well-heated and oiled frying pan, pouring in a little liver mass and frying on both sides until lightly golden.

Cool the finished pancakes and spread with mayonnaise mixed with a few cloves of garlic. Let soak and serve, cut into portions.

Liver cake in a slow cooker

In the age of insane speeds and the desire to reduce the time devoted to solving everyday issues, more and more people are switching to cooking in a slow cooker. In my opinion, a liver cake baked this way loses in taste - it is more boring, restrained, and neutral. However, at the same time, it should be noted that the amount of oil compared to the version in a frying pan is significantly small. In addition, baked is always healthier than fried, so as an alternative, such a cake has a right to exist.

Ingredients for the recipe:

  • 500 g liver;
  • 3 eggs;
  • 2 onions;
  • 1 carrot;
  • 1 glass of sour cream;
  • 1/3 cup flour;
  • vegetable oil;
  • 50 g mayonnaise;
  • 3-4 cloves of garlic;
  • 2 boiled eggs.

How to cook liver cake in a slow cooker

Cut the onion into cubes and fry in a slow cooker on the “Baking” mode.
Grate the carrots on a fine grater and fry them too.

Wash the liver, dry it and cut it into pieces. Place in a bowl, add onions and carrots, puree the mixture with a blender or pass through a meat grinder. Add eggs, salt and pepper, flour and knead a not very thick dough.

Grease the multicooker cup with oil, pour in the dough and close the lid. Cook on the “Baking” mode for 60 minutes.

Remove the finished cake from the multicooker and, after cooling completely, cut it into 2-3 cake layers.
Mix crushed garlic with mayonnaise and spread on the cake. We also grease the top and sides with “cream” and sprinkle with grated egg. Serve 2-3 hours after the cake is soaked.

Yes, this is not a cake, but a roll, but it is cooked in the oven and looks stunning on the plate. It will take a little less time to create it, and the result will be no worse.

Ingredients for the recipe:

  • 500 g liver;
  • 100 ml kefir;
  • 1 tsp. baking powder;
  • 2 eggs;
  • 1 cup flour;
  • 2 onions;
  • salt pepper;
  • 150 g hard cheese;
  • 2 cloves of garlic;
  • a few sprigs of parsley.

PREPARING THE ROLL

Wash the liver, dry it, remove the films and grind it together with the onion in a blender. Add eggs, kefir, salt, pepper and baking powder, stir in flour and grind until smooth. Pour the dough onto a baking tray lined with baking paper and bake in an oven preheated to 180 degrees for about 15 minutes.

While the roll is baking, grate the cheese on a fine grater and mix it with finely chopped parsley and squeezed garlic.

Remove the crust from the oven and sprinkle evenly with cheese and herbs. Immediately roll it up, separating it from the paper, and return it to the oven for another 3-5 minutes. Slice when cooled.

A reason to fantasize

The listed recipes for liver cake are not a complete list of how you can diversify a fairly ordinary dish. You can safely add to the filling:
— fried carrots and Korean carrots;
- caramelized apples, applesauce and just diced or grated apples;
- cranberries, lingonberries and any other sour berries;
- eggplants, zucchini, tomatoes and many other vegetables that go well with liver;
- nuts and seeds;
- prunes, raisins, dried apricots.

Turning cons into advantages

Quite often you can come across comments and opinions that liver cake is terrible, decorated and served as a beautiful snack. Different opinions are needed, different opinions are important, but let's figure it out. The most common argument against it is the use of mayonnaise. No one argues that the industrial sauce is far from ideal and contains elements of Mendeleev’s periodic system that are far from useful for the body, however, who says that a liver cake must be coated with store-bought mayonnaise? Now almost everyone has a blender in their kitchen, but finding an egg, vegetable oil and a spoonful of mustard and lemon juice is not at all a problem - get creative, beat, get a healthy homemade product, which you can use to prepare snacks. And don’t grumble about the nasty things that are hidden in store-bought mayonnaise packages; grumbling is more harmful than eating it.

By the way, some of the mayonnaise can be replaced with low-fat sour cream - just mix them together and coat the pancakes with the resulting “cream”. The taste will remain virtually unchanged, but the fat content will decrease, and your mind will be pleased.

The second common argument from the category “Baba Yaga is against” is a rant about frying. It turns out that liver cake requires frying! Oh! This is where I run out of reasonable arguments, I immediately want to ask if a person really doesn’t eat anything fried at all? Potatoes with an appetizing crust, a golden-brown cutlet, lush pancakes with apples - everything is in the abyss, is everything wrong? When a counter-argument appears about the amount of this very fried thing in one dish, you want to sarcastically ask in response whether the person is going to eat the whole cake entirely and alone. There is no need to consume everything at once, eat one piece, accompany it with a light vegetable salad - and you will be happy.

Benefits of the liver

It's no secret that liver is a product that is not particularly popular among the bulk of the population. And in vain! It has a lot of advantages, which I propose to talk about a little.

Keratin, which is part of the liver, activates metabolic processes, helping the body eliminate nasties and dump garbage. There is no need to talk about the benefits of folic acid, which is very difficult to find in food, - it is not for nothing that it is prescribed to all pregnant women in the form of pharmacological preparations. Antioxidants are a separate matter; now all conscious people are looking for an antidote to the harmful effects of the environment, and the liver can boast of a high content of these substances. Who in childhood was not stuffed with liver “for hemoglobin”? It seems to me that I have known since the cradle that this product contains a record amount of iron, which is extremely necessary for the functioning of any human body. I won’t talk about a bouquet of vitamins and a mountain of minerals - and so everything is clear.

By the way, returning to the main topic of conversation, I will say that muttering about the high calorie content of liver cake is also quite controversial. Liver itself is a low-calorie and dietary product; 100 grams of it contain only 100 kcal; thanks to this fact, nutritionists are even developing effective liver diets.

So, liver is tasty, healthy and cheap, so I advise you no longer to hesitate and rush to the kitchen - cook, rejoice and love the world around you: as soon as you learn to do this sincerely, it will love you too, you'll see!

By the way, portioned serving is also an excellent option for those who, for some reason, are not “friendly” with pancakes. It is much easier to fry pancakes - by using restrictive rings for omelettes, you can get small pancakes of the same size, which you can fold into neat liver... cakes.
