For many of us, grated pies are a kind of hello from childhood in the 80s and 90s. Then they were called Natertysh, or Zatirukha, and all because the dough for it was passed through a grater. It was also called Torn or Chopped Pie - because some housewives chopped the dough for topping with a sharp knife, or tore it into small pieces with their fingers. Housewives liked its preparation for several reasons:

  • guests will arrive soon, but there is nothing for tea;
  • I want something sweet, but I’m too lazy to bother for a long time;
  • when you want something for tea, but there are almost no products;
  • I want to bake something simple that even a cook can handle.

My family also has a recipe for such a pie. At first my mother prepared it, and then, having matured a little, I took over the baton. My husband and I are almost the same age, and in memory of his childhood, he sometimes asks me to make a grated pie with jam.
I decided to remind you how to make it step by step and quickly bake a grated pie from crumbly shortcrust pastry on margarine with jam or cottage cheese. If you are not comfortable with sharp objects, you can pass the dough through a meat grinder - the pie will not be grated, but twisted or chopped.

Grated pie with jam

List of products:

Dough container, grater, mold.

Dough

  1. The margarine should be removed from the refrigerator and softened at room temperature. I like margarine for baking, but regular margarine will work.

  2. Sift the flour into a bowl and mix it with a pinch of salt and sugar.

  3. Place margarine and yolks in flour and extinguish soda over a bowl.

  4. Knead the dough, which does not stick to your hands and is soft. If necessary, add a little flour.

Decoration and baking

Option 1

Option 2

  1. Divide the dough in half, put each half in a bag or wrap it in film and put it in the freezer for half an hour.

  2. Grease a mold (I have a rectangular 30x20) or a baking sheet and with a large grater, immediately into the mold, rub one part of the dough.

  3. We level it (if you do it on a baking sheet, then pick up the edges) and add jam. You shouldn’t put a lot, excess jam will leak out of the pie when heated. A thin layer is enough. Take thick jam, or even better if it is jam or marmalade.
  4. Rub the remaining dough on top.
  5. Bake the grated pie with jam for about 30 minutes at 180°.

  6. Let the finished grate cool slightly and cut into portioned cakes.

Cooking sequence

Curd filling

The pie dough is made almost the same as in the previous recipe:

  1. We take the margarine out of the refrigerator in advance to soften it.
  2. Sift the flour into a bowl and mix it with sugar and a pinch of salt.
  3. Add margarine, slaked soda and knead a soft dough that does not stick to your hands. If necessary, add more flour. You can do all this using a food processor or mixer with a special attachment.
  4. Divide the dough in half. We wrap each half with film or put it in a bag and put it in the freezer for half an hour.
  5. Turn on the oven at 180° and grease a baking sheet or rectangular pan. I use a 30x20 mold.
  6. Rub one half of the dough with a coarse grater. We trim, picking up the edges.
  7. Spread the curd mass.
  8. We make a thin layer of jam, or better yet jam or even marmalade.
  9. Rub the remaining dough.

If you don’t have the time or desire to soften margarine or freeze the dough, I offer you a quick version of the dough:

  1. Sift the flour into a wide and deep bowl and add a pinch of salt and sugar.

  2. Rub cold, hard margarine or butter directly into the flour with the large side of a grater and quench the soda.

  3. Using your hands, rub the flour and margarine into fine crumbs. That's it, the dough is ready.

  4. Pour half of the crumbs into a greased pan.

  5. We make a layer of curd on top.

  6. Place a thin layer of jam and sprinkle with the remaining crumbs.

  7. Bake for approximately 30 minutes.

  8. Divide the slightly cooled grated pie into cake portions.

You might find the recipe useful, either.

Grated pie is considered by housewives to be one of the simplest and at the same time unusual desserts. Most often, these baked goods are based on shortbread dough, and you can experiment with fillings.

Such pies are also called “Hungarian”, most likely because the recipe came from the cuisine of Hungary. In pastry shops, desserts are often cut into small squares and labeled as “Viennese cookies.”

This dessert has become popular for its versatility and base. This is a classic shortbread dough, and each housewife decides for herself how to use it.

You can roll it into a layer, or you can put it in the freezer and then grate it or make crumbs. So the pie can look different and also taste different.

Filling options

The classic recipe necessarily implies the presence of jam in the filling, any jam at that.

But there are other types of fillings that will go well with shortcrust pastry in this recipe:

  • condensed milk, and in combination with nuts and coconut flakes - even tastier;
  • berries and fruits. In summer you can use them fresh, in winter - frozen. You can take strawberries, raspberries, blueberries, cranberries, apples, cherries, currants, gooseberries, peaches and apricots. You need to add sugar to taste for those with a sweet tooth, as well as starch so that the fruit does not leak out. A pie with this filling needs to have higher sides;
  • dried fruits, or better yet a mixture of them: raisins, dried apricots, dates, prunes. You need to grind it all in a meat grinder or blender;
  • cottage cheese (can be in its pure form, or in combination with fresh or dried fruits, berries, nuts);
  • chocolate;
  • lemon, grated with granulated sugar and semolina.

Berries or fruits boiled in sugar syrup go well in a grated pie with tender dough. This dessert can be prepared to suit every taste - both for those with a sweet tooth and for those who like sour things.

This dessert filled with apples does not go stale for a long time and retains its aroma and taste.

Grated pie with any jam is easy to prepare when you are short of time and money. It is simple and inexpensive.

Ingredients:

  • butter – 1 pack;
  • sugar – 0.2 kg;
  • vanilla sugar – 1 pinch;
  • flour – 0.5 kg;
  • vinegar (apple) – 1 tablespoon;
  • eggs – 3 pieces;
  • soda – 1 teaspoon;
  • apple jam – 0.3 kg.

Mix eggs and sugar in a container. The food and bowl must be cold - this is important for shortcrust pastry. Sugar is added to taste, but it is important to remember that the more sour the berry or fruit, the more sweetness will be needed to overcome the sourness.

Flour is poured into another cup, and grated chilled butter is poured into it. Rub the flour and butter with your hands until a homogeneous fine crumb is formed, and the butter should not melt. After this, pour in the mixture of eggs and sugar.

Quench the soda in vinegar, also pour it into a container with flour, and add vanilla sugar.

The crumbly shortbread dough must be kneaded very quickly so that it does not have time to heat up. If it crumbles too much, you need to add a little cold water.

Then the resulting mass should be divided into 2 parts, different in size. Place the smaller one in film and put it in the freezer for 30 minutes.

Most of the dough should be rolled out thinly under a baking dish, then covered with film on top and placed in for a quarter of an hour. After this time, you need to put cold food on it and spread it in an even thin layer.

The dough that was placed in the freezer for half an hour is rubbed on top.

Bake for a little longer than half an hour at 180°C. The oven must be preheated.

The pie is cooled and cut into pieces.

With apricot jam

List of products for 12 pieces:

  • butter – 1 pack;
  • apricot jam to taste;
  • eggs – 2 pcs.;
  • granulated sugar – 0.2 kg;
  • wheat flour – 0.5 kg;
  • baking powder – 1 g.

The preparation steps are as follows.

  1. Beat the butter with sugar and eggs.
  2. Add baking powder and flour.
  3. Mix everything thoroughly.
  4. Place the dough in the freezer for 1 hour.
  5. Then, after cooling, it is divided into 2 parts.
  6. The mold is greased with oil, and 1 part of the dough is rubbed onto it, pressed down slightly to form sides and a bottom.
  7. Apricot jam is laid out on top and the second part is grated.
  8. Preheat the oven and place the pie for half an hour at 180°C.

The cake is ready when the crumbs on top are golden brown.

With cherry jam

The dough is prepared according to the same recipe as grated apple and apricot pie.

The base is also divided into 2 equal parts, and one of them is placed in a pre-oiled form. High sides are formed to prevent the filling from leaking out. Cherry jam is spread on the dough, with fine crumbs from the second piece of shortcrust pastry on top.

With currant jam

The pie baked according to this recipe is a very interesting combination of sweetness and sourness.

List of ingredients:

  • butter – 0.15 kg;
  • chicken eggs – 2 pcs.,
  • sugar – 1 glass;
  • flour - 3 cups;
  • soda - half a teaspoon;
  • salt - a pinch;
  • currant jam - 1/3 liter jar;
  • oil for greasing the baking sheet.

Cut the butter into cubes and place in a bowl. Pour all the sugar there and add the eggs. All this is kneaded with a fork, then flour, salt and baking soda are added. Now you can start kneading the dough.

The process is the same as with other jam, only currant is added. Naturally, with black currants it will be sweeter, but with red or white currants it will be sour.

There are other fillings for grated pie.

With cottage cheese

With this dairy product you can bake a lot of delicious pastries - cheesecakes, cheesecakes, buns, etc.

The delicate taste leaves no one indifferent, and guests will remember it for a long time.

Required Products:

  • flour – 0.45 kg;
  • butter or margarine – 1 pack;
  • fat sour cream – 7 tablespoons;
  • sugar – 1 glass;
  • eggs – 2 pieces;
  • soda or baking powder - 2 teaspoons;
  • high fat cottage cheese – 2 packs of 200 grams each;
  • granulated sugar – 120 g.

How to cook?

  1. Mix granulated sugar, margarine, eggs, flour and baking powder in a deep container. The dough is divided into 2 parts, one of which is put in the refrigerator.
  2. In another plate you need to mix sour cream, sugar and all the cottage cheese. The first part of the dough is rolled out into a thin layer and placed in a mold that has been previously greased with butter. Cottage cheese is added evenly on top.
  3. Next, you need to take the second part of the dough, which has already cooled, and grate it on top using a coarse grater.
  4. The oven needs to be preheated to 200 degrees and place the pie there. Bake for 40 minutes. The cooled dessert is cut into equal pieces.

With lemon

To prepare a grated pie with such an unusual filling you will need:

  • flour - 0.3 kg;
  • butter - half a pack;
  • sugar -0.2 kg;
  • soda - half a teaspoon;
  • egg - 1 pc.;
  • lemon - 2 pcs.;
  • vanilla sugar - 1 whole sachet;
  • salt - on the tip of the knife;
  • lemon juice – 1 tablespoon;
  • water - 50 ml;
  • corn starch - 2 tablespoons.

The preparation steps are as follows.

  1. The dough is prepared in the same way as in previous recipes. The correct shortbread dough is elastic in consistency and does not stick to your fingers.
  2. The resulting mass is divided into 2 unequal parts, both of them are wrapped in film and sent to the refrigerator for an hour.
  3. The larger piece is rolled out into a thin cake and placed in a mold. Right in the mold, the dough is sent back into the cold.
  4. At this time, you can prepare the lemon filling. Zest the lemons and remove the seeds. The fruits need to be cut into small slices.
  5. Lemon slices are sent to a blender, and they need to be crushed until a homogeneous consistency is obtained. You can pass it through the device directly with the zest, but then bitterness will appear.
  6. Next, the lemon mass is transferred to a saucepan with a thick bottom, starch and sugar are poured into it, everything is mixed well so that there are no lumps. You need to cook a little so that the consistency of the filling becomes a little thicker.
  7. Now you can take the form with the dough out of the refrigerator and spread the lemon mixture evenly over it.
  8. The second part of the dough is rubbed on top.
  9. The pie is baked for 30-40 minutes. The crumbs are slightly browned, the main thing here is not to dry out the pie.

With apples

What is included in this dessert:

  • flour (0.34 kg);
  • sugar (0.15);
  • oil (0.1);
  • eggs (2 pcs.);
  • soda (half a teaspoon);
  • vanillin (on the tip of a knife);
  • apples (preferably sweet and sour);
  • cinnamon.

The dough is prepared in the same way as for any other recipe, divided into 2 parts, both of which are put in the refrigerator.

You need to prepare the filling. Take 3 large apples, peel them and remove the seeds. The pulp is rubbed through a grater and sprinkled with lemon juice. This will allow you to acquire a subtle sourness and prevent the apples from darkening.

Rub 1 piece of dough from the refrigerator into the mold. Place mashed apple mixture on top and sprinkle with sugar and cinnamon.

The rest of the shortbread dough is rubbed on top. The grated crumbs should cover the pie in a completely even layer.

Place the pie pan in the preheated oven and bake at 180 degrees for a little over half an hour.

The finished dessert is cooled and then carefully cut into equal parts.

There are some tricks in making grated pie that experienced housewives are willing to share.

  1. Berries and some fruits produce juice, which must be disposed of before you start baking the dessert. Excess liquid will prevent the bottom crust from baking well. Adding a small amount of starch will prevent the dessert from becoming too moist.
  2. Margarine and butter for baking can be taken in equal proportions. This will not worsen the taste, but will save money.
  3. The grated pie is prepared exclusively in a preheated oven at high temperatures (180-210 degrees).
  4. If the dessert is sprinkled with powdered sugar before serving, it will look very original.

Conclusion

A simple but at the same time exquisite grated pie will receive many rave reviews. It can be prepared both for special occasions and for everyday home tea parties with the family.

Today I wanted to make shortbread pie with jam and crumbs on top, so I decided to use my favorite recipe and share it with you. I have butter in the ingredients, but in principle you can replace it with margarine, although in the first case it tastes better.

I use a classic recipe for shortcrust pastry for a pie, which has never let me down and it turns out really tasty and easier to prepare than others. There are a minimum number of ingredients, and they are all very simple. Also, there is no need for sour cream or kefir.

This recipe for shortbread pie with jam and crumbs can be made with any jam or preserves. I decided to add apricot, and for homogeneity I additionally blended it in a blender. The classic recipe for grated pie will come in handy if you need something tasty to make for tea. Even guests are not ashamed to serve this on the table.

In fact, this jam pie is made quickly and easily, so I’m sure that any housewife can definitely make it. I also recommend seeing how easily you can decorate the top so as not to rub the dough and make it look more interesting.

Ingredients:

  • Chicken eggs – 2 pcs.
  • Sugar – 1 tbsp. (200 ml.)
  • Slaked soda – 0.5 tsp
  • Butter – 200 g
  • Wheat flour – 400 g
  • Apricot jam – 200 g

How to make grated pie with jam

So, first of all, I’ll show you how to make shortcrust pastry for a pie. Beat eggs into a mixer bowl and add sugar. I set the mixer to beat at medium speed, and at this time I melt the butter.

When about 3 minutes have passed and the mass has become fluffy, but not like thick foam, such a consistency is not needed, I add slaked soda and melted butter.

I stir and add the sifted flour. It is necessary to sift it in order to saturate it with oxygen and check for the presence of anything unnecessary in it.

First, I add only 100 grams of flour, and begin to knead it with a spatula, then another 100, and so on until I have poured it all out. As a result, the dough comes out soft, not dense, but I don’t recommend filling it with flour if you need delicate shortbread pastries.

Now about how to form a grated pie with jam. I divide the dough into 2 parts, but not equal, but large and small. For now I put the smaller one in the freezer in a bag.

I cover a baking sheet with parchment and place a large piece of dough on it, and then simply distribute it evenly with my hands to make it the same thickness everywhere. I don’t make sides, I don’t see the need for it.

Since I have grated shortbread with jam, namely apricot, but I only found jam, I simply pureed the required amount in a blender until smooth. Next, I distribute it evenly throughout the dough, just a little short of reaching the edges.

At this time, you can already turn on the oven to heat up to 180 degrees. I take the second part of the dough out of the freezer and grate it on a coarse grater, directly on top of the jam, but so that it is approximately even. I didn’t mix more flour into this piece and rubbed it like that, but I know that some people add flour to it to make it harder, because it froze just a little and it’s not very convenient to rub because of this. You do what is most convenient for you.

This is the simple and easy jam pie recipe I came up with. I bake it for about 20 minutes until golden brown.

Next, together with the parchment, I transfer it from the baking sheet to a cutting board and let it cool, after which I cut it into portions.

Its base turned out to be thin, which only makes it tastier.

This is the shortbread pie I have with jam and crumbs on top, I really like it, so I advise you to bake it. And as a filling you can take any jam and preserves, and it is better that it is not very sweet, but with a slight sourness. Enjoy your tea!

Grated pie is very quickly and simply prepared from ingredients that you almost always have on hand. And it gets eaten even faster. This is a great option if you want something sweet and tasty, but don’t have the time or desire to fuss and bother for a long time.

Today I will talk about how to bake wonderful grated pies with jam in the oven and in a slow cooker. The pies take approximately the same time to prepare. The pie in the oven turns out more ruddy and crispy. In a slow cooker it is soft, and when serving it is better to decorate it with powdered sugar. This will make it look more appetizing.

Assembling and baking grated shortcrust pastry pie with jam

  1. After an hour, preheat the oven to 170°C. Take out a larger piece of dough and roll it out into the shape of a baking sheet with a rolling pin.

  3. Place 3 dessert spoons of jam onto the rolled out layer of dough and spread over the surface. You don’t need to put a lot of jam, maximum 4 spoons.

  4. Now take a smaller piece of dough out of the freezer and grate it on a coarse grater directly over the pie. Distribute the grated dough evenly over the crust.

  5. You should have a pie completely covered with grated crumbs.

  6. Place the pie in a preheated oven and bake for 35 minutes at 170-180°C.

  7. Remove the rosy, fragrant pie from the oven. Let it cool slightly, then cut into pieces and place on a serving platter. Enjoy.

    Classic recipe for grated pie

    Grated pie according to the classic recipe is prepared quickly and easily. In about an hour it is ready and you can sit down and drink tea. In order to prepare it you will need products for the dough and apples for the filling. Instead of apples, you can take pears or any other fruit, but then you need to add sugar depending on their sweetness.

    For the test you need:

    • a full glass of flour;
    • half a glass of semolina;
    • 100g butter;
    • ¾ cup granulated sugar;
    • a pinch of salt;
    • 2 tsp baking powder.

    For filling:

    • 4 large apples.

    Preparation:

    1. In order to prepare the dough, you need to mix softened butter and granulated sugar. You don’t need to grind it for a long time, just mix until smooth.
    2. You need to add semolina to this mixture and mix everything well.
    3. In a separate container, mix flour and baking powder. Flour should always be sifted immediately before cooking. Firstly, it may contain unwanted impurities. Secondly, during sifting, the flour is saturated with oxygen and the products made from it are more fluffy.
    4. Flour and baking powder should be added to the creamy semolina mixture.
    5. Grind everything with your hands or a spoon until grains appear.
    6. Next you need to prepare the filling. To do this, apples should be grated on a coarse grater and placed on a sieve to drain excess liquid. It is advisable to take unsweetened apples for the filling.
    7. The dough must be divided into 3 parts. Between the 3 layers there will be 2 layers of filling.
    8. First, a third of the total volume of dough is placed in a mold greased with oil and sprinkled with breadcrumbs. Then put half of the filling on it. Then alternate again, the last will be the dough.

    The peculiarity of the grated pie is that the ingredients for the dough are not kneaded, but ground. Thanks to this, an interesting surface structure and fast cooking appeared.

    Bake the pie, depending on the size and features of the oven, for about half an hour. You need to focus not on the recipe, but on the condition of the baking. From time to time it can be pierced with a dry match or a special stick to determine readiness. The oven temperature must be at least 180 ° C.

    Shortcrust pastry pie

    Grated shortcrust pastry pie is prepared based on the classic recipe, only margarine is added instead of butter. This does not in any way affect the final taste of the product. Rather, margarine is more suitable for preparing fluffy and rosy baked goods. This pie tastes best in the oven. You can also bake it in a slow cooker, first putting in long strips of paper to make it easier to remove.

    For the test you need:

    • 2.5 cups flour;
    • 100g margarine for baking;
    • 50 g fat sour cream;
    • 1/3 cup granulated sugar;
    • 2 yolks;
    • 2 tsp baking powder.

    For filling:

    • 700 g plums;
    • 1/3 cup granulated sugar;
    • teaspoon starch.

    Preparation:

    1. Cut the plum in half and remove the pits. Sprinkle the halves with sugar. While the juice is being released, you can prepare the dough.
    2. After 30 minutes, drain the juice from the plums. They shouldn't be too juicy for the pie.
    3. In one large bowl, mix sugar, sour cream and softened margarine.
    4. Mix sifted flour and baking powder.
    5. Mix all the ingredients, knead the dough, divide it into 2 parts and freeze for 30 minutes.
    6. Place baking paper on a baking sheet. Grate 1 half of the shortcrust pastry using a regular coarse grater, distributing evenly over the baking sheet.
    7. Place plum halves on it in even rows, sprinkle them with starch on top so that the juice does not leak out.
    8. Place the rest of the grated dough on top of the plums.
    9. Bake the pie at a temperature of 170-180 ° C until cooked. Depending on the thickness of the pie, it takes from 25 to 40 minutes to cook.

    The combination of shortcrust pastry and fruit always turns out well. But before cooking, be sure to try the filling. If plums or apples are sweet, then the amount of sugar should be reduced.

    Lenten recipe without eggs

    Lenten shortbread pie is made from margarine, flour, and sugar. To prepare it you don't need any milk or eggs. You can use any berries, jam, marmalade or preserves as a filling.

    For the test you need:

    • 1.5 cups flour;
    • a pack of margarine;
    • 1/3 cup granulated sugar;
    • 1.5 tsp. baking powder.

    For filling:

    • a glass of any jam;
    • 100 g of any nuts.

    Preparation:

    1. Freeze the margarine so you can grate it.
    2. Roast nuts for topping. This way they will taste better. Chop the cooled nuts with a knife.
    3. In a large bowl, mix flour, baking powder and granulated sugar.
    4. To make the dough, grate margarine on a coarse grater directly into the flour mixture.
    5. Mix it gently with a spoon or your hands until the dough forms crumbs. If there is not enough flour, add more.
    6. Preheat the oven.
    7. Place half of the mixture into the mold (or 1/3, depending on the diameter of the mold).
    8. Place the jam on the dough and sprinkle it with chopped nuts. If the mold is small, then repeat the dough-filling layers again.
    9. Sprinkle crumbs on top of the pie and bake at 180°C for 30-35 minutes.

    1. Sift flour, mix with baking powder.

    4. After 30 minutes, roll out the larger part and put the filling on it.
    5. For the filling, mix the jam with starch (so that the filling does not leak out).
