  • wheat flour – 3 cups;
  • kefir 3.2% fat – 2 cups;
  • sugar – 1 tbsp. spoon;
  • soda (without a slide) – 1 teaspoon;
  • hard cheese – 400 g;
  • ham – 400 g;
  • salt - a pinch.

Preparation

Prepare the dough: combine with salt, sugar, soda and mix thoroughly. Grind the cheese on a fine grater, add it to the kefir mass, add flour there and knead the dough. We divide it into pieces, roll each of them out, put the ham cut into strips on top, connect the edges of the cake and roll it out lightly. Fry in a frying pan with heated vegetable oil on both sides until golden brown.

Recipe for cheese scones with ham

Ingredients:

  • flour – 2 tbsp. spoons;
  • hard cheese – 100 g;
  • eggs – 2 pcs.;
  • ham – 150 g.

Preparation

Separate the whites from the yolks. Mix the yolks with grated cheese, diced ham and flour. Beat the whites until a thick foam forms and add to the dough. Mix carefully. Spoon the dough onto a greased baking sheet and bake the cakes in the oven for 10 minutes at a temperature of about 180 degrees.

Ingredients:

For the test:

  • flour – 300 g;
  • water – 300 ml;
  • salt – 0.5 teaspoon.

For filling:

  • ham – 250 g;
  • hard cheese – 150 g;
  • champignons – 200 g;
  • onion – 1 pc.;
  • herbs, salt, spices - to taste.

Preparation

Sift flour into a deep bowl and add salt. Boil water and immediately pour it into the flour, mix the dough thoroughly with a spoon and let it cool slightly. Once it has cooled, knead the dough until smooth with your hands. Cover it with a napkin and put it in the refrigerator for half an hour.

In the meantime, prepare the filling: cut the mushrooms into strips and fry, when all the liquid has evaporated, add salt and pepper. Cut the ham into strips, the onion into small cubes. Fry the onion and ham until golden brown over medium heat, add chopped herbs and spices. Combine mushrooms and ham with onions. Pour the grated cheese in there, mix and let stand for a while.

Now let's do the test. Sprinkle the table with flour, pinch off a small piece of the dough, roll in flour and roll out thinly. The result should be a layer no more than 1-2 mm thick. Place 1 tablespoon of filling on half of the dough and cover with the other half of the dough on top. We pinch the edges well. First, prepare the dough: add sugar, salt, soda, egg to kefir and mix well. Then add grated cheese and flour. Mix the dough. Divide the dough into 10-12 parts and roll each of them into a thin layer. For the filling, mix cottage cheese, chopped garlic and dill, sour cream and diced ham. Place a little filling on each layer of dough, connect the edges and roll out lightly. Fry over low heat on both sides, covering the pan with a lid.

Those times are long gone, and flatbreads with filling are no longer uncommon, but they are distinguished from pies... well, except that they have a more rounded, “flatbread” shape, and they usually try to make the dough lean and rough.

Flatbread with ham - general principles of preparation

Homemade flatbreads with ham are baked in the oven or fried in a frying pan in a small amount of vegetable fat. They are prepared with or without filling.

Any ham will do for flatbreads. It is crushed with a grater or cut into small thin pieces, after which it is mixed with dough or placed in the filling. Often, in addition, grated cheese and finely chopped herbs are used. To enhance the flavor, the ham can be lightly fried without drying out the pieces.

The dough for flatbreads can be made with yeast, kefir, sour cream or water. It can even be prepared from mashed potatoes or canned corn. Flour is added to them in small quantities to bind the other ingredients together.

Flatbread with ham is served with soup and meat dishes instead of bread. They are also served with tea, coffee or milk drinks.

Unleavened flatbreads with ham and cheese

Ingredients:

300 grams of flour;

40 ml purified oil;

Mild tomato ketchup;

Hard “Russian” cheese – 150 gr.;

Pork ham, boiled – 200 g;

Spices “For pizza” – a couple of pinches.

Cooking method:

1. Boil 300 ml of drinking water.

2. Sow the flour into a large bowl, add a pinch of fine salt and mix thoroughly.

3. Pour boiling water into the flour and knead the dough, first with a spoon, and then with your hands on the table.

4. When the dough has cooled well, cut it into ten parts and roll each into a thin flat cake.

5. Lubricate the dough with ketchup and sprinkle with pizza spices. Place chopped ham on half of each flatbread and sprinkle with fine cheese shavings.

6. Fold the free edge of the flatbread over the filling and pinch the edges tightly.

7. Heat the vegetable oil in a frying pan and then heat it very hot. Fry semi-finished products in it on both sides. Turn over and take out only after they are covered with a light blush.

Corn tortillas with ham

Ingredients:

300 gr. canned corn;

Two small onions;

Four tablespoons of flour;

50 gr. ham;

70 gr. “Dutch” or “Kostroma” cheese;

Two eggs, large;

Creamy, natural butter.

Cooking method:

1. From a jar of corn, take four tablespoons of marinade into a separate cup and drain the rest of the marinade.

2. Wash the eggs with warm water, and, carefully breaking the shell with a knife, separate the yolks from the whites.

3. Beat the yolks well with salt and flour. Then add the onion chopped into small pieces and mix thoroughly.

4. Lightly season, add corn and selected marinade. Add ham cut into small cubes and grated cheese onto large shavings, stir.

5. Beat the whites well and carefully mix them with the corn-ham mixture.

6. In a frying pan, with minimal heat, melt the butter and, raising the temperature slightly, warm it well. Then, using a tablespoon to lift the prepared mixture, lay out small flat cakes and fry on each side, achieving a bright blush.

Belarusian yeast flatbreads with ham – “Smazhentsy”

Ingredients:

Into the dough:

Half a kilo of white baking flour;

Two chicken eggs;

20 gr. instant dry yeast;

A tablespoon of sugar;

A spoon of refined sunflower oil;

200 ml pasteurized milk.

For the filling:

150 g of hard, mild cheese;

200 gr. ham;

Small pickled cucumber;

Any smoked sausage – 100 gr.

Additionally:

One and a half spoons of garlic ketchup;

Mayonnaise, full-fat – 1 tbsp. l.;

A spoonful of thick tomato;

Sour cream - two spoons;

Natural butter – 30 gr.;

Cooking method:

1. Dissolve the yeast in a glass of slightly warmed water. Add a tablespoon of sugar and a small spoon of fine salt, two full spoons of flour to the mixture. Stir and place close to heat.

2. The yeast mixture will begin to bubble. Immediately mix it with warm milk. Add the beaten egg and vegetable oil. Add all the flour and knead the dough. Form it into a ball, place it in a large bowl and leave it covered with a towel. After about two hours, knead the ball with your hands and leave for another two hours.

3. Grind the pickled cucumber, ham, smoked sausage and cheese into shavings using a coarse grater. Mix ham and sausage.

4. In a small cup, mix sour cream with a small pinch of ground pepper.

5. Apply a thin layer of butter onto a baking sheet.

6. Pinch off small pieces of dough and lightly press them directly on the baking sheet with your palm so that you get flat cakes up to 0.7 cm thick. Place the pieces at a centimeter distance.

7. When you fill the entire baking sheet, grease the flatbreads with mayonnaise mixed with tomato paste and ketchup. Place the sausage and ham on top and cover the meat layer with chopped pickles and sprinkle cheese on it sparingly.

8. Lightly press the filling with your hands and brush with sour cream and ground pepper.

9. Place the baking sheet with the flatbreads in the oven. Temperature – 200 degrees, duration – up to 20 minutes.

Potato cakes with ham

Ingredients:

700 gr. potatoes;

One egg;

90 gr. flour;

A teaspoon of sesame seeds;

Turmeric, curry and a mixture of ground peppers - to taste

A spoon of refined oil.

Cooking method:

1. Peel the potatoes, cut into slices and boil in lightly salted water. Strain the broth, mash the potatoes with a masher and cool well.

2. Break an egg into the mashed potatoes. Add turmeric, curry and pepper mixture to your taste. Add the ham cut into small cubes and thin green onion rings. Knead the potato dough thoroughly; it will stick a little to your hands.

3. Cover a baking sheet with parchment and spread a thin layer of vegetable oil on it. With hands moistened with water, form the potato dough into small round cakes, half a centimeter thick, and distribute them on a baking sheet.

4. Prick the surface of the products evenly with a fork and moisten them with sunflower oil. Sprinkle sesame seeds on top and leave for 15 minutes. into the oven. Temperature – 180 degrees.

Cheese flatbreads with ham on kefir

Ingredients:

A full glass of full-fat kefir;

“Kostromskaya” or Russian cheese – 200 gr.;

0.5 spoon of sugar;

Refined oil;

0.5 spoon of soda;

Half a spoon of salt;

250 gr. pork ham.

Cooking method:

1. Warm up the kefir in advance by placing the container with the fermented milk product in warm water.

2. Pour the kefir into a wide, spacious bowl. Pour soda into it, stir vigorously and leave for ten minutes.

3. Add salt and granulated sugar, add finely grated cheese and mix again.

4. Add flour in small portions, knead the dough and let it stand for twenty minutes.

5. Cut the ham into thin, medium-sized cubes or grate with a coarse grater.

6. Divide the rested dough into parts and form each into a ball.

7. Roll out the pieces of dough into flat cakes, place the ham filling in the center and seal the edges of the products over the filling. Then turn over and lightly roll out the flatbreads with a rolling pin, giving them a more accurate shape.

8. Heat the vegetable oil in a frying pan for a few minutes, lower and fry the flatbreads in it on both sides until an appetizing golden crust appears.

Flatbread with ham and cheese, in a frying pan with sour cream

Ingredients:

300 gr. high fat sour cream;

Three eggs;

Young dill;

100 gr. fresh “Russian” cheese;

Ham, any boiled – 100 gr.;

Five tablespoons of flour.

Cooking method:

1. Pour the eggs into a bowl, add sour cream, a small pinch of salt and mix everything well with a whisk or mixer.

2. While stirring, add a full spoonful of flour into the mixture. When all the flour is used up, you should get a dough with a consistency reminiscent of thick sour cream.

3. Rub the ham and cheese with medium shavings, chop the dill with a knife and add all the crushed ingredients to the dough. Stir.

4. Heat a few tablespoons of non-fragrant vegetable oil in a frying pan and place a few tablespoons of dough into it. Using a spatula, spread it evenly over the entire bottom of the pan and fry the flatbread, three minutes per side.

Flatbread with ham - cooking tricks and useful tips

Do not add a lot of filling to the flatbreads and glue the edges tightly so that the filling does not fall out during frying.

When frying flatbreads, do not pour a lot of oil into the pan, otherwise the products will turn out to be too greasy; after frying, place them on a disposable towel or napkin to remove any remaining oil from them

To prevent sesame seeds from falling off the finished products, lubricate their surface with water or oil before you sprinkle.

Try adding pickled cheeses to the filling instead of hard cheese, or to it. The filling will be more loose and the taste of the flatbread will improve.

Ham from large, flat cans is not suitable for filling flatbreads; it contains too much moisture. But homemade types of ham, especially from poultry, are simply created for such baking.

If you prepare homemade ham, knowing in advance that some of it will be used as a filling for flatbreads, make it a little saltier and a little less fatty. Excess moisture is also not good, but the ham should not be too dry either.

If you bake the scones in the oven, be sure to line the baking sheet with parchment or grease it with oil to prevent them from sticking to the broiler.

  • if you fry tortillas in vegetable oil, then cover the pan with a lid;

As already mentioned, cheese cakes can be made with any filling. If you add ham to them, you will get a very satisfying and tasty dish. If you don’t have ham, you can use the same recipe to make tortillas with cheese and sausage in a frying pan.

Compound:

  • 250 ml low-fat kefir;
  • 250 g cheese;
  • 300 g ham;
  • 500 g flour;
  • ½ tsp each soda, salt and granulated sugar.

Cheese flatbreads with potatoes

The process of preparing cheese cakes with potatoes is not much different from previous recipes, so we will only consider its features. So, we will need the same ingredients as in the first recipe, we just need to add 5-6 potatoes.

Preparation:

  1. Prepare the dough.
  2. Making the filling: the potatoes need to be peeled, boiled and crushed. Mix crushed potatoes with grated cheese and chopped herbs.
  3. Using the method already familiar to us, we form flat cakes and fry them.

Step 1: Prepare kefir.

Kefir must be taken out of the refrigerator in advance so that it warms to room temperature. At the beginning of cooking, pour it into a cup or glass, add soda, sugar and salt. Mix everything with a whisk or teaspoon. You will hear a joyful hiss with which the soda reacts with the fermented milk product. Your task is to wait until this reaction passes.

Step 2: Prepare the cheese.



While the kefir is being prepared, take the cheese and grate it on a fine grater, or even better if you grind it in a food processor or blender.

Step 3: Prepare the dough.



Pour kefir mixed with salt, sugar and soda into a deep plate, add grated cheese and start kneading the dough, gradually adding flour. In the end, you will still have to leave the mixture aside to allow the kefir to finally wet the flour. While the dough is infusing, make the filling, and then divide the finished homogeneous mass into several equal balls.

Step 4: Prepare the ham.



Peel the skin from the ham and cut the meat into thin, small cubes or grate.
Instead of ham, you can use regular sausage or some sausages, small sausages, or sausages.

Step 5: Form the cakes.



Prepare the cooking surface by dusting it with flour. Place one of the balls made from dough and roll it into a flat cake, but not very thin. Then place pieces of ham in the middle and seal the edges of your product.
