Step 1: prepare the raisins.

First of all, heat the kettle with purified water. Then put the raisins in a deep plate and pour boiling water over them so that the liquid is above the level of the dried fruits by 1.5 – 2 centimeters.
Leave the raisins as is for 3 – 4 hours, then drain the water, dip it with paper kitchen towels, place the dried fruits in a dry deep plate and immediately proceed to the next step.

Step 2: prepare the dough.

Place the required amount of cottage cheese in a deep bowl. Add chicken eggs, sour cream, sugar, vanilla sugar and a pinch of salt.
Mix these products thoroughly until smooth using a mixer, food processor or immersion blender.

Then add raisins, 6 tablespoons of semolina and baking soda to the resulting mass.
Mix all the dough ingredients again with a tablespoon until smooth.
Let it brew for a while 15 – 20 minutes so that the semolina swells and the soda reacts with the sour cream.

Step 3: Prepare the oven and baking dish.

Meanwhile, turn on and preheat the oven up to 180 degrees Celsius.
Grease the mold in which the dessert will be baked with a thin layer of butter and sprinkle the bottom with a tablespoon of semolina.

Step 4: form and bake cottage cheese casserole with semolina.

After 15 – 20 minutes transfer the curd-semolina dough into the prepared form, level its surface with a metal kitchen spatula and sprinkle with a tablespoon of semolina. A layer of semolina on the surface of the dough is needed so that during baking the casserole is covered with a golden brown, crispy crust.
Place the pan with the dough in the preheated oven and bake the dessert for 40 – 45 minutes.
Then we put oven mitts on our hands, take the pan out of the oven and place it on a cutting board that was previously placed on the kitchen table.
Let the cottage cheese casserole cool slightly.

Step 5: Bring the dessert to full readiness.

Then sprinkle it with a thin layer of powdered sugar through a fine mesh sieve.
Cut the food into portions and place them on dessert plates using a kitchen spatula. If desired, serve each portion of the casserole with fruits, berries, nuts, any cream or melted chocolate, and serve to the sweet table.

Step 6: serve cottage cheese casserole with semolina.

Cottage cheese casserole with semolina is served warm or at room temperature. It is pleasant to savor it along with freshly brewed tea, coffee, warm fresh milk or hot cocoa. Enjoy delicious and simple baking!
Bon appetit!

Vanilla sugar can be replaced with pure vanilla on the tip of a knife or a teaspoon of vanilla essence.

In addition to raisins, you can put soaked dried apricots, prunes, dried bananas, strawberries, cherries or figs in the dough.

Instead of sour cream, you can use high-fat cream.

If you are not sure about your baking pan and are afraid that the casserole will burn, it is better to line the pan with baking paper and then transfer the dough into it.

What to do if the cottage cheese is very dry? It’s better to grind it through a fine mesh sieve or grind it using an immersion blender and then combine it with the rest of the products!

A deep misconception is the established opinion that casseroles made from cereals and cottage cheese are exclusively a children's dish. The taste of the casserole can be salty, sweetish, mixed, and sometimes savory if the casserole is prepared in some Italian or French culinary style. It is impossible not to admit that cottage cheese casseroles are tasty, moderately high in calories and healthy, and besides, when prepared with semolina, they keep their shape well. The recipe for cottage cheese casserole with semolina in the oven, as puffy as in a kindergarten, is especially in demand. After all, everyone remembers the taste from childhood. But for cooking it is important to know a few secrets.

Cooking secrets

The culinary tricks that any experienced housewife keeps can be applied to such a seemingly simple dish as a casserole.

  1. Choice of cottage cheese.
For cottage cheese casserole, the basis of which is cottage cheese, it is wise to take a good, real product with a moderate percentage of fat content and moisture. Too dry cottage cheese will prevent the casserole from being elastic, and too wet curd raw material can completely deprive it of volume and shape. Very fatty cottage cheese will ultimately result in a casserole of increased density. Therefore, dry cottage cheese is sometimes diluted with kefir, and wet cottage cheese with flour.
  2. The top of the casserole is greased with yolk or butter.
  3. Semolina casserole can be not only sweetish, but also have a spicy or salty taste. To do this, all sorts of additions are added to the base with cottage cheese: olives, cheeses, cauliflower, garlic, bell peppers, chili, fresh and dried herbs, spices, quail eggs, oatmeal, pears, quince, seaweed and many other ingredients.
  4. Cottage cheese that is too dry for a casserole can be saved by preparing it with the addition of berries.
  5. The heat-resistant form is always greased with butter. Vegetable fat will not work in this case, and the surface itself is sprinkled with some kind of bulk mixture: semolina, flour, breadcrumbs.

Cottage cheese casserole is a very tender dish. It is often served for breakfast and afternoon tea in kindergartens. At home, we are used to enjoying it with tea at any time of the day.

We will also consider the three most successful recipes that have the same base - cottage cheese with semolina. If desired, candied fruits or raisins are added to them. And you can bake this delicacy not only in the oven, but also in a slow cooker and even in a frying pan.

If you are a fan of all kinds of casseroles, then I suggest making potato or pasta for dinner. Their recipes have also already been tested.

Classic recipe for airy cottage cheese casserole in the oven

The most delicious casserole is the one made according to GOST. After all, technologists of the 50s measured all the ingredients down to the gram so that you get a very tender and balanced dish.

Most often, they don’t move away from this recipe, and if they suddenly want to try something new, they return to it again after many trials.

But before we start cooking, I’ll share tips on choosing products so that your dish is definitely a success.

  1. It is better to take thicker cottage cheese, starting from 5% and above.
  2. If you are unable to find a homemade or store-bought fatty product, then add two tablespoons of sour cream to the low-fat product.
  3. To make the mass fatter, you can add Adyghe cheese, the taste of the finished dish will be much more pleasant and creamy.
  4. Adding starch helps the casserole not “fall” after baking.
  5. Due to the fact that cottage cheese contains a lot of oxygen, you need to grease the entire surface with sour cream before you put it in the oven. Such impregnation will prevent the formation of a dense crust, which prevents hot air from escaping from the inside. And as a result, the dough falls less when cooling.
  6. It is better to leave the dough with semolina for at least 20 minutes so that the semolina swells.
  7. In all recipes we do not use flour, but replace it with cereal.
  8. The dish will be tastier if the mass is of a uniform consistency without lumps or large grains.
  9. In a glass form, the curd casserole sticks, so use other options: silicone or iron.
  10. Do not open the oven, otherwise the heat will come out and the delicacy will settle.

Now let's start cooking.

Ingredients:

  • 600 gr. soft cottage cheese (3 packs)
  • 50 gr. semolina (1/4 cup)
  • 70 gr. sugar (3 heaped tablespoons)
  • 2.5 eggs
  • 0.08 gr. vanilla (on the tip of a knife)
  • 0.5 teaspoon salt

To grease and dust the mold:

  • 20 gr. ghee (or butter)
  • 20 gr. ground white bread crumbs

To lubricate the surface of the curd mass:

  • 0.5 pcs. eggs (add half an egg to the casserole)
  • 1 tablespoon sour cream

It is better to grind the cottage cheese through a sieve or blender. If you have a store-bought mass, then it is already completely ready and this stage can be omitted. Add eggs, sugar, vanillin and salt to it.

Add semolina, mix and let it swell while we prepare the mold.

The specified amount of ingredients is enough for a mold volume of 18*18 or 20*20.

Lubricate it well with soft butter, do not forget about the edges and sprinkle with breadcrumbs. They can be replaced with semolina or flour.

Spread the mixture onto the breadcrumbs and smooth the surface with a wet spoon.

Now you need to whisk the egg with sour cream and soak the top of the future casserole.

We will bake in a preheated oven for 30-40 minutes at 180-200 degrees.

It is best served warm or cold.

Lush cottage cheese casserole with semolina, just like in kindergarten

It can sometimes be difficult to feed your beloved little ones. Often preschoolers get used to kindergarten food, so they eat well what they give there, refusing to eat at home. In this case, prepare them a similar healthy afternoon snack.

Adults also remember this taste, carried through the years from kindergarten, so they will appreciate your efforts.

Ingredients:

  • 500 g cottage cheese
  • 2 eggs
  • 100 semolina
  • 50 g butter
  • 100 g sugar
  • 50 ml milk
  • 1\3 tsp. salt

If the cottage cheese is very dry, then it is advisable to add two tablespoons of sour cream to it.

If it is very large and grainy, then grind the mass through a sieve, mixer or blender.

Add 40 g of soft butter to the cottage cheese (you can do without it), eggs, sugar, salt and mix.

Then add milk and continue mixing until smooth.

Add semolina at the very end. To ensure that it swells well, leave the mass at room temperature for 40 minutes.

This is necessary so that the casserole turns out more tender and there are no grains.

Grease the pan with butter and sprinkle with breadcrumbs.

Heat the oven to 180 degrees and bake for 40-45 minutes.

There are variations of this recipe, so I suggest watching a video that uses other proportions.

I really liked the fruit decoration that is shown in the video.

Delicious recipe with raisins and sour cream

You can add various candied fruits and dried fruits to the casserole. Most often we mix cottage cheese with raisins. They complement each other, and by using dried grapes we can reduce the amount of sugar in food. After all, the vast majority of connoisseurs of our works are children, and we prepare this dish for them too.

Ingredients:

  • cottage cheese - 500 g,
  • sour cream - 5 tablespoons for semolina,
  • semolina - 2 tablespoons,
  • eggs - 1-3 pcs,
  • sugar - 3 tablespoons,
  • vanilla sugar - 1 teaspoon,
  • raisins - 50 g,
  • butter - 1 tablespoon (for greasing the pan),
  • a small pinch of salt,
  • 2 spoons of sour cream for soaking,
  • 1 tsp starch.

In a separate container, mix semolina with sour cream so that it swells while we prepare the cottage cheese.

Wash the raisins and scald them with boiling water.

Beat the eggs into the cottage cheese and pour in the swollen semolina. Add sugar, salt and vanillin to taste.
To prevent the finished casserole from falling off, add a spoonful of starch.

Mix everything and prepare the mold. Grease it with soft butter, sprinkle with breadcrumbs, semolina or flour.

Spread the entire mixture evenly and spread sour cream on top.

This is necessary to prevent the formation of a dense crust, which does not allow air to escape from the cottage cheese and, as a result, the casserole falls off. With sour cream the crust turns out very thin.

You can serve it with yogurt, jam or jam. But we like regular and not too sweet.
