A chef friend shared this recipe with me. Having tried this miracle, I was extremely surprised by the ease of preparation. Previously, I didn’t know what could be done with them other than caviar, but now I cook them regularly during the eggplant season.

Compound:

  • 3 pieces of small eggplants
  • 100 g “Russian” cheese (or any other that melts well)
  • 300 ml sour cream 15%
  • bunch of parsley

How to cook eggplant baked with cheese in the oven:

  1. Cut the eggplants in half lengthwise. You will get 6 halves. One of my eggplants was very long, so I cut it in half more, resulting in a total of 8 slices.
  2. To prevent the eggplants from becoming bitter, sprinkle each half with rock salt, put it in a bowl, fill it with cold water and put it under pressure for at least half an hour (I once had it sit for half a day - no big deal).
