Today I cooked and I had a decent amount of herring caviar and milk left. The question of how to prepare fish milk did not arise, because I know the wonderful recipe “Fried Herring Milk and Caviar,” which will be discussed in this article.

Herring caviar and milk can rightfully be considered one of the healthiest products. The presence of the most essential vitamins (B, A, E) and microelements (potassium, calcium, iron, iodine and others) in herring caviar makes it a unique product, useful for hypertensive patients and people with high cholesterol. Eating herring caviar increases the rate of formation of new cells in the body, restores skin cells, and slows down the aging process. Herring milk is no less useful. The high content of easily digestible proteins, valuable fats, and Omega-3 fatty acids makes this product very useful, especially for people leading an active lifestyle, as well as those who suffer from diseases of the cardiovascular system. Herring milk also has a beneficial effect on brain activity due to its glycine content. In addition, herring caviar and milt contain only 100 kcal per 100 grams.

Most often, when frying, caviar and milk become dry and not very appetizing. I want to offer a cooking method that will result in a very tender and incredibly tasty dish. The advantages of this recipe include a minimal amount of ingredients and very quick preparation.

So let's get started.

To prepare we will need:

Herring caviar or milk, or both at once – 500 g

Salt - to taste

Flour - two to three tablespoons

Milk of any fat content – ​​0.5 cups

Add some salt to the washed and lightly squeezed herring milk (you can add it along with the caviar), pour in the milk and add the flour. Mix carefully.

Spread the resulting mass in small portions onto a frying pan heated with oil. In this case, it doesn’t matter what kind of oil you use; vegetable or butter is fine, it all depends on your taste.

Fry for literally one to two minutes, turn over and fry on the other side in the same way.

Ready caviar and herring milk put it on a plate, and place another portion in the frying pan.

“Fried herring milk and caviar” is prepared instantly, turns out very tender, incredibly tasty. They are good both hot and cold. Fresh vegetables are suitable as a side dish.

And yet, with all the obvious advantages of herring milk, you should not abuse them, otherwise harm from them is inevitable. Due to the same high calorie content, it is not a good idea for overweight people to rely on them.

In addition, herring milk, as well as the fish itself, can cause food allergies. Therefore, this product is contraindicated for children under 3 years of age; for them, its harm and benefit are incomparable. Individual intolerance to it is also possible.

Experimenting in the kitchen

Many housewives, not knowing what to do with herring milk, simply throw it away. And in vain. This product, which has many advantages, is also incredibly tasty when prepared correctly.

They are fried in batter, added to salads, and used as a filling for fishburgers. In some dishes, herring milk can easily replace fish fillet. But in Finland, where they know a lot about seafood gastronomy, milk, like caviar, is added to the fish soup along with fish, and sometimes they are even put in place of fish.

Herring milk tastes great in cold appetizers. One of the most famous is pate. Just beat them in a blender along with pieces of raw carrots, boiled eggs and butter, cool for several hours on the top shelf of the refrigerator - and the perfect topping for cold or even hot sandwiches is ready!

I really love fish pates, fish snacks and all kinds of fish dishes, today I want to offer you a pate made from herring milk to try. The pate turns out to be very tasty, satisfying and nutritious; a few sandwiches can easily satisfy your hunger; as a snack, it’s an excellent option. Boil the chicken egg hard-boiled in advance - 8-10 minutes, peel the egg and grate it on a fine grater. Add the egg shavings to the rest of the ingredients.

Melt the butter, cool and add to a bowl with all the ingredients, mix well and take a sample, adjust the taste for salt/pepper. Place the pate in the cold so that the butter hardens and the pate infuses a little.

    Wash the milk, remove the films, chop and mix with milk, curdled milk, finely chopped apples, onions and cucumbers. Mix everything. Cut the eggs into halves, separate the yolk. Place the egg halves filled with cooked minced meat on a dish and sprinkle them with chopped yolk.

    Canapes with herring milk and herring
    Rye bread - 100 gr. , butter - 30 gr. , herring - 50 gr. , boiled egg yolks - 3 gr.
    Fry the rye bread, grease the croutons with butter or mayonnaise, and place pieces of milk and herring slices on top. Decorate with finely chopped yolks, green onions and butter.

    Toasts with milk and herring
    For 80 g of fish milk and 80 g of herring fillet: 3 yolks, 15 g mustard, 30 g vegetable oil, 20 g olives, 30 g margarine for frying croutons, 200 g wheat bread, 100 g mayonnaise with gherkins.
    The yolks of hard-boiled eggs are ground with ready-made mustard and vegetable oil, finely chopped olives and herring milk are added. Spread this mixture on toasted slices of bread, place slices of herring fillets on them and place in the oven for 56 minutes. Mayonnaise with gherkins is served separately with croutons.

    The milk is taken out, washed without removing the film, boiled or breaded in flour, salted and fried in vegetable oil. The finished milk is cooled, placed in herring containers and sprinkled with horseradish and vinegar.

    Marinate the milk in vinegar with water, salt and pepper. Remove from the marinade, drain, roll in flour or breading, and fry in oil. Serve garnished with fried parsley.
