It's a pity to throw it away, but I don't want to mess around with it. Do not rush to throw away this tasty treat that is healthy in all respects. You and I will now find a use for it.

I didn’t think for a long time when I saw midges swarming over the apples. I quickly cut off the rot and removed the core and tails. And she turned on her imagination. As a result, after an hour and a half, jars with the most pleasant contents were already cooling on my windowsill, which will absolutely comfort me and my family in winter.

After all, this apple preparation is universal. This includes aromatic tea or compote. This is a fresh loaf with a layer of amber apple slices. These include pies, pies, casseroles, and cereals containing this tasty goodness. Therefore, if you are now faced with a dilemma - throw away non-store-bought apples or give them a go, don’t think for long. Let's save them and look forward to winter!

Cooking time: depends on the number of apples; I had 2 kg, and I managed it in an hour and a half

Ingredients:

    sugar – 600 g

    water – 1-2 glasses

Preparation

So, I first washed the undeservedly forgotten apples, which were beginning to rot. And then, having cleaned them, removing the rotten and the like, I chopped the aromatic goodness into thin slices.

During the process of peeling and slicing, I sprinkled the apples with sugar, suffering that I could have used more of it. But, as it turned out later, this amount was quite enough.

This is the bowl I got of aromatic cuts.

I left this beauty so that the juice would flow. Since the apples were ripe and juicy, I didn’t wait long. The juice came out very quickly.

But it wasn't enough. That's why I decided to pour the juice into a saucepan and then add water.

How much should I top it up? At your discretion. For example, I know that with such a quantity of apples I could make a gorgeous compote in the amount of 10 liters or jam, puree - a couple of liter jars. But there was no time, and things didn’t work out with cans and sugar. That's why I chose this path.

So, when this mixture boiled, I introduced apple slices into it, which were instantly soaked with their juice. Boiled for five minutes.

By the way, we sterilize the jars at the same time! In the meantime, after cooling the apples, I boiled them 4 more times (each time for five minutes after cooling), without leaving the stove, because... You have to constantly turn it over so that the apples cook. I put all this in dry jars.

Of course, natural apples are best consumed fresh, but if there is no cellar where they can be stored until spring, housewives come to the aid of various tasty apple preparations for the winter.   • 1 kg apples,
  • wide saucepan or cooking basin,
  • gauze and a lid to cover the container while cooling.

Preparation

Rinse the apples well, remove the core with seeds and cut into small slices - this is necessary so that the apples are better saturated with sugar syrup. Place the apples in a cooking container in layers, alternately sprinkling with sugar and leave until the morning so that the apples release their juice. In the morning, the apple-sugar mixture must be boiled, bringing to a boil. When the mixture boils, cook for five minutes and remove from heat. During cooking, do not stir the apples, but you can melt them with a spoon so that they are covered with syrup.

The second stage of cooking the jam should begin in the evening - bring it to a boil again, cook for five minutes and leave to cool until the morning.

Please note that the apples become transparent; this will give the jam a special amber color.

In the morning, we repeat the cooking for the third time according to the already known scheme: boil, five minutes, remove from heat. As before, do not stir and leave to cool until evening. In the evening, boil the apple jam for 10-15 minutes. If the syrup has become thicker and all the slices have become transparent, the jam is ready and can be poured into jars.


Applesauce “Nezhenka”

Many people remember the taste of applesauce “Nezhenka”, preserved from childhood. Any housewife is quite capable of preparing such a sissy dish.

To do this you will need:

  • 4 kg apples,
  • 1 glass of water,
  • 1 can of condensed milk,
  • 3 tablespoons of sugar.

Preparation

Wash the fruits, remove the core and peel. Cut into slices and place in a cooking container, adding the required amount of water. Cook over moderate heat until the slices are completely softened - about 30 minutes. After boiling, you need to cool everything and bring the mass to a puree state. You can use a masher or a blender. Pour condensed milk into the puree and add sugar. Cook over moderate heat for 20 minutes, stirring constantly. Place the finished puree into sterile jars and roll up.


Whole apple compote

Apples, among other things, have a special appearance. Compote made from whole apples will help preserve their natural beauty. The apples selected are not large and, most importantly, without damage that would promote the development of bacteria, which can lead to fermentation of the apples and affect the quality of the compote.

For compote you need:

  • 2 kg apples,
  • 270 grams of sugar,
  • 2 sprigs of mint,
  • spices - optional.

Preparation

Rinse the selected apples well and remove all possible damage. Dry so that there are no lines of moisture and place in jars. There is no need to fill it completely; about two-thirds of the container is enough. Boil water and pour boiling water over the jars of apples. Cover with lids and leave for 20-25 minutes to sterilize the jars. At the same time, you can add a sprig of mint, cloves or any other spices to the apples.

After twenty minutes, pour the water from the cans back into the cooking container and add sugar. Boil the resulting syrup. Pour the prepared syrup into the jars, close with a screw cap or roll up, turning upside down and leave until completely cool. Store these apples in a cool, dark place.

Apple compotes for the winter can be prepared with any berries. Chokeberry and lingonberry will give apple compote a tart taste.

Preparing compote from apples with berries has a nuance: the apples need to be cooked first, dipping them in boiling water with dissolved sugar for 20 minutes. Delicate berries: raspberries, strawberries, wild berries should be immersed in water last and only for a short time, for 5-10 minutes, in order to preserve the vitamins in them as much as possible.


Dried apples

You can dry apples in any cool, ventilated room, in a convection oven. On top, from dust and insects, it is worth covering the sliced ​​​​slices with gauze or a thin breathable cloth. Dried apples can be added to tea or mulled wine in winter, boiled compote, and boiled dried fruits with cottage cheese can be wrapped in pita bread to create a healthy dessert.   3. Sprinkle sugar generously on top, mix thoroughly so that each slice is candied. Once the apples have been mixed, place them in the pan.
  4. Leave the saucepan with apples in the refrigerator for a couple of hours.
  5. During this time, a sufficient amount of juice should be released, which will be your syrup. If it turns out to be too little, just add a little water.
  6. Turn on the heat and place the pan with the resulting mass. Bring to a boil and cook for about 5 minutes, stirring with a spoon so that the brew does not burn.
  7. Now prepare the jars separately. Each jar must be washed and sterilized in order to immediately preserve the jam.
  8. Pour the resulting dessert into jars, let it cool for several days, and place in a cool, dark place.

Jam in a slow cooker

You can prepare a delicious dessert even if you don’t have a stove, but have a slow cooker. To do this you need:

  • 1 kg apples;
  • 0.5 kg sugar.

How to prepare this dessert:

  1. Wash the apples thoroughly and cut into thin slices.
  2. Place them in a slow cooker. Do not spare the apples and place them in a dense layer, end to end.
  3. Sprinkle your sugar on top. Moreover, it is better not to sprinkle it on all the slices, but pour granulated sugar into the center of the bowl, so that it is then evenly distributed.
  4. Now everything is simple: turn on the “Stew” mode and leave your mixture to simmer for two hours.
  5. Turn off the multicooker, and without cooling, pour the freshly prepared jam into jars.

Homemade marshmallows are very easy and quick to prepare. You will only need apples and sugar. This is a great dessert that will delight the whole family. Required proportions:

  • 4.5 kg apples;
  • 4 kg sugar.

How to do:

  1. We bake the whole apples in the oven. No additional manipulations are carried out with the fruits; they are simply placed on a baking sheet and baked.
  2. It’s not difficult to understand that the fruit is already cooked. They will change color and become darker, and then crack a little.
  3. Now take a sieve and rub the fruit through it. During these steps, the seeds, skin and core should be sifted out from the mashed apple.
  4. Pour your sugar into the resulting puree and place this mixture on the stove so that it boils to medium thickness.
  5. Now take a deep baking sheet and place the resulting mass on it in an even and thick layer. Adjust the temperature to 70 °C and place your dessert in the oven. Bake for 12 hours.
  6. When the pastille is ready, simply remove it from the oven, cool, and sprinkle with powdered sugar if desired.

You will need:

  • 2 handfuls of rose hips;
  • 3 liters of water;
  • 2 apples;
  • lemon acid.

How to cook:

  1. Boil water, add rose hips and keep on fire until the brew boils. Then reduce the heat and cook for about 10-15 minutes.
  2. At this time, you can prepare your fruit. Cut them into slices, remove the seeds and place in a saucepan with the rose hips.
  3. Increase the heat again and bring your broth to a boil. Once it boils, turn off the heat and leave on the stove, adding a pinch of lemon juice.

With orange without sterilization

The peculiarity of this compote is that the jars do not need to be sterilized before preservation. All you need to do with the jar is rinse it with baking soda. To make the blank, you will need:

  • 10 apples;
  • half an orange;
  • 1.5 cups sugar;
  • 3 liters of water.

Procedure:

  1. Place the water on the fire until it boils.

In addition to jam, jam or apple compote, you can prepare many other delicious preparations.

This very original dish is not at all difficult to make. You will need:

  • 1.5 kg of grapes;
  • 50 ml water;
  • 0.5 kg sugar;
  • 1.3 kg of sweet apples.

Now the recipe itself:

  1. Soak the berries in a bowl of water, and then drain the water.
  2. Next, add clean water and put the grapes on the fire. Cover with a lid and simmer for at least 30 minutes until the berries are thoroughly cooked and softened.
  3. After a lot of juice has been released, you need to squeeze it out and get rid of the pulp and skin. Pour the juice into a separate saucepan, add sugar to it and cook for another half hour.
  4. The fruits need to be peeled and cut into small cubes so that they are properly saturated with syrup.
  5. Pour the fruit into the grape syrup and cook for a quarter of an hour. After this, remove the brew from the stove and let it cool.
  6. Repeat the procedure two more times.
  7. Ready! You can pour the dessert into jars.

Apple marmalade

This winter apple marmalade recipe will be a real find for those with a sweet tooth.

Ingredients:

  • 1 kg apples;
  • 0.5 kg sugar.

Procedure:

  1. Grind the apples in a blender or rub through a sieve.
  2. Add sugar to the resulting puree and cook over low heat until it hardens.
  3. To make the marmalade harden faster, first place a bag of apple peels and seeds in the water. After cooking it is removed.
  4. After cooking, the marmalade can be dried in the oven.

To prepare this delicious puree you will need:

  • 250 g apples;
  • 250 g pears;
  • 400 g sugar.

What to do:

  1. Rinse the fruits under running water, peel them and remove the seeds. After that, cut them into cubes or slices and place them on the bottom of the saucepan.
  2. Add to them 1 tbsp. l. water.
  3. Heat until the water boils and simmer over low heat for half an hour, remembering to cover the top with a lid. As a result, the fruit should become soft.
  4. Grind the resulting mass using a blender to a puree directly in the pan.
  5. Add sugar to the mixture, bring to a boil and stir well.
  6. Done, you can put the puree into jars.

Making salty Indian chutney sauce in your kitchen is not as difficult as it seems.

You will need:

  • 1 kg apples;
  • 1 liter of water;
  • 1 tbsp. l. mustard;
  • 1 kg tomato;
  • 2 pcs. onions;
  • 1 clove of garlic;
  • 0.5 cups raisins;
  • 0.75 cups sugar;
  • 5 tsp. curry;
  • 200 ml apple cider vinegar;
  • 4 tsp. salt.

How to cook:

  1. Remove the skin from the apples, cut them into slices, place them in a saucepan, add water and cook.
  2. After the water boils, they need to be boiled for another 25 minutes.
  3. Wrap the mustard in cheesecloth and place in a saucepan.
  4. Add chopped onion.
  5. Remove the skin from the tomato, cut it (no need to put it through a meat grinder) and put it in a saucepan.
  6. Add curry, sugar, pepper and raisins. Don't forget to add salt. The final touch is finely chopped garlic and apple cider vinegar.
  7. Now cook, stirring lightly, for 3 hours.
  8. Remove the mustard before pouring into jars.

To prepare this dish you will need:

  • 3 kg bell pepper;
  • 3 kg apples;
  • 4 liters of water;
  • 800 g sugar;
  • 300 ml vinegar.

What to do to prepare apples:

  1. Wash and cut the peppers (in strips) and apples (in quarters).
  2. Boil water, add sugar and vinegar.
  3. First, boil the pepper for 1-2 minutes, take it out and put it in jars.
  4. Apples - according to the same scheme.
  5. Fill the jars with marinade and close.

Apple is a great dried fruit and is quite easy to dry.

We will now talk about how to make dried apples. All you need is apples and sugar.

Step-by-step instruction:

  1. Wash the fruits and cut into rings.
  2. Boil the sugar syrup, cool it and place the apples there for a day.
  3. Place baking paper on a baking sheet and place apples.
  4. Place in the oven for 6-8 hours at 60°C. Turn the slices over from time to time.
  5. The dried delicacy is ready!

Preparation. Wash the apples, peel them, cut them into slices and place them in a deep bowl with water acidified with citric acid. This way the apples will not darken. After half an hour, drain the acidified water, put the apples in a saucepan, cover with clean water and cook over low heat, stirring, for 10-15 minutes until they become soft. If necessary, add a little more water. Remove the apples from the heat, add the sugar and stir well until it is completely dissolved. Put the jam back on the fire, bring to a boil and cook for another 30 minutes. Place the finished jam in sterilized jars and seal.

Homemade apple jam

Natural homemade apple jam is much tastier and healthier than jam bought in a store.

You will need : apples and sugar to taste.

Preparation. To begin, peel the apples, cut into slices and cook until soft. Then rub them through a sieve. Pour the resulting puree into a saucepan, add sugar (approximately 150 g per 1 cup of applesauce). Cook over low heat, stirring frequently, until the jam thickens. You will need : 4 cups peeled and chopped apples, 2 tbsp. lemon juice, 1/2 cup sugar, 3 tbsp. corn starch, 1/4 tsp. nutmeg, 1 tsp. ground cinnamon, 1 cup warm water.

Preparation. Place the apple slices in a bowl, add 3/4 cup water, lemon juice and stir to combine. In a saucepan, stir cornstarch and 1/4 cup water. Add cinnamon, sugar and nutmeg. Place the apples in the starch mixture and cook over low heat until they become soft. Let cool and put into jars.

Apple marshmallow

Homemade apple pastille is a delicious and healthy dessert. To prepare it, it is better to use sour apples.

You will need : 4.5 kg apples and 4 kg sugar (less possible, to taste).

Preparation. First, bake the apples in the oven, simply placing them on a baking sheet. The cooked apples will darken and crack slightly. Then rub them through a sieve, remove the skin and core with seeds. Add sugar to the resulting puree and cook, stirring constantly, until medium thick. Pour the thick applesauce in an even layer into a deep baking tray, place in the oven at 70°C and bake the marshmallow for about 12 hours. Cool the finished marshmallow well and cut into slices, sprinkle with powdered sugar.

Pickled apples

Pickled apples are a very delicious dish. They are delicious not only on their own, but also as an addition to meat dishes.

You will need : 6 kg of large apples, 2.5 liters of water, 1 kg of sugar, 500 ml of 6% vinegar and spices (cloves, cinnamon, coriander).

Preparation. Wash the apples, remove the core and seeds and cut into slices. Place in cold salted water (at the rate of 10 g of salt per 1 liter of water) for half an hour. Then drain the salt water and immediately plunge all the slices into boiling water for 2-3 minutes. Remove the blanched apple slices from the boiling water with a slotted spoon and cool. And make a marinade from this water: add sugar, pour in vinegar and stir well so that the sugar grains dissolve. Place in prepared jars, then add apple slices, pour marinade, cover jars with lids, sterilize for half an hour and roll up.

Frozen apples

If you don't have time to process apples during the season, you can freeze them and use them later, for pies, smoothies or sauces.

You will need: apples, water and salt.

Preparation. To prevent apples from losing their pleasant color, they need to be kept in salt water. For 4 glasses of water, take 1 tbsp. salt and stir well until dissolved. You need to take enough water to completely cover the apples. So, peel the apples, remove the core and cut into slices. Place everything in a deep container with salted water and leave it there for half an hour. Then drain the water, let the residue drip off, and place the apples in plastic bags. Don't forget to label your bags! Freeze. Use as needed, after defrosting the apples.

Spiced Applesauce
