To do this, you need to press small parts with your thumb to your index finger, and so on along the entire seam. Let's prepare the dough.

Pour room temperature kefir into a bowl. Beat in the egg and add a pinch of salt.

It should turn out soft, flexible, and not stick to your hands. Cover the dough with a towel and leave to rest for 10 minutes.

Roll out the rested dough into a layer 5-6 mm thick. Using a glass or ring, cut out identical circles of the desired size. The larger the circle, the larger the dumpling.

Place a few raspberries in the middle of each circle. These dumplings can be made from fresh or frozen berries. If you have frozen raspberries, you need to defrost them at room temperature and drain off the excess juice. The juice is often used to make compote or jelly.

Sprinkle a little sugar on top of the raspberries. I added 1/3 teaspoon to each dumpling.

It is good to fasten the edges of each circle, forming dumplings. Use all the dough and filling this way.

Pour water into a saucepan and bring to a boil, add a little salt to the water and add dumplings to it. Stir gently so that they do not stick to the bottom of the pan, and cook for about 5 minutes from the moment they float to the surface.

After cooking, remove the dumplings from the water using a slotted spoon or strainer. Place in a bowl and grease with butter. If you find the dumplings not very sweet, sprinkle more sugar on top.

    Ingredients:

  • Sour kefir - 500 ml
  • Flour - 500 g
  • Sugar - 3 tbsp. l.
  • A pinch of salt
  • Soda - 1 tsp.

Filling:

  • Raspberries - 500 g

Pour kefir into a container and add salt and sugar. Stir until dissolved.

The fact is that an oxidation reaction occurs, which is accompanied by the release of carbon dioxide bubbles, which, in turn, impart porosity and airiness. Only kefir should be acidified, even past its expiration date. You can do without it, but use an egg and a little sunflower oil and 1 tbsp. vinegar 9%. This dough also turns out to be very pliable and elastic. It is easy to shape, the edges are perfectly pinched and do not come apart during cooking. You can simply cook with water and flour, but the water should be hot, not cold, so that the gluten swells faster. This method is also often called “brewing.”

But no matter what recipe you use, the main rule is to let the dough rest a little before rolling it out. This is necessary for the gluten to swell. It is this that will make it elastic and will not stick to the rolling pin or tear during rolling.

After kneading again, cover the dough with a clean cloth and let it rest for 40 minutes until it ripens. Meanwhile, you will make the raspberry filling.

Rinse the berry well and add sugar. Let it stand for 20 minutes, during which time the raspberries will release their juice. The juice is not needed, or rather, you can use it to prepare another dish or drink, but the berries are already ready.

Now is the time to make dumplings with raspberries and conjure up this delicious dish!

Roll out the dough so that it forms an even thin layer. Just don’t forget to sprinkle the table with a little flour before rolling, and the rolling pin itself too.

Now, sequentially laying out the berries (don’t put too many), make dumplings, folding the squares into a triangle and carefully pinching the edges.

Boil the finished raspberry dumplings in salted water (it should be boiling) and serve with butter or any fruit sauce.

By the way, you can pour drained raspberry juice over them.

  • You shouldn't add a lot of sugar to the filling. At the same time, they are not sprinkled on the berries in advance, otherwise they will begin to release juice and the filling will turn out to be too liquid.
  • To make the filling thicker, you can sprinkle the raspberries with a small amount of starch.
  • Dumplings retain their shape better if they are steamed. However, you can also boil the products in boiling water, especially since this method is considered traditional. In this case, it is important to ensure that the dumplings do not stick together. To do this, you need a large and wide pan in which the products will not be cramped. You need to put the dumplings into the water one at a time and only after it boils. The products should be removed with a slotted spoon within a couple of minutes after they rise to the surface. You need to understand that as a result of long cooking, the integrity of the products may be compromised, causing the filling to fall out.
  • The dough will be more tender if the flour is sifted before use. And vegetable oil will give it elasticity - it can be added in small quantities, even if it is not indicated in the recipe.
  • The finished dumplings are immediately greased with butter or rolled in sour cream. This is done in order to prevent them from sticking together.

Dumplings with raspberries are served with powdered sugar, syrup, and whipped cream. Somewhat less often they are supplemented with yogurt or sour cream, although dumplings always go well with fermented milk products.

Classic recipe for dumplings with raspberries

  • raspberries – 150 g;
  • flour – 0.25-0.3 kg;
  • milk – 0.2 l;
  • chicken egg – 1 pc.;
  • salt - a pinch;
  • vegetable oil – 10 ml;
  • sugar - to taste.

Cooking method:

  • Sort through the raspberries, rinse them and scatter them on a towel to dry quickly.
  • Sift the flour and mix with salt.
  • Make a well in the flour and crack the egg into it.
  • Pour in the milk and stir the dough with a spoon.
  • Add the butter, stir a little more with a spoon, and then knead the dough with your hands until ready. To prevent the dough from sticking to your hands, you need to dust them with flour or moisten them with vegetable oil.
  • Roll the finished dough into a ball, wrap in cling film and set aside for half an hour. This must be done, otherwise the dough may turn out to be tough.
  • After the specified time has passed, roll out the dough into a layer about 2.5-3 mm thick. If you make it thinner, it may break through when boiling the dumplings.
  • Using the neck of the cup, cut out circles from the dough. Their optimal size is 7-8 cm, but a deviation of 1.5-2 cm in any direction is acceptable.
  • Place a few berries in the center of each circle and sprinkle them with a little sugar. Lift the edges of each circle and mold them together to form semicircles. The edges of the dough must be glued carefully so that they do not fall apart during boiling. The dough will hold together better if its edges are brushed with egg white.
  • Connect the dough scraps together, knead a little and roll into a new layer. Cut out the same circles from it, fill it, mold it.
  • Boil water in a wide saucepan, lightly salt it - despite the fact that dumplings with raspberries are a sweet dish, they turn out tastier if boiled in salted water.
  • Drop the dumplings one at a time into boiling water and wait for them to float to the surface.
  • Remove the dumplings with a slotted spoon and place on a plate.

Grease the dumplings with butter and sprinkle with powdered sugar or syrup when serving.

Dumplings with raspberries on kefir

  • kefir – 0.5 l;
  • raspberries – 0.25 kg;
  • flour - how much kefir will take (about 0.5 kg);
  • soda – 5 g;
  • chicken egg – 1 pc.;
  • salt – 2-3 g;
  • sugar - to taste.

Cooking method:

  • Remove the kefir from the refrigerator in advance so that it warms up to room temperature, or warm it slightly in a water bath.
  • Pour salt and soda into a bowl with kefir and stir. Let stand warm for 10 minutes.
  • Break the egg into the kefir and beat with a whisk.
  • Add flour in small portions and knead the dough. First you will have to stir with a spoon, then you will need to knead the dough with your hands. This will take about 20 minutes. The finished dough should be soft but elastic. It shouldn't stick to your hands.
  • Cover the dough with a bowl and let it rest for at least 20 minutes.
  • During this time, prepare the raspberries by sorting, washing and drying.
  • Roll the dough into a sausage, cut a piece and flatten it with your palm to form a flat cake.
  • Place a few berries on the flatbread and seal the edges.
  • Place the dumplings on a greased multicooker rack. Pour some water into the multicooker bowl. Cook for 10 minutes in steam mode.

Serve the finished dumplings with sour cream or yogurt. You can use sweet yogurt with berry filling.

Dumplings with raspberries and vanilla cream

  • water – 0.25 l;
  • flour – 0.35 kg;
  • chicken egg – 2 pcs.;
  • starch – 10 g;
  • milk – 0.25 l;
  • sugar – 80 g;
  • raspberries – 150 g;
  • vanillin - on the tip of a knife;
  • sour cream – 50 ml;
  • vegetable oil – 50 ml.

Cooking method:

  • Mix 50 ml of milk with starch and a whisked egg.
  • Mix the rest of the milk with sugar and heat in a water bath.
  • Pour the mixture of milk, eggs and starch into the hot milk, whisking the mixture.
  • Cook until the cream thickens. A minute before, add vanilla.
  • After the cream has cooled slightly, put it in the refrigerator for several hours. It is best to prepare this filling component the evening before.
  • Sift the flour, mix it with a pinch of salt.
  • Boil water, mix boiling water with butter and pour into flour. Knead the dough.
  • Cover the dough with cellophane and set it aside for half an hour.
  • Roll out the rested dough into a thin layer. Cut mugs from it with a cup or mold.
  • Place half a teaspoon of cream and two berries on each circle. Form dumplings.
  • Boil the dumplings by steaming or in boiling water.

An ideal addition to these dumplings would be raspberry syrup. You can serve the dish with yogurt or condensed milk.
