Thick apple jam with cinnamon

Getting ready for winter in advance, replenishing our supplies with delicious homemade apple jam with cinnamon. This combination is quite successful; cinnamon, like no other spice, perfectly complements and emphasizes the taste of apples. Prepare homogeneous jam, optionally in slices.


As a result, we get a taste that is not too cloying, the jam is moderately sweet and with a subtle hint of kritsa. You can serve the jam on freshly baked buns or toast; such jam will be an excellent filling for pies and pies. So, let’s prepare everything we need and get started.



Ingredients:

apples – 1100 g

sugar – 650 g

ground cinnamon – 2-2.5 tsp.

water – 150 ml.

We choose apples at the market or pick them in the garden, preferably sweet and sour, dense in structure, and strong. Wash the apples under cool water and dry. From our quantity of apples - 1100 g, we cut out the core, in the end we get one kilogram of peeled apples. Cut the peeled apples into arbitrary pieces.



Take a blender bowl and install a “metal knife” attachment; if you don’t have a blender, you can use a regular grater or meat grinder; a food processor with a “grater” attachment is also suitable. In general, we do what is easier and faster. We throw all the apple slices into the blender; if the volume of the bowl does not allow, we do the process in portions.



Pour in a portion of filtered water, turn on the blender at full power, grind everything for a few minutes until you end up with a fine-grained mass.



Transfer the apple puree into a thick-bottomed saucepan or saucepan.



Add a portion of granulated sugar to the apples.



Next, pour the required amount of ground cinnamon into the apples. If you use cinnamon sticks, add two pieces; after cooking the jam, be sure to filter them. You can also replace cinnamon with vanilla or your favorite spice. Add all spices solely according to your taste preferences.



Place the saucepan on the stove, turn on the burner to moderate heat, and cook the apple jam for one hour, with not much bubbling. After one hour, you will notice that the jam begins to “stick” to the walls of the saucepan, turn off the stove. Take an immersion blender, puree for a few minutes until smooth, leaving pieces if desired. Boil the jam for the last time – 3-4 minutes.



We pack the hot aromatic mixture into dry and sterile jars, which we took care of in advance.



Seal the jam hermetically with a screw key. We turn the jars upside down, immediately wrap them in a warm blanket, and leave them for a day. To store the jam, put it in a cool room.

Once upon a time, cinnamon was incredibly expensive. Now the cost of this spice has decreased, and yet instead of natural cinnamon, substitutes that do not have beneficial properties are often used - for example, cinnamon flavoring or cinnamon tree seeds, which are not at all as healthy and aromatic as its bark.

As a rule, it is impossible to distinguish a fake by eye. Therefore, it is best to buy cinnamon sticks rather than ground spice. This spice is more expensive, but it is impossible to fake it; in addition, cinnamon in sticks retains its aroma and beneficial properties much better than ground cinnamon.

To prevent cinnamon jam from seeming cloying, it is better to cook it from sour or sweet and sour apples. For a kilogram of apples you should take one kilogram of sugar. Washed and peeled apples should be cut into small slices and covered with sugar. After a couple of hours, when the fruits give juice, you can start making jam.

It is best to cook jam in a wide bowl made of copper or stainless steel. Cooking should be done over low or medium heat. All foam must be skimmed off during cooking. I can’t help it - I love him, that’s all. Both large apples and small fruits are suitable for preparing dessert. The jam takes quite a long time to prepare, but the cooking process itself is extremely simple. You will need non-stick cookware.

Ingredients:

  • 3 kilograms of apples;
  • 2 medium sized lemons;
  • 2 level teaspoons of ground cinnamon;
  • 2.5 kilograms of sugar.

Preparation:

Please note that this jam does not contain water or sugar syrup. Before cooking, fruits must be thoroughly washed and then cut into small pieces. Sprinkle sugar on top. Leave for 5-6 hours (during this time, the apple pieces should release enough juice), then stir, and then squeeze the juice from the lemons into this mass. Cook for no more than 15 minutes - during this time the apple slices will be saturated with sweet juice and begin to soften. You need to remove the pan from the stove, cool the jam completely, and then prepare sterile jars and lids. In the second, also known as the final approach, the workpiece is cooked until thickened. Before starting the second cooking, you need to add ground cinnamon. When the fruit mass darkens and thickens, cooking must be stopped. Roll up the apple jam while it’s hot; don’t forget to rinse the lids with boiling water before doing so.

By the way, jam from apples, cinnamon and lemons can be prepared in a slow cooker. To do this, simply replace the usual pan or bowl for cooking fruit with the multicooker bowl. For the first time, prepare the same way: pour granulated sugar directly into the bowl of apple slices, leave until the juice is released. Insanely aromatic winter jam made from ripe apples. Thanks to cinnamon and cloves with star anise, the jam turns out very tasty and has a beautiful rich color. Ideal for making toast. To prepare this homemade apple delicacy, only apples of sweet and sour varieties with a sufficient content of natural thickener - pectin - are suitable. It is he who guarantees the desired consistency of the workpiece.

Ingredients:

  • 3 kilograms of apples;
  • 2.5 kilograms of granulated sugar;
  • a third of a teaspoon of citric acid;
  • 2 glasses of drinking water;
  • 3 cinnamon sticks;
  • 3 star anise;
  • 2-3 buds of cloves (dried) optional.

Preparation:

First you need to wash the apples and leave them to dry. Prepare syrup from water and sugar directly in a container for making jam. Add spices and citric acid to the syrup, 5 minutes after boiling, cut the fruits into small pieces directly into the syrup. Cook 3-4 times for 5 minutes. Cook for the first time a little longer - 7-8 minutes. Between cooking, leave the jam to cool completely. When you want something sweet, tasty and unusual, try making apple and orange jam. The apples themselves are fragrant, and the juicy orange gives the dessert a piquant citrus note and an original light bitterness. And cinnamon completes the wonderful flavor bouquet. I note that the apple slices are mixed not with orange juice, but with the fruits themselves, which will first need to be cut into neat circles, completely removing the seeds. Sometimes it is also advised to boil orange slices before adding them to the preparation, but I usually don’t do this - I don’t think it’s necessary.

Ingredients:

  • 2 kilograms of apples of any variety;
  • 2 large ripe oranges;
  • 1.5 kilograms of granulated sugar;
  • half a glass of water;
  • 1 level teaspoon of ground cinnamon.

Preparation:

The best place to start is by preparing the fruit. Wash apples and oranges first with hot running water, then with cold water. You can use a brush to remove dirt from the skin of the fruit. Cut the oranges into slices without peeling them, remove the seeds, and pour hot syrup made from sugar and water. The syrup will be very thick, that's okay. After boiling the orange for 10 minutes, add apples cut into beautiful slices. They also should not be peeled - firstly, it contains pectin, and secondly, why waste time?

After this, you need to boil the contents of the pan until the fruit mass noticeably thickens, add cinnamon, stir, wait for it to boil again and roll up. The total cooking time for this jam is about an hour. You can cook longer, then the apple-orange mixture will turn out thick, similar to marmalade. When I saw this recipe for the first time, I was stunned. Exactly what was missing in my collection: a combination of fragrant ripe apples and juicy gooseberries, all generously flavored with cinnamon... A fairy tale, not a recipe!

Ingredients:

  • 1 kilogram of apples, preferably green varieties;
  • 1 glass of gooseberries with a slide;
  • 1 kilogram of granulated sugar;
  • 50 ml water;

Not quite jam, but not jam or applesauce either. Something average and very tasty. Attention, if you want to write something like “honey cannot be heated” in the comments now, don’t bother. You don’t have to heat it up, let alone cook it.

Ingredients:

  • 1 kilogram of ripe apples;
  • 1 cinnamon stick;
  • 2 tablespoons of liquid honey;
  • half a glass of water.

Preparation:

Before preparing our jam, you need to wash the apples and peel them thinly, then cut them into small pieces, add water and simmer until softened, adding a cinnamon stick. Once the apple slices are truly soft, remove the cinnamon and puree the fruit in a blender until it becomes a smooth puree. Cool to 30 degrees, add honey and stir. This is an excellent fruit dessert that is prepared without adding sugar. You can't roll it up.

The apple season is in full swing, and plump apples are just begging to be put into your mouth. And we gladly put apples that have been knocked down by the wind into a jar, cutting off the broken sides. Apple jam prepared according to this recipe turns out amber, the apple slices are transparent, and the aroma of cinnamon makes the preparation unique! This wonderful jam will be a delicious addition to tea, pancakes, and an excellent filling for pies and buns. We put it on the fire, bring it to a boil, when the jam boils, you can remove it from the heat and leave it overnight to cool, then it will turn out to be whole slices and a transparent, amber color.

My mother very often prepared everything the night before, brought it to a boil, and then simply finished cooking it in the morning before work. Or I covered it with sugar at night, brought it to a boil in the morning, and when I came home from work, I finished the process.

You don’t have to interrupt the process; when the contents of the pan boil, continue stirring periodically and cook for 1 hour.


Now add ground cinnamon, mix thoroughly again and continue cooking for another 10-15 minutes.

The jam becomes very thick.
