Ingredients:

  • 1 kg of chokeberry;
  • 1.3 kg sugar;
  • 1 glass of water.

Cooking process:

  1. Take a pan of suitable volume, pour water into it and add sugar. Stir until completely dissolved. To do this, you can warm up the water a little.
  2. Wash the berries and remove the stems. Place in a saucepan and place in boiling water for 5-7 minutes to blanch.
  3. Boil the syrup and add blanched berries to it. Cook for 10–15 minutes over medium heat. After this, remove the pan from the heat and leave the mixture to cool for 3-4 hours to room temperature.
  4. Place the pan with the future jam on the fire again, bring to a boil and simmer for 15 minutes.
  5. Immediately distribute the jam into the jars, seal with lids and leave to cool at room temperature. Jars must be cleanly washed and sterilized.

This jam is stored equally well both in the room and in a dark, cold room, such as a basement.

Apples are an excellent addition to chokeberry jam

Ingredients:

  • chokeberry berries - 1 kg;
  • sugar - 1.5 kg;
  • lemon - 1 piece;
  • apples (preferably Antonovka or other sour varieties) – 300 g;
  • walnut kernels - 300 g.

Cooking process:

  1. Pour boiling water over peeled and washed chokeberry berries and leave overnight.
  2. In the morning, take 1 glass of the resulting infusion, mix it with 1.5 kg of sugar and boil until completely dissolved to make a syrup. While it is boiling, add berries, apple slices and pre-crushed nut kernels. Boil for 10 minutes and let cool slightly for 1-2 hours. After this, repeat the cooking process 2 more times for 10 minutes.
  3. When you cook the mixture for the third time, add lemon to it. Pre-scald it, peel it, cut it arbitrarily and be sure to remove the seeds - because of them the jam will be bitter.
  4. Cover the pan with the prepared jam with a cotton cloth and cover it with another container of the same diameter. This way you will create an air cushion that will significantly soften the rowan fruits.
  5. Leave this structure overnight, and in the morning, spread the infused jam into sterilized jars and close the lids. Store the preparation in a cool place (unless, of course, you eat all the jam in a week!).

Quick jam - five minutes

Preparing this jam will take you the least amount of time.

Preparing five-minute jam will not take you much time

Ingredients:

  • 2 kg of chokeberry berries;
  • 1 kg sugar.

For this jam, it is easier to use not the exact amount of products in grams, but the proportions: for 2 parts of fruit, 1 part of granulated sugar.

  1. Blanch the washed berries in boiling water for 5 minutes, then grind in a meat grinder or blender. Mix thoroughly with sugar and place on low heat. Heat until the sugar is completely dissolved.
  2. Turn up the heat a little more, wait until it boils and cook for 5 minutes.
  3. Distribute the jam into clean, sterilized jars. Place them in a large saucepan, pour water up to the shoulders of the jars. After the water boils, sterilize the jam for 20 minutes, then roll up the lids.

If you want, add a little citric acid or baked mashed apples to the five-minute jam.

After the jam has cooled at room temperature, put it in the basement for storage. A refrigerator will also work - the main thing is that it is dark, dry and cool.

Note! You can easily determine the readiness of chokeberry jam by the state of the berries: as soon as they sink to the bottom, you can remove them from the heat.

Dry Kiev jam from rowan and plum

This recipe is very unusual. At first glance, it will seem complicated to you and will require a lot of time and attention. But the result will incredibly please everyone!

A very unusual and original recipe for chokeberry jam

Ingredients:

  • 250 g chokeberry;
  • 250 g red rowan;
  • 500 g plums;
  • 400 g sugar (of which 300 g for syrup, 100 g for sprinkling);
  • 300 ml water;
  • 1 g cloves.

Cooking process:

  1. Wash the rowan berries and separate them into small clusters (several berries per branch). Place in the freezer for 30 minutes so that the bitterness leaves the rowan and only the tartness remains.
  2. Divide the plums into halves and remove the pits. It is better to take fruits of the “Hungarian” variety, not overripe and hard.

  3. Place the pan on the fire and prepare the sugar syrup. Add fruits to it, boil for 5 minutes. Don't forget to skim off the foam during cooking. At this stage you can add cloves.

  4. Remove the jam from the heat and let it sit for 2-3 hours. Cook in two more batches. You can cook plums and rowan separately from each other, but this is optional.
  5. You can easily determine the readiness of the jam by eye. The plum pulp, retaining its shape, will become honey-like, and the red rowan will take on an amber color.
  6. Remove the fruits from the pan with a slotted spoon and place them in a sieve. Wait for the syrup to drain.

  7. Sprinkle plums and rowan berries with fine sugar (you can use powdered sugar). Place on a wire rack and place in the oven for 2.5 hours at a temperature of up to 100 degrees. Make sure that the fruits do not dry out.

This dry jam is somewhat reminiscent of candied fruits. It can be stored for a long time even at room temperature and any humidity in a tightly sealed container.

Recipe with zucchini

Yes, you understood correctly: we will combine berries with this wonderful vegetable. You are probably familiar with recipes for many unusual zucchini dishes. Why not make delicious jam from it and chokeberry?

Ingredients:

  • 1 kg chokeberry;
  • 1 kg zucchini;
  • 1 kg sugar;
  • 2 cinnamon sticks;
  • 1 lemon.

  5. Leave the jam overnight until completely cooled. Boil it again for 30 minutes and, while still hot, place it in sterilized jars. Roll up the lids and let cool in the room. There are no special storage conditions: you can leave it in the house, put it in the refrigerator or put it in the basement.

The berries in this jam do not lose their shape, and the pieces of zucchini resemble candied fruits.

  1. Wash the rowan berries thoroughly. If desired, remove the stems. You don’t have to do this: the berries on the branches look even more interesting in the finished jam. Boil 1 liter of water in a saucepan and add citric acid. Pour the berries into boiling water and blanch for 2 minutes.

  2. Take a clean baking sheet and use a slotted spoon to place the berries from the pan into it. Make sure the water drains properly. The layer of berries on the baking sheet should be about 3 cm thick.

In addition to all the positive qualities, chokeberry is very useful for people with diabetes. They can also treat themselves to chokeberry jam, but without the sugar content.

For such jam you do not need to follow the proportions of the products. The recipe is a little more complicated than jam with sugar, but there are no particular difficulties in its execution.

First of all, you need to prepare a large pan, wide and with low walls. Place a rag on its bottom.

Treat the chokeberry berries with boiling water and place them in half-liter jars. Pour water into a saucepan and bring to a boil. Place the jars of berries in boiling water so that the water reaches their shoulders, but does not pour inside. Reduce the heat under the pan to just maintain a simmer.

While the water is boiling, the berries in the jars will settle slightly; you will have to add them to fill the empty space.

The boiling process should last no more than 40 minutes. After this, remove the jars from the pan, roll up the lids and let cool at room temperature. Store in a cool, dry place.
