1. Boil the pasta until tender in boiling salted water. If desired, you can add a little olive or vegetable oil directly to the water so that the pasta does not stick together after cooking and holds its shape well, and also add a little more Provençal herbs along with salt. Place the finished pasta in a colander.
2. Cut the smoked sausage into medium cubes, cut the bacon into strips. Fry our smoked meats in a heated frying pan with a small amount of oil until golden brown.
3. Next, add ketchup to the fried bacon and sausage, mix everything thoroughly.
4. At the end, add grated processed cheese and cover the pan with a lid, leaving our smoked cheese filling on the stove for about 2-3 minutes.
5. We serve the dish at your discretion. There are two options: you can put pasta and assorted smoked cheese on top, or you can mix pasta with our spicy dressing.

To make the dish truly tasty, choose only high-quality and proven smoked sausage. You should not pay attention to smoked sausages that are too pink in color. Remember, meat after processing has a dull color, even slightly grayish. Also pay attention to the composition, do not buy smoked products containing unfamiliar dyes and soy. When choosing bacon, pay attention to the bacon skin; it should not have stains or roughness. High-quality bacon can be stored for no more than 15 days; if the expiration date on the manufacturer’s packaging is longer, it means that the bacon contains a lot of preservatives, remember this.

I offer an interesting recipe for pasta with sausage and cheese. As an everyday dish, such pasta will give a head start to many breakfasts and dinners. Both nourishing and tasty - just how we like it! Another plus is that since I prepared this dish in the winter, using freshly frozen green peas, it turned out somehow unusual. Let's just say that ordinary pasta began to sparkle with summer colors, which made me very happy.

I also liked the fact that this dish does not take long to prepare and the ingredients used are those that can be bought in any supermarket.

I wanted to draw your attention to pasta - these are curls (a type of pasta) made from durum wheat. They do not boil into mush and retain their shape even if they are accidentally overcooked. Plus, I like the taste of them better than regular pasta. However, if you don’t have one of these, then it’s okay, any will do. It’s just that when you cook it, don’t cook it a little, so that it doesn’t turn sour later.

Ingredients for making pasta with sausage and cheese

  • Pasta - 400 grams (curls);
  • Boiled sausage - 100 grams (Doctorskaya);
  • Adyghe cheese - 150 grams;
  • Onion - 1 pc.;
  • Green peas - 1 cup (fresh or frozen);
  • Garlic - 2 cloves;
  • Butter - 30 grams;
  • Vegetable oil - 2 tablespoons;
  • Tomato paste - 3 tablespoons;
  • Spices - 1/2 teaspoon (Provencal herbs);
  • Sugar - 2 teaspoons;
  • Parsley - 1 handful (fresh);
  • Salt - to taste;
  • Water - 2.5 glasses.

Recipe for pasta with sausage and cheese

First of all, boil the pasta. I already said that I used pasta called curls (curls, curls, etc.), made from durum wheat (similar to Italian). To prepare this recipe, I used a pack of such pasta (400 grams). If you need less or more, then change the amount of products proportionally.

To cook pasta, place it in a pan of boiling water. Usually the proportions are indicated on the packaging. I don’t always read the instructions (only when something doesn’t work out) and to cook this amount of pasta I pour in about 2.5-3 liters of water. The water should be salty and boiling. Throw the pasta into it, stir so as not to stick together and bring to a boil. When the pasta has boiled, reduce the heat to slightly below medium and cook for 7-9 minutes until al dente (half cooked). Once you have reached this stage of doneness of the pasta, simply throw it in a colander to drain all the water in which it was cooked. If you used durum wheat pasta, you do not need to rinse it. Otherwise, it is better to rinse.

Now let's start cooking. To do this, peel and wash the onion. Then it must be grated (to a paste) or crushed with a blender.

Cut the boiled sausage into slices (strips). You can use any sausage (including smoked sausage). In this case, I have Doctor’s sausage of the highest grade (hopefully with meat).

Pour freshly frozen peas with cold water several times. This way you can quickly defrost it and wash it at the same time.

Pour vegetable oil (a couple of spoons) into a heated frying pan with high sides (or a saucepan).

Add chopped onion and fry it. Add a little butter during the process. It is necessary to stir constantly, as chopped onions can burn quickly.

When the onion acquires a light golden hue, add the sausage to the pan.

Let's fry everything together a little and add peas to the sausage.

It's time for the spices. You can add the spices that you like. I used the Herbes de Provence spice blend. I don’t remember exactly now, but it contains basil, oregano, rosemary, thyme and something else.

Mix everything and add sugar. Oddly enough, the slightly sweet taste adds piquancy to the sauce.

Finely chop the fresh parsley and add it to the frying pan.

Chop the garlic. You can also chop it finely, or you can use a garlic press (like I did). Add to sauce.

Stir and simmer over low heat. Meanwhile, measure the required amount of tomato paste into a separate bowl.

Dilute the paste with water and mix well.

Now you can pour the tomato into the frying pan with the sausage, mix everything and bring the contents to a boil over high heat. Then simmer at minimum temperature.

We prepare a simple, but tasty and satisfying dish. It can easily be classified as a “Bachelor’s Dinner”, because it is very easy to prepare, and most importantly - quickly, because it contains ready-made products - sausage and cheese. Ladies will also like this recipe, because pasta made from durum wheat is safe for your figure. Therefore, you can sometimes treat yourself to such a hearty dish.

In addition to sausage, you can use hunting sausages, ham or boiled meat.

If you prefer fish in combination with pasta, pay attention to the recipe. And during Lent you can pamper yourself.

Recipe

    Step 1: Cook the pasta

    Pour at least two liters of water into a large saucepan. Bring it to a boil, add salt and pour the pasta into the boiling water. To prevent the products from sticking together, you can add a teaspoon of vegetable oil to the water. Boil them until almost done, following the instructions on the package. Then place the pasta in a colander to drain all the water.

    Step 2: Slice and fry two types of sausage

    Let's peel two types of sausage from the casing. The variety doesn't really matter. Choose the sausages you like. I used boiled and semi-smoked sausage. Cut it into strips of approximately the same size.

    Melt a piece of butter in a deep frying pan. Place the chopped sausage in the pan. Stirring, fry it over medium heat until golden brown.

    Step 3: Add Pasta

    Add boiled pasta to the fried sausage. Stir and continue cooking over low heat for one minute.

    Combine tomato sauce with a small amount of water or broth. Add the tomato mixture to the remaining ingredients. The sauce can be replaced with natural tomato juice or tomatoes in their own juice.

    Add a little salt if necessary, keeping in mind that the cheese is also a little salty. Season the dish with Italian herbs and a pinch of black pepper for spiciness.

    Step 4: Add hard cheese

    Grind a piece of cheese on a grater with a large blade. Choose flavorful varieties that melt well when heated.

    Sprinkle grated cheese over the ingredients in the pan. Add finely chopped dill (can be replaced with parsley or basil). Quickly mix all ingredients and turn off the heat.

    Step 5: Submission

    We will serve the dish immediately after cooking, while it is still hot. Garnish each serving with a sprig of fresh herbs. You can sprinkle extra cheese on top of the pasta.

    Bon appetit!
