But the festive table requires a dish with delicious fillings - salmon, red and even black caviar, such pancakes are called royal. Sweet pancakes for a festive feast can be made with dried fruits, ice cream, and whipped cream.

  • 4 cups flour
  • 100 grams of butter
  • 7 grams of dry or 30 grams of fresh yeast
  • 4 eggs
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 glass of cream.

Preparation and serving

Preparing the royal pancakes:

  1. First we make the so-called dough - you need to dilute the yeast in warm milk.
  2. Sift the flour, add 1/2 of it in small parts to the dough, stirring.
  3. Milk with yeast and flour should rise in a warm place, the volume should approximately double.
  4. Grind the egg yolks with butter and add to the milk (after the dough has risen), stirring constantly.
  5. You need to add the rest of the flour, sugar and salt to the milk mixture. Again you need to mix and put in a warm place for one hour.
  6. You need to beat the whites thoroughly with a mixer, then mix and slowly pour the cream into them, stirring gently. The whites and cream need to be poured into the dough, which again needs to be left, but for less time, for 15 minutes.

Bake the pancakes, grease the finished discs with butter. In order for these pancakes to become a real delicacy, they need an appropriate filling - cut the red fish into small pieces and wrap the pancake. You can also use red caviar for the filling, and you can also use it for decoration by sprinkling a little on the pancakes.

Red fish and red caviar

Red fish is the name given to the meat of pink salmon, chum salmon, salmon and trout, which is consumed lightly salted and, less commonly, smoked. Lightly salted preparation allows the maximum of useful substances present in fresh fish, vitamins A, PP, D, B12, to be preserved. Fish of this type is useful for digestion, blood circulation, liver function, blood vessels, and is recommended for the prevention of thrombophlebitis.

Red fish can cause harm if it is spoiled and subsequently treated with harmful substances to improve its presentation. Raw fish contains helminths, which die when frozen, and in the case of salting, as in red fish - after a week with industrial salting and up to 30 days with home salting.

Red caviar has a lot of proteins (about a third of its weight), vitamins, polyunsaturated fatty acids, iodine, calcium, phosphorus, and folic acid. Red caviar helps improve immunity, prevents atherosclerosis (prevents the formation of blood clots), strengthens bones, has a good effect on vision, and helps increase hemoglobin levels. Caviar contains cholesterol (a substance that leads to the formation of gallstones and accumulates in blood vessels), so eating more than three sandwiches in one day is not recommended. It is not recommended to eat caviar for those with salt intolerance; for example, hypertensive patients should be careful when consuming it.

The main thing is to be careful when choosing red caviar and red fish, not to buy fakes (there is especially a lot of artificial caviar on the market) and you must pay attention to freshness.

There are many recipes for making pancakes, including ones with caviar and salmon. For cooking you will need the following products: Fat milk - 0.5 liters; Eggs - 2 pcs.; Wheat flour - 2 cups; Granulated sugar - 1 teaspoon; Salt - 0.5 teaspoon; Peasant butter - 60 gr; Lightly salted salmon fillet - about 200 g; Hard cheese - 150 gr; Red or black caviar - 100-150 gr.

The method for preparing this dish is quite simple:
To prepare thin pancakes, you first need to beat eggs, sugar and salt.
Next you need to add half a glass of milk and flour. Move everything carefully so that no lumps form.
Add the remaining milk, a little butter to the resulting mass and beat everything again.

Place a frying pan on the stove and add a little oil. When the pan is hot, bake thin pancakes.
Next you need to prepare the filling. The salmon fillet must be finely chopped.
It is best to grate the cheese.
To prepare pancakes with fish, you need to sprinkle each pancake with grated cheese. Place the fish on top with a small gap between the pieces. The pancake is rolled up like a tube and cut into thin pieces. The most optimal thickness is about 2-3 cm.
To prepare pancakes with caviar, you need to cut the resulting thin pancakes into strips up to 5 cm wide. Roll each strip into a roll and carefully place it on a plate. Place a teaspoon of caviar on top of the resulting “stump”.

Here is another recipe for making pancakes. Preparation procedure:

Of course, you can just make sandwiches and not bother. But personally, my family doesn’t really like these, or rather, they, sandwiches. But the pancakes - yeah :)

So, first we prepare the pancakes themselves.

Mix eggs and milk into a homogeneous mass, add salt and sugar (for savory fillings, I prefer sweetish pancakes in order to feel the contrast and emphasize the taste of the filling).

Sift the flour into a bowl and, while stirring constantly, gradually add the milk-egg mixture.
If you get any lumps, break them up using a blender.
Melt the butter and add it to the dough, stir and let stand for 10-15 minutes.

Fry the pancakes in a hot frying pan, greased with oil (precisely greased, not poured). Cool the finished pancakes, fried on both sides, on a cutting board (so as not to stick together).

Prepare the fillings.
You can take the cheese prepared for two fillings. Finely chop the dill (both bunches) and mix it with the cheese (it should be at room temperature).

Place the pancakes on the table and divide the cheese evenly. Spread the filling in an even layer. Place caviar on half of the pancakes, and thin slices of fish on the other half.

Roll the pancakes into a tube and cool. Before serving, cut the pancakes into oblique slices 1-1.5 cm thick and place on a plate. Garnish with lemon slices.

Beat the eggs in a deep bowl. Mix them with milk and vegetable oil. Add sugar, salt and baking powder. Gradually add flour, sifting it through a sieve. Stir so that there are no lumps. Make sure the dough is liquid. Otherwise you will end up with pancakes or American pancakes.

Heat up the pans. I like to make pancakes quickly, otherwise they waste a lot of time! That's why I cook in at least two pans. Pour a ladle of dough into a hot frying pan, distributing it evenly over the surface. Thanks to the baking powder, the pancakes are porous. I fry the pancakes as usual - on both sides, cover them with a towel immediately. This is how little suns turn out.

This time I will cook not simple pancakes, but festive ones. Having saved on all sorts of seaweed and similar ingredients for rolls, I simply poured funds into a different direction. Therefore, I will have pancakes with two types of caviar, salmon and cream cheese. I cut the salmon into thin pieces and put it on pancakes. I report the caviar there. I will have one pancake with red caviar, and the other with black caviar. It's an anniversary after all! I spread a strip of cream cheese next to it and wrap each pancake like this.
