Having found the poor guy, I usually try to use him somewhere as quickly as possible. The simplest option for this use is preparing curd dough for bagels. Ingredients

  • 200 g soft cottage cheese;
  • 180 g butter;
  • 1 tbsp. spoon of sour cream;
  • 1 medium egg;
  • 1 teaspoon baking powder;
  • filling to taste (I used marmalade and sweet, meaty dried apricots that were lying around);
  • powdered sugar.

How to make bagels from curd dough with marmalade

Using a mixer, puree the warm butter and cottage cheese. Add sour cream, beat the egg all together until smooth.


Sift the flour into a bowl, add baking powder and knead the dough gently. It will be a little sticky - this is normal.


Preheat the oven to 180 degrees. Prepare the filling. Rinse dried apricots in warm water, dry on a paper towel, cut into cubes or strips. Cut the marmalade into small pieces.


Sprinkle some flour on a cutting surface, place half of the dough and roll out into a thin round. Using a sharp knife, cut the layer into eight segments. Place a little marmalade or dried apricots on the wide part of each triangle.


Roll into bagels and place the curd dough products on a baking sheet lined with parchment. Do the same with the remaining dough and filling.


Cook the bagels with marmalade and dried apricots for 20 minutes with the heat up and down, and then another 5-6 minutes with the convection on - so that the top turns golden.


Remove the delicate pastries from the paper and let cool. Sprinkle powdered sugar on top of the bagels to taste and serve with milk or cocoa.

  • cottage cheese – 260 g;
  • chicken egg;
  • granulated sugar - 2 tbsp. l.;
  • butter – 200 g;
  • plastic marmalade – 200 g;
  • flour – 0.4 kg;
  • baking powder – 3 g.

Step-by-step instruction:

  1. Warm all ingredients to room temperature in advance.
  2. Using a mixer, beat the granulated sugar and egg well, and then add all the other ingredients to them, except flour and marmalade.
  3. It is better to add flour to the dough in portions, and be sure to sift it through a sieve first - this way it will be saturated with oxygen, and the baked goods will ultimately be airy.
  4. Knead the dough until smooth, so that it is soft but does not stick to your hands.
  5. Place the workpiece in a cool place for 20-30 minutes.
  6. Take out the cooled workpiece and roll it well with a rolling pin until it turns into a layer. The height should not be more than 3 mm.
  7. The marmalade should be cut into small pieces in advance.
  8. Cut the circle of dough according to the principle of a cake - into triangular segments.
  9. Place the filling into triangles, preferably on the wide side. Carefully fold the entire triangle over to form a small bagel.
  10. Bake for no more than 20 minutes at 200°C. It is important to use either a silicone mat or well-oiled parchment on a regular baking sheet.

For a richer taste and pleasant appearance, croissants should be sprinkled with powdered sugar or regular sugar.

The right recipe from childhood

Many people remember bagels with marmalade from childhood - the taste of crumbly dough along with slightly sour apple marmalade. But not everyone knows that it’s quite easy to prepare them yourself.

You will need:

  • 200 g lump marmalade;
  • 3.5 cups flour;
  • 200 g butter;
  • 0.5 tsp. soda;
  • a glass of sour cream;
  • 5 tbsp. l. Sahara;
  • vanillin optional;
  • one protein.

Baking method:

  1. Leave all ingredients at room temperature in advance, and melt the butter in a water bath.
  2. Mix sour cream, butter and sugar (reserve 1 tbsp) together.
  3. Sift the flour into a deep container along with soda and add vanillin to it.
  4. Add the liquid ingredients to the bowl and knead the dough.
  5. The structure of the dough should be soft, but not stick to your hands and bowl.
  6. Leave the workpiece to cool in the refrigerator for ½ hour.
  7. Grind the marmalade into small pieces.
  8. Place the chilled dough on the work surface and use a rolling pin to shape it into a circle 4 mm thick.
  9. Coat the dough layer with egg white.
  10. Cut the circle from the middle to the edge into triangles.
  11. Place marmalade cubes on each piece on the wider side and roll into a roll.
  12. Bake at 200 degrees for 20 minutes.

After baking, you should not immediately remove the bagels from the parchment; you should let them cool on the baking sheet under a towel.

From puff pastry

Ready-made frozen dough is ideal for a quick dessert.

Products:

  • puff pastry – 0.5 kg;
  • marmalade – 250 g;
  • granulated sugar – 1/3 cup;
  • yolk;
  • spoon of vegetable oil.

Preparation method:

  1. Defrost the product according to the instructions.
  2. Grease the table with oil or sprinkle it lightly with flour so that the dough does not stick.
  3. Roll out the mixture to form a square.
  4. First cut the square crosswise, and then again, only along the diagonals.
  5. Cut the marmalade into thin slices and place on the workpieces on the wider side.
  6. Roll each triangle into a bagel.
  7. Grease a baking sheet with oil and arrange so that they do not touch.
  8. Let the preparations stand for 10-15 minutes, then coat with beaten yolk.
  9. Bake for 15 minutes at 200°C.

We determine readiness by the brownness of the baked goods.

Lenten cookies with marmalade

This dessert option is perfect during the Lenten period.

Ingredients:

  • 150 g of marmalade on agar-agar or pectin;
  • 2 cups of flour;
  • ½ tbsp. mineral water;
  • ½ tsp. soda;
  • ½ tbsp. vegetable oil.

Cooking method:

  1. Cut the marmalade into thin strips.
  2. Pour flour through a sieve into a deep container.
  3. Combine mineral water with oil and soda and mix.
  4. Mix the liquid ingredients with the dry ones and knead into a soft dough, which is rolled out to 5 mm with a rolling pin.
  5. It is advisable to give the workpiece the shape of a circle, because it is easier to cut triangles from it.
  6. Cut the dough into triangles.
  7. Place marmalade on the wide side of each piece.
  8. Roll the bagels.
  9. Place all the blanks on a silicone mat.
  10. Bake in the oven for 15 minutes at 200 degrees.

You can bake on a baking sheet, but it should be covered with parchment and be sure to grease it with butter!

Cooking with beer

Using beer in desserts allows the baked goods to remain soft the next day, and the beer taste is not felt at all.

Products:

  • light beer - 1 tbsp.;
  • flour – 1.5 tbsp;
  • margarine – 250 g;
  • a pinch of salt;
  • soda – ½ tsp;
  • marmalade or jam – 200 g;
  • egg;
  • sugar – 150 g.

Preparation method:

  1. Mix margarine at room temperature with beer, soda and salt.
  2. Add flour to the margarine little by little. This should be done through a sieve.
  3. Knead into a plastic dough and keep in a cold place for up to 2 hours.
  4. After cooling, remove the workpiece and allow it to warm up to room temperature.
  5. Divide the dough into several parts. Form each into a circle 5 mm high.
  6. Cut each circle into triangles - cut from the middle to the edge.
  7. Fill each triangle with 1 tbsp. spoon marmalade or jam and roll into a bagel.
  8. Dip the dough first in beaten egg, then in sugar.
  9. Place on oiled parchment and baking sheet.
  10. Bake for 20 minutes at 190 degrees.

I offer another recipe that has been popular for a very long time, these are delicious curd bagels with marmalade, or, in other words, tubes with marmalade.
There are many options for making cottage cheese bagels with marmalade; I offer the recipe that was used at our home, without yeast and eggs.

Ingredients:

200 g low-fat dry cottage cheese
200 g butter or butter margarine
300 g flour
1/2 tsp. baking powder
1/3 tsp. salt
1 tbsp. l. vanilla sugar
2 tbsp. l. Sahara
150-200 g marmalade for filling
This amount of product makes 24-25 bagels.

Preparation:

Mix flour with baking powder, vanilla sugar and salt. Add softened butter or margarine, cut into pieces. The butter should not be completely melted.
Grind everything into fine crumbs with your hands.
Add 200 g of mashed cottage cheese and 2 tbsp. l. Sahara. Take cottage cheese that is not very soft, not wet, and without obvious lumps. If the cottage cheese is grainy, it is better to rub it through a large sieve, or beat it with a blender, or pass it through a meat grinder.
Quickly knead a homogeneous dough. It should be soft enough and should not stick to your hands. If the dough is very soft (due to cottage cheese, for example), add just a little flour.
Place the finished dough for cottage cheese bagels in the refrigerator for at least half an hour. In the meantime, let's make marmalade. This is what a pack of plastic apple marmalade looks like, which I accidentally saw in a supermarket:


This package contains 400 g, for our portion of curd bagels we will need 150-200 g. Cut the marmalade into cubes 4-5 cm long.
Take the dough out of the refrigerator and divide it into 3 parts. We will roll it out in parts.
Lightly dust the counter with flour and place one piece of dough on it. Roll out the dough into a thin rectangle measuring approximately 15*30 cm and no more than 3 mm thick. If you have a special mat for rolling out dough, you may not need flour; the dough won’t stick anyway.
Cut the dough into triangles and lay out pieces of marmalade.
Generally speaking, the dough can be rolled out into a circle, cut from the center into segments, placed marmalade along the edge and rolled into tubes. Then our portion should be divided not into three parts, but in half. You can easily find this method of cutting dough on the Internet. I’m just used to rolling out the dough for cottage cheese bagels with marmalade exactly the same way, in a rectangle, as we’ve always done at home. And it seems to me that this is more convenient and the bagels turn out neater.


Quickly roll the dough with marmalade into tubes, starting from the wide side, and place the tubes on a baking sheet previously covered with parchment. We do the same with the other two parts of the dough. There is no need to grease the parchment; there is enough oil in the dough. You can carefully sprinkle each bagel with a pinch of sugar, or you can sprinkle it with powdered sugar after baking.
Place the bagels in the oven, heated to 180-190 degrees, and bake for 20-25 minutes until golden brown. It is better to bake on the middle shelf of the oven so that the bottom does not burn. Well, actually, you know your oven better, and decide for yourself at what level you should bake.

Remove the baking sheet from the oven, let the bagels cool completely and transfer to a plate. If you want to try hot cookies, be careful, the marmalade is very hot, even if the bagel has already cooled. In general, completely cooled cookies are much tastier than warm ones.
Everyone likes cottage cheese bagels with marmalade; they turn out crispy on top and soft inside. Children especially love them. Try preparing a small portion like this, and in the future you can double the amount of ingredients.

6. Grease a baking sheet with butter or line it with baking paper and place the bagels. Bake in a preheated oven at 200°C for 15-20 minutes.

The finished bagels are sprinkled with sugar or powdered sugar.

They are eaten slightly cooled. The marmalade filling gets very hot and there is a risk of getting burned.

How to make cottage cheese bagels with marmalade

In this recipe, no sugar is added to the dough. The bagels are sprinkled with it from the inside.

Required ingredients:

* 400 g of cottage cheese 9% fat;

* 150 g butter;

* 400 g flour;

* 40 g sugar;

* 200 g marmalade;

* Baking powder;

Butter can be replaced with margarine. The dessert is prepared like this:

1. Grind the cottage cheese with softened butter until smooth. There should be no lumps in the mass.

2. Mix flour with ½ tsp. baking powder and a pinch of salt. Baking powder can be replaced with soda, quenched with table vinegar.

3. Combine all ingredients, knead into a stiff, plastic dough. Let it sit for 30-40 minutes.

4. Roll out the layer in the shape of a circle, its thickness should be 2-3 mm. Cut into triangles like pizza.

5. Cut the marmalade into strips.

6. Sprinkle each piece of dough with sugar and place marmalade on its wide edge. Roll into a tube.

7. Grease a baking sheet with margarine or butter, place the bagels.

Preheat the oven to 220°C, bake the bagels for 15 minutes. When they brown, sprinkle with powdered sugar.
