Snail pie made from puff pastry with cottage cheese and cherries

Ingredients:

  • Puff pastry – 500 g;
  • Pitted cherries – 250 g;
  • Granulated sugar – ½ cup;
  • Starch - 2 tbsp. l;
  • Egg – 1 pc.

Cooking process:

  1. Roll out the puff pastry into a thin layer and cut into strips 10 cm wide.
  2. Grind the cottage cheese to avoid lumps, add sugar and vanilla to taste.
  3. Free the cherries from juice. To do this, put it in a colander and let it drain.
  4. Fill half of the dough strips with curd filling. To do this, place the cottage cheese in the center and form a tube, sealing the edges well.
  5. Fill the second half of the dough with cherries. Sprinkle the berries with starch and sugar. Pinch the edges of the tube well so that the juice does not leak out during baking.

A simple recipe for cherry snail pie

Ingredients

  • butter - 200 g;
  • premium wheat flour - 3 tbsp;
  • baking powder - 1 tsp;
  • kefir - 1 tbsp.;
  • a pinch of salt;
  • pitted cherries - 500 g;
  • powdered sugar - 1 tbsp;
  • potato or corn starch - 2 tbsp. l.

Please note that eggs and sugar are not used in this dough - so this pie is quite suitable for those on a diet.

Preparation

The recipe for making “cherry snail” is as follows:

1. Mix flour with salt and baking powder in a container.

2. Soften the butter and add it to the flour, grind these components until crumbs form.

3. Pour in a glass of kefir and knead the dough - it should have a soft and elastic structure.

4. Roll it out into a layer about 5 mm thick (do not forget to sprinkle the work surface and rolling pin with flour so that the dough does not stick), trim the edges so that you get an even rectangle.

5. Divide the layer into several identical strips.

6. Place a row of cherries in the middle of the plate, sprinkle them with a mixture of starch and sweet powder (take up to 4 tbsp.) per 1 tbsp. for 1 row.

Homemade cake, popular in France, is a very simple recipe, but the result is always excellent. True, I’m now baking in a slow cooker, but I’m sure there shouldn’t be any problems with it in the oven.
The interesting thing is that you can add other ingredients to this basic recipe and the taste will always be different. The first time I baked a yogurt cake without additives, it turned out delicious, but... personally, I was missing something. Next time I added a little cocoa and it turned out to be a delicious fluffy chocolate cake. I tried it with apples, and yesterday I added frozen cherries... mmmm... I liked the cherries the most.

Ingredients:

natural yogurt (or cherry) - 1 cup

sugar - 2 cups

flour - 3 cups

Rake powder - 1 pack. 11 gr.

eggs - 3 pcs.

vegetable oil - 1/2 cup

frozen cherries

Preparation:

Measure out all ingredients using a yogurt cup.

Pour yogurt into a mixing container, beat in the eggs, add sugar and mix everything.

Pour in vegetable oil.

Sift flour with baking powder and add to the dough.

I used frozen cherries, I had 200 grams left (the more cherries, the tastier). Defrost the cherries and let the juice drain.
Grease the multicooker bowl with butter.

Pour the dough into the bowl, place the cherry on the surface, it will then sink.
Bake on baking mode for 45 minutes. I have a Philips HD 3039 multicooker.

Bake in the oven for 40 minutes. at a temperature of 180 degrees.

Let the puff pastry sit for half an hour at room temperature to defrost, and in the meantime prepare the fillings. A small nuance: to make the dough thaw faster and not stick together, spread it on the table in one layer, covering the table with cling film.

Cheese filling: grate the cheese on a coarse grater, add chopped herbs and mix. You can combine hard cheeses with soft ones or even replace it with feta cheese.

Mushroom filling: finely chop the onion and sauté in sunflower oil. Peel the champignons, wash them, cut them into thin pieces and add them to the softened onions.

Stirring, fry together over medium heat until soft and lightly browned. Add some salt and the mushroom filling is ready.

The third filling is easiest to make by simply cutting sausage, ham, or, better yet, boiled meat into cubes.

And now the dough has softened. Roll out the strips a little in length and a little in width, and then place a different type of filling in the middle of each of the three strips.

Carefully pinch the edges of the strips.

Grease a round pan with vegetable oil (or better yet, cover it with oiled parchment, so it will be easier to get the cake out). And lay out the pieces of the pie, forming a snail. For example, we twist a strip with mushrooms from the center; then we add cheese to it and finally finish with sausage. Don't be confused by the fact that there is still free space at the edges of the pan - the cake needs it to fit.

Brush the top of the pie with beaten egg and sprinkle with sesame seeds. I sprinkled white and black sesame seeds, it turned out contrasting and very beautiful.

Turn on the oven to low heat, open the door, and place the pie on the stove. After 10 minutes, move the pie into the oven and bake over medium heat, approximately 200C, until a dry wooden stick - 35-40 minutes. Baking time may vary for different ovens, so try the pie with a stick - it may start to brown on top, but may not be completely baked in the middle. If this occurs, reduce the heat slightly so that the center of the pie is cooked. To ensure that the finished pie browns properly, turn up the heat 5 minutes before it’s ready.

What a beautiful pie this turned out to be!

This unusual snack pie is eaten quickly and cheerfully. And instead of bread for soup, and for tea - try it!

Video Pie "Snail" with cherries (cherries) shortcrust pastry

A pie with thin, airy dough that melts in your mouth. It consists of simple ingredients and is prepared very quickly. Any filling can be used. Both sweet (fruits, berries, jam, marmalade, etc.) and unsweetened ones.

Ingredients

1 PC. eggs;

100 g lean ham;

100 g cheese;

300 g puff pastry;

1-2 teaspoons sesame seeds (optional).

Recipe

Ham and cheese should be grated on a coarse grater. Defrost the dough in advance. Sift a little flour onto the table and roll out the puff pastry into layers 2-3 mm thick.

Divide the dough into 4 strips of equal width and length. I use a pizza cutter in such cases. Place grated ham on each strip of dough, then cheese. You need to lay it out so that there is free space on the sides.

Slightly stretching the edges of the dough and pressing the filling, pinch and connect the edges. We should have four long sausages.

Place parchment paper on a baking sheet, seam side down, and place the first “sausage” spiral.

Place the next “sausage” around the first one, continuing the loop. This spiral needs to form the entire cake. Important! The seams should be on the bottom.

To make our pie brown, you need to brush it with beaten egg. If desired, you can sprinkle sesame seeds on top.

Preheat the oven to 180-190 degrees Celsius and bake our snail pie for 20-30 minutes.

Snail pie can be eaten chilled, but it is especially delicious when warm!

I serve this pie both as a separate appetizer and instead of bread with light broths and vegetable soups.

Bon appetit!

Thanks to reader Katyusha for the idea of a sweet snail with cherries and cottage cheese! It was she who came up with this version of spiral cottage cheese, and I realized the idea, since the combination of cottage cheese and cherries is very tasty!

I decided to make snail pie with cottage cheese and cherries from shortbread yeast dough. Why? Because the puff pastry may seem underbaked due to the cherry juice. And we recently baked a pie with apples and poppy seeds using rich yeast dough.

The choice turned out to be successful: the fluffy, tiny dough went well with the cherry and curd filling.

Ingredients:

For shortbread yeast dough:

  • 25-30 g fresh yeast;
  • 3 tablespoons sugar;
  • Half a glass (100 ml) of milk;
  • 250 g butter;
  • 1 egg;
  • 4 cups flour.

For the curd filling:

  • 200 g cottage cheese;
  • 2-3 tablespoons of sugar;
  • 1 packet of vanilla sugar.

For the cherry filling:

  • 300 g pitted cherries;
  • 1-2 tablespoons of starch;
  • 2-3 tablespoons of sugar.

And powdered sugar for sprinkling.

How to bake snail pie with cherries and cottage cheese:

We prepare shortbread and yeast dough, as for “Crimean” bagels.

Grind the yeast with sugar, add warmed milk and mix.

Rub the butter and flour with your hands, add the egg.

Pour the yeast and milk into the flour and knead into a soft dough.

Place the dough in the refrigerator for 1 hour.

Prepare the curd filling: mix the cottage cheese with simple and vanilla sugar.

And put the cherries in a colander to drain the juice.

Take the dough out of the refrigerator and divide it into 2 parts. Sprinkle the table with flour and roll out one part into a rectangle 3-4 mm thick. We cut it into two strips 10-12 cm wide, the edges can be trimmed, and then molded and rolled out again. After crushing the strips with starch, place the cherries in the middle and sprinkle a little sugar. Then we wrap the edge of the dough and seal it carefully to make a tube with cherries.

We make tubes with cottage cheese from the second half of the dough in the same way. I made a few more bagels from the leftover dough.

We cover the round shape with parchment, grease the bottom and sides with sunflower oil, and lay out the tubes, forming a snail. Starting from the center, we roll the tubes in a spiral, alternating: with cherries, with cottage cheese, again with cherries, again with cottage cheese.

Bake the pie for about 45-50 minutes - until the top becomes golden brown and a wooden stick remains dry when testing the dough - first on medium heat (180-200C) to bake, and then on high (220C) to brown .

After letting the cake cool a little, open the pan and transfer it to a plate, where we generously rub powdered sugar through a strainer.

Sweet snail is ready!

And here is a cutaway pie with cottage cheese and cherries. Beautiful and tasty!

Preparation: 1 hour 50 minutes

Recipe for: 8 servings

Snail pie with cherries, apples and cottage cheese is a pleasant pastry and is good because it can please both cherry lovers, apple lovers, and lovers of baked goods with sweet cottage cheese. If there are different preferences in the family, then this one is just for such cases.
In addition to the pleasant taste, it looks very beautiful, one might even say original.

What dough to use for snail pie

The pie is beautiful and unusual due to its shape. It was the shape that determined its name. I prepared the snail from puff pastry and stretch yeast dough. Both options turned out to be successful and tasty. Thanks to the bright taste of the filling, our family fell in love with this pastry.

With puff pastry everything is clear; the simplest option is to buy ready-made dough and follow the recipe below. For a pie with a diameter of 27 centimeters, half a kilogram of dough will be enough.

Yeast dough requires a little fiddling and you will have to prepare it yourself. To do this, combine and mix 220 grams of warm milk, one egg, a spoonful of sugar, add a teaspoon of yeast and mix again. Wait for the yeast to dissolve and pour everything into a bowl. Gently pour the sifted flour into a bowl and knead the dough. The dough should be soft, so add flour in small portions. You will need approximately 350-400 grams of flour. Cover the soft airy dough with a towel and leave it to grow, rest and gain strength. If the kitchen is warm, then after 30-40 minutes you can already work with it.

How to make snail pie with three fillings

While the dough is resting, you need to prepare apples, cottage cheese and cherries. Wash the apples, chop them finely, you can grate them. I cut it into small cubes. With cherries everything is clear, take them out of the refrigerator or open the jar if the cherries are canned. I always remove the seeds before freezing and when canning, but if it happens that the fruits have seeds, then they must be removed. Now about the cottage cheese. Beat one egg into the cottage cheese, add 1 tablespoon of sugar and vanilla, mix. The fillings are ready, the dough has risen, you can start shaping the pie.

Ingredients

  • Dough - 500 grams
  • Frozen cherries - 300 grams
  • Apples - 3 pcs.
  • Cottage cheese - 300 grams
  • Egg - 2 pcs.
  • Sugar - 100 grams
  • Powdered sugar - 100 grams
