Methods for salting and marinating milk mushrooms

The process of marinating milk mushrooms consists of several stages:

  1. Wash and soak.
  2. Pour a kilogram of product into a liter of water and boil for up to ten minutes.
  3. Add six tablespoons of 9% vinegar and a couple of tablespoons of sugar and salt and cook for another third of an hour.
  4. Place in sterile jars, add hot marinade and seal.

The salting process consists of the following steps:



  1. Place the washed and soaked forest gifts, caps down, on the bottom of the dish, covered with currant and cherry leaves.
  2. Sprinkle them with salt at the rate of 2 tablespoons per kilogram of mushrooms.
  3. Arrange them in layers, sprinkling with salt and dry dill umbrellas.

Boil the peas over low heat for 5 to 7 minutes, then pour cold water over them until they cool completely. Cut the onion into small cubes, preferably chop the garlic with a knife.   • canned milk mushrooms – 100 gr.;
  • potatoes - 4 tubers;
  • bulb;
  • fresh cucumber - one;
  • parsley and dill - one bunch each.

Required ingredients for dressing:

  • olive oil – 6 tbsp. spoon;
  • mustard – 1 teaspoon;
  • white wine vinegar - 2 tbsp. spoons;
  • soy sauce – 3 tbsp. spoons;
  • ground black pepper - a pinch.

Cooking process:

Cut the onion into thin half rings, pour boiling water over it for 3 minutes, then rinse well under a tap with cold water, place in a colander and let drain.

Cut the cucumber into thin slices.

Rinse the milk mushrooms well in running water and also cut into slices.

Place milk mushrooms and cucumber in a salad bowl.

Cut the potatoes boiled until fully cooked into cubes, quite finely. Add to the salad bowl with milk mushrooms and cucumber. We put onions there too. Sprinkle with finely chopped herbs.

For the sauce, mix soy sauce, wine vinegar, mustard and olive oil. Stir and pepper to taste.
