For the base cream we need to combine white chocolate, cream cheese, butter and a little lemon juice. First you need to melt the chocolate in a water bath or in the microwave.

Using the hook attachment, we beat our cream cheese, add chilled chocolate, butter and lemon juice to it. We put 2/3 of the cream aside - this is our base for the mastic.
Grind the bananas in a blender, I prefer to leave small pieces, which, to my taste, is more piquant. Add bananas to 1/3 of the cream, add walnuts. Let's mix everything.

While the creams are cooling, melt the dark chocolate in a water bath; I added Baileys, but if you are cooking for children, of course, you should not add alcohol.
Cut the cooled sponge cake in half and spread the bottom half with chocolate ganache. Place in the refrigerator to let the chocolate harden, then it will be crispy.

Let's get our cake and cream. I placed cling film under the biscuit to prevent the cream from spreading. Spread the banana-nut cream over the chocolate and cover with the other half of the sponge cake. And put it in the refrigerator again for 30-40 minutes. To be sure, I also put on the ring from my uniform :)
