Ease of preparation, a range of available products and rich taste make it a favorite on many tables. For those housewives who have little time to prepare dinner, this recipe will come in handy. Those who have small children should definitely prepare this soup. Even those kids who don’t like first courses enjoy eating soup with meatballs. And due to the fact that this soup is not cooked in a rich meat broth, like other soups, it is perfect for dietary nutrition.

  • minced meat - 300 gr.;
  • potatoes - 7-8 pcs.;
  • vermicelli - 4-6 tbsp. l.;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • vegetable oil - 1.5 tbsp. l.;
  • salt - 1 tbsp. l.;
  • bay leaf - 1 pc.;
  • greens - to taste;
  • water - 2.5 l.

Cooking method:

To prepare soup with meatballs, you can use any minced meat. If you take previously frozen minced meat, then completely defrost it and carefully drain all the liquid that drained from the minced meat during defrosting.

You need to make small balls from the minced meat. Place the resulting meatballs in a saucepan with water and place over medium heat.

While the water is boiling, peel the potatoes and cut them as you are used to doing.

Wash the onions and carrots, peel and chop. The onion should be chopped into small cubes with a knife, and the carrots should be grated on a fine grater.

Add vegetable oil to the chopped vegetables and fry over medium heat until softened.

When the broth with meatballs boils, remove any foam that has formed from it.

Add chopped potatoes and cook for about 10 minutes.

After this add vermicelli. Let it boil.

Using a spoon, place the fried onions and carrots into the pan.

Add a spoonful of salt.

Add bay leaf and any chopped herbs. Can be used fresh, frozen or dried.

Bring the soup to readiness and remove from the stove. You can let it brew for 15 minutes under the lid and serve.

Ingredients: 320 g of mixed minced meat (pork + chicken), 3 potatoes, an onion, 80 g of small vermicelli, a piece of butter, a table egg, a medium carrot, a pinch of soup spice mixture, fine salt.

  1. To begin with, frying is prepared from chopped vegetables (onions, carrots). It tastes best with melted butter or ghee. First, the onion cubes are fried, and then the grated carrots.
  2. The potatoes are peeled, washed, cut into bars.
  3. The minced meat is mixed with the roast and salted. Small balls are molded from it.
  4. The water in the pan is salted and the selected seasonings are added to it. The potatoes are cooked in this liquid until soft.
  5. Next, frying is added. You can also use bay leaves.
  6. Minced meat balls go into the soup. It is necessary to remove the foam that appears from the surface.
  7. Then the vermicelli is poured into the pan.

About a couple of minutes before the dish is ready, pour a beaten egg into it.

With minced chicken and broth

Ingredients: large carrots, 2 large spoons of spider noodles, 340 g of minced chicken, 2 liters of chicken broth, fine salt, 3 potatoes, spices, a large spoon of tomato paste, 180 g of raw champignons, 2 onions.

  1. Frying mushroom slices, chopped onions (1 piece) and carrots is prepared in vegetable oil. The mixture is prepared until the excess liquid evaporates. Next, tomato paste is added to the ingredients. Together, the ingredients simmer for a couple more minutes.
  2. The remaining onion is finely chopped and mixed with the minced meat. Miniature balls are rolled out of the salted mass.
  3. The broth is brought to a boil, potato bars are lowered into it and brought to half-cookedness.
  4. Meat preparations are immersed in the future soup. When the meatballs float to the surface, you can salt the treat and add seasonings.
  5. Lastly, the vermicelli is added to the pan and fried.

It remains to cook the soup for another 3-4 minutes. After cooking, the dish should sit.

Step-by-step recipe with tomato sauce

Ingredients: 360 g of minced beef, 2 onions, a carrot, a table egg, a bunch of fresh herbs, 2 tablespoons of tomato paste, a pinch of table salt and granulated sugar, bay leaf, 1-3 garlic cloves.

  1. Add finely grated onion and crushed garlic to the minced beef to taste.
  2. A slightly beaten egg and salt are mixed into the meat mixture. Finely chopped greens are also added there. The ingredients are mixed well. Balls are rolled out of the mass.
  3. Meatballs are immersed in boiling salted water with a bay leaf and cooked for 6-7 minutes. You need to remove the foam.
  4. The remaining onions and carrots are fried. Then it simmers for a couple of minutes on the stove with tomato paste and sugar.
  5. The contents of the frying pan are transferred to the soup.

The treat simmers until cooked over low heat for about 15 minutes.

How to cook in a slow cooker?

Ingredients: 270 g of minced pork, 3 medium potato tubers, large carrots, white onions, a bunch of dill, 1.5 liters of filtered water, table salt to taste, aromatic herbs. How to cook meatball soup in a “smart pan” is described in detail below.

  1. Minced pork is salted and sprinkled with aromatic herbs. To make the taste of the mixture brighter and more interesting, you need to pour finely chopped dill into it. The resulting mass is divided into miniature pieces, which are rolled into balls.
  2. Carrots are cut into slices. If the vegetable is very sweet, then you can reduce its amount in the dish.
  3. The potatoes need to be washed well, peeled and cut into small longitudinal slices.
  4. The onion is peeled and finely chopped.
  5. All pre-prepared ingredients are placed in the bowl of the device. They are filled with water from above.
  6. The dish is prepared in a program designed for soup. Depending on the power of the device, this will take from 60 to 90 minutes.

Ingredients: 420 g of prepared minced turkey, 120 g of egg noodles, onion, clove of garlic, carrot, 4 medium potato tubers, small sweet bell pepper, table egg, table salt, Italian herbs.

  1. Crushed garlic, a slightly beaten egg, salt, and Italian herbs are added to the minced meat. Miniature strong balls are molded from the resulting mass.
  2. Meatballs are immersed in boiling salted water along with potato wedges. They need to be cooked for 12-14 minutes over medium heat.
  3. Vegetables are chopped in any convenient way and sautéed together in a frying pan sprinkled with refined oil. This will take about 8-9 minutes. It is most convenient to cut carrots and peppers into cubes, and onions into cubes.
  4. The contents of the frying pan are transferred to the pan. Egg noodles go there too. You need to cook the soup for another 5-6 minutes.

In the meantime, you need to make meatballs. To do this, add salt and pepper to the minced meat, you can add yolk and finely chopped onion. Next, small balls of the same size are formed.

How to cook meatball and noodle soup

I would like to note right away that it is better to use minced chicken, it makes the broth beautiful and takes less time to cook. But, if necessary, it can be easily replaced with any other.

While the water is boiling, prepare the minced meat. Salt/pepper to taste, add a little onion (the amount depends on your desire). Meatballs are usually made purely from meat, they are small in size and when in the broth they will not be dry.

Before the water boils, we have time to prepare the potatoes by cutting them into cubes as in the photo.

Dip the formed chicken meatballs into boiling water. Form small meat balls with wet palms. Reduce heat to low to obtain a nice, clear, clean broth. We are waiting for it to boil.

Now that our hands are free and we have time, let’s prepare the frying. Chop the onion and grate the carrots.

Onions and carrots are medium-small in size. If they are large, then halves are enough, otherwise the soup will be too vegetable, and the sweetness of the carrots will affect its taste.

Pour vegetable oil into a frying pan. We do not fry the roast too much, but lightly - as in the photo.

The water with the meatballs has boiled, add the potatoes. There is not much noise (stumps) in the broth, but if it appears, it must be carefully removed.

Add the frying mixture to the soup that has boiled after adding the potatoes.

After 10 minutes, add salt and vermicelli.

Boil for no more than 5 minutes and remove from heat.
