Curd dough for pies in a frying pan. Making pies from cottage cheese dough. Curd pie with strawberries

Ingredients:

Dough:

  • cottage cheese 9% - 400 grams.
  • soda - 0.5 teaspoon.
  • salt - 0.5 teaspoon.
  • sugar - 3 teaspoons.
  • egg - 1 piece.
  • vegetable oil - 3 tablespoons (in dough).
  • water - 1/4 cup.
  • flour - 2.5-3 cups.

Filling:

  • apple - 2-3 pieces (medium size).
  • sugar - to taste.

Additionally:

  • vegetable oil for frying.

How to cook cottage cheese dough pies fried in a frying pan:

Place cottage cheese in a bowl, add water, stir a little. Use slightly warm water.

Add an egg to the curd mass and mix thoroughly.

Add vegetable oil. It is advisable to use odorless oil for cottage cheese baking.

Pour baking soda into the dough and mix well again.

Add salt and sugar. Instead of sugar, you can add powdered sugar to the dough.

Add pre-sifted flour. Flour should be added in parts. You may need less than the specified amount.

Knead soft dough. I do not recommend kneading the dough for a long time. As soon as it begins to lag well from your hands, stop kneading.

Peel the apples, remove the seeds and cut them into small pieces.

Divide the curd dough for pies into parts and press lightly. You can do this with a rolling pin and a glass. I prefer to cut the dough with my hands.

Place some chopped apples on the dough and sprinkle with sugar to your taste. You should not put too much filling, it will give a lot of juice and the pies may have an unbaked taste.

Carefully seal the edges of the pies. When frying, the filling will produce a lot of juice and it may leak out if the edges are loosely sealed.

Pour vegetable oil into a frying pan, heat it and fry the cottage cheese pies on all sides until golden brown. It is best to use a cast iron frying pan; it produces incomparable pies.

Place the finished pies on a paper towel to remove excess oil.

Usually we use this product to make cheesecakes, casseroles, or, in extreme cases, light desserts. And it’s completely in vain, professional chefs assure ordinary people, since the curd dough for pies with any filling turns out to be light, airy and tender.

Using a blender, I turn them into a homogeneous mass without large lumps.

Add flour mixed with soda. I knead the dough.

The dough should be soft and slightly sticky to your hands.

I'm preparing the filling. In a bowl, combine cottage cheese, egg, chopped fresh dill, and salt.

Mix the filling thoroughly.

I divide the dough into small pieces and place them on a floured table.

Lush fried pies made from curd dough are ready!

You can call your loved ones to the table and start drinking tea!

Enjoy your meal!

To call curd dough a novelty in cooking would be an unforgivable mistake, because it is rather “a well-forgotten old thing.” It has been used for cooking for centuries, but with the advent of yeast, everyone began to slowly forget about it, despite the fact that it is both easier and faster to cook. In its structure, it is also practically the same. So why not make from the cottage cheese that is waiting in the wings, not boring cheesecakes, but fragrant crumpets-pies with an incredible variety of fillings? We offer you several options to choose from that will serve as the basis for your favorite dishes.

Baking dough

There are a huge variety of dough options for making pies, but for some reason most of us limit ourselves to only unleavened or yeast dough. However, many housewives, with all their desire, cannot overcome the complex science of creating dough with yeast. Curd dough for pies in the oven is an excellent alternative. Dishes prepared using it have a wonderful taste and fluffy shape, which is perfectly preserved after cooling.

Ingredients:

  • Cottage cheese - 500 grams;
  • Egg - 3 pieces (large, if small - then 4);
  • Baking powder - 3 teaspoons;
  • Sugar - 3 tablespoons;
  • Vegetable oil - 1 cup (not to the brim);
  • Flour - 700 grams;
  • Salt - a pinch;
  • Yolk - 1 for greasing the pies.

Cooking method:

  1. Add eggs, salt and sugar to thoroughly mashed cottage cheese and grind until the grains dissolve. The most convenient way to do this is with a blender, so we will get not only the same structure, but also an airy mass.
  2. Add vegetable oil without stopping whisking. When all the ingredients are completely mixed, you can gradually add the flour with the baking powder added in advance.
  3. Once the dough has thickened enough, you can start kneading it by hand. Despite its elasticity, the pie dough may stick to your hands; this is quite normal.
  4. Having formed a homogeneous elastic ball, cover it with a clean napkin and give it time to “rest”. As a rule, this takes a couple of hours.
  5. After this, it is completely ready for baking. All we have to do is roll it out into sausages and cut into equal pieces. From the latter we form pies.

The filling for them can be absolutely anything: from eggs with onions or meat, to fresh berries or jam. To give them a golden brown crust, you must remember to brush them with beaten yolk. To finish cooking, the pies will need about 25 minutes at a temperature of 190 degrees (the choice of temperature depends on the characteristics of your stove).

Dough for fried pies

The advantage of cottage cheese dough is its versatility - it is an excellent option for both baking and fried pies with any filling. Leftover potatoes and rice porridge after dinner will make an excellent filling. And the ease of preparation will allow you to please your family with a lush and soft delicacy in the morning.

Ingredients:

  • Cottage cheese - 300 grams;
  • Sour cream - 3 tablespoons;
  • Egg - 3 pieces;
  • Sugar - 3 tablespoons;
  • Soda - 1.5 teaspoons (quench with vinegar or lemon juice);
  • Salt - a pinch;
  • Flour - 3 cups.

Cooking method:

  1. Mix sour cream, sugar and eggs in one bowl and beat thoroughly into a homogeneous mixture.
  2. Suppress the soda and add it to the egg mixture along with salt.
  3. Add the thoroughly mashed cottage cheese to the rest of the ingredients and mix.
  4. Lastly, add flour. We do this in small portions, since it will be much easier to knead. After adding the last portion, knead for about 5 more minutes.
  5. We divide the resulting curd dough for fried pies into 3 parts, from which we form three sausages. Each should make about 15 pies.

You can start cooking right away. Just stretch it with your hands or roll out the dough, pour the filling in there, and onto the frying pan. Don’t be upset if your household doesn’t eat so many goodies at dinner, because after lying down, these pies will become even softer and tastier. So on the second, and even on the third day, they will be as tasty as if they had just been removed from the frying pan.
