Place the sauce in the refrigerator and leave for at least an hour (or overnight). The longer the sauce sits in the cold, the thicker its consistency becomes. Therefore, I would advise making the sauce in advance so that it has time to thicken.
From this amount of ingredients you get 220-240 ml of sauce. This is enough for one salad.
I kept this sauce for a week in the refrigerator and nothing separated or went rancid.

Now I season absolutely all salads with this sauce, even puff pastries. The sauce “holds” vegetables well and goes well with all vegetables, meat, and fish.
