Let's start by preparing zucchini "boats". Wash the zucchini and cut it into 2 halves. Using a teaspoon, scrape out the pulp from each half, leaving a layer of 8-10 mm of pulp around the edges. For convenience, the outline can be outlined with a knife.

Lubricate the inside of the “boats” with vegetable oil and place them on a baking sheet, skin side up. Place in an oven preheated to 180 degrees for 15-20 minutes.

While the “boats” are in the oven, prepare the filling.

Heat a frying pan with oil (1-2 tbsp), add finely chopped onion and garlic. Fry until soft, stirring.

Cut 80 g of zucchini pulp into small cubes and place in a frying pan with the fried vegetables, mix and fry for another 5 minutes.

Place the prepared vegetables in a separate container, straining out the oil.

Add a little more oil to the same pan, add the minced meat and fry for about 10 minutes, breaking up any lumps with a spoon. Cool the finished minced meat.

Grate the cheese on a coarse grater. Finely chop the greens.

In a container, mix minced meat, fried vegetables, cheese, and herbs. Add salt and pepper, mix. The filling is ready.

Place the “boats” on a baking sheet lightly greased with oil. Salt them a little and fill them with the prepared filling.

Cut the tomatoes into half circles and place them on top of the filling. Sprinkle them with salt and pepper.

Place the zucchini boats with minced meat in the oven, preheated to 180 degrees, and bake for 30-40 minutes. We check the readiness by the softness of the zucchini.

Sprinkle the finished zucchini with grated cheese (30 g) and put it in the oven again for 1-2 minutes. Once the cheese has melted, remove the pan from the oven.

Sprinkle boat-shaped zucchini stuffed with minced meat in the oven, sprinkle with chopped herbs and serve as a separate dish.

Zucchini boats with minced meat are an original and simple dish that can be served for lunch or dinner. For boats, it is advisable to use young vegetables - then the “boats” will turn out more tender and soft. Some of the zucchini pulp, which needs to be removed from the zucchini to create “boats,” can be added to the minced meat, making the filling more juicy. You can also add cheese, tomatoes, mushrooms, beans, spices, herbs, and dried herbs to the filling.

Preparation

1. Take a couple of fresh young zucchini, wash and dry them, trim off the stems and ends. Cut the zucchini lengthwise into two equal pieces.

2. Using a teaspoon, scoop out the pulp from the zucchini halves, leaving only a thin shell with skin. Be careful not to make a hole in the boat.

3. You can use minced chicken for the filling. It is best to make it yourself by grinding pieces of chicken with onions and a piece of white bread into a meat grinder. You can also use ready-made minced meat, also made yourself and frozen or purchased in a store. Finely chop some of the zucchini pulp and add it to the minced meat, stir - the filling is ready.

4. Lightly salt the zucchini molds and place the filling inside each one. Place them on a greased baking sheet and place in an oven preheated to 180 degrees. Bake for 25 minutes, then sprinkle each “boat” with grated hard cheese. Leave for another 5 minutes. The type of cheese does not matter; it can be salted, unleavened, with spices, herbs or nuts.

Do not remove the skin from the zucchini. But wash the vegetables thoroughly, wipe dry with a paper napkin, and cut lengthwise. Gently scoop out the pulp, just don't scrape right down to the skin. I made zucchini boats using a teaspoon.

Cut the onion into thin half rings.


Lightly simmer it in butter.


Add minced meat to onion. Mash/break it into small pieces.


Fry until the minced meat is ready – if it has completely changed color, it means it’s ready. Add spices, in my case it was salt, dried basil and ground black pepper.


Place the prepared zucchini on a baking sheet, which you can cover with foil, which is what I did. Fill the vegetables with minced meat.


Top with cheese. It’s a pity that we don’t have Parmesan cheese on sale now; baked zucchini boats would be tastier with it. But take any hard cheese, and to make it easier to grate, freeze it a little.

Bake the zucchini with minced meat and cheese for half an hour. Temperature 180 degrees.

Before serving, garnish the baked zucchini boats with tomato slices and herbs. That's all the preparation. Nourishing and tasty.
Of course, with minced pork it turns out fatty, replace it with chicken, it will turn out no worse.
