In the late nineties, the Coffee Bean cafe made raf coffee for the first time. Then, for a long time, a visitor to the cafe Rafael could not choose any of the drinks from the assortment of the cafe menu. Over the many years of existence, many different recipes have been invented. Everyone prepared the drink with their favorite additives, which made its taste and aroma always different. Today, every cafe or restaurant prepares raf coffee according to an individual recipe. And there are a lot of them, everyone is looking for their own option.

Classic raf coffee

This is the basic recipe that many baristas follow. Prepare the following components:

  • Twenty-five milliliters of espresso;
  • Half a glass of cream, ten percent fat;
  • A teaspoon of vanilla and regular sugar.

First, prepare tall glasses for beautiful serving, preheat them. Mix sugar in pitcher, cream and finished espresso. Place the cappuccino maker in a container and whisk until you get a high foam. Pour the coffee into glasses, garnish with a cocktail straw and serve.

Don't worry if you don't have a coffee machine. Raf coffee can be made at home in a Turk or French press. Brew espresso in a Turk and strain. What is raff coffee: the history of its appearance

The history of the classic recipe for this drink dates back to the mid-90s. Classical

1 cup of classic raff coffee includes the following products:

  • 5 g vanilla sugar;
  • 100 ml 11% chilled cream;
  • 25 ml espresso;
  • 5 g regular sugar;
  • 1 g cinnamon.

Preparation:

  1. Prepare the necessary ingredients and utensils.
  2. Pour the cream into the pitcher, add both types of sugar.
  3. Make espresso and also pour into the pitcher.
  4. Beat all ingredients with a steam vent until you get an airy foam.
  5. Warm up a cup or glass, pour the drink.
  6. Garnish with cinnamon and serve.

Lavender

Ingredients of 1 serving of lavender raff coffee:

  • 100 ml of cold filtered water;
  • ½ teaspoon lavender flowers;
  • 1.5 teaspoons of any ground coffee;
  • 1 teaspoon granulated sugar;
  • 100 ml 11% cream.

Step by step recipe:

  1. Pour coffee into a pot, put it on low heat, and fill it with cold water.

Preparing honey raff coffee will require the following components:

  • 50 ml espresso;
  • 1 teaspoon honey;
  • 100 ml 11% cream.

To enjoy the soft and delicate taste of honey raff coffee you need:

  1. Brew espresso using any method.
  2. Heat the cream, pour it into the coffee and stir.
  3. Put honey.
  4. Beat with a cappuccino maker until a dense, thick foam forms.
  5. Garnish with a pinch of cinnamon and serve in cappuccino cups.

Citrus

For citrus raff coffee you will need:

  • 50 ml espresso;
  • 5 g vanilla sugar;
  • 100 ml 11% cream;
  • 5 g orange sugar.

The citrus version is prepared in the same way as the classic one. Lemon-lime slices are used for decoration.

Orange

To make orange raf coffee, you need to take the same ingredients as for the citrus recipe and add 2 teaspoons of freshly squeezed orange juice. The juice must be added to the pitcher along with all other ingredients. For decoration, it is better to use orange slices, and a pinch of cinnamon will emphasize the pleasant tartness against the background of vanilla and creamy taste.

Rough coffee can be served not only in the same style as cappuccino, but also as a latte macchiato, poured into large transparent glasses. When served this way, a creamy vanilla foam cap will look especially impressive.

If you want to enjoy more than 180 ml of drink, then you need to use 2 shots of espresso. Sugar and cream should be calculated taking into account the volume of utensils used. Cream that is too heavy can simply be diluted with water before mixing in the pitcher.. Those coffee lovers who are not very fond of vanillin need to be careful with vanilla sugar, as it is very easy to overdo it. In this case, you can even reduce the required amount from 5 g to 3 g per serving of classic raff coffee.

You don’t always have a coffee machine at hand, and since you need to prepare raf coffee using espresso, you can use an alternative method by brewing coffee in a French press or Turk. Just before mixing, the brewed drink should be strained, as grind particles can spoil the impression of the drink. Although, this is a matter of taste, you can do without straining. To make raffe coffee hot, the cream needs to be heated in the microwave for 2 minutes at 800 power. Moreover, you can immediately add vanilla sugar to the cream, so it will dissolve faster. You can whip up raf coffee even in the absence of a cappuccino maker, using a blender or even an ordinary whisk. The main thing is that the result of beating is airy foam. Of course, raf coffee prepared in this way will be somewhat different from its classic version, but it will also give you a few pleasant moments.

Rough coffee appeared relatively recently, and its birth was spontaneous, so there is no need to be afraid to experiment when preparing it, adding new, previously unused ingredients.

Origin

Rough coffee in appearance and in the way it is served is in many ways reminiscent of a latte or cappuccino, but it is a fundamentally different coffee drink. It is prepared from espresso, involves the addition of milk and always two types of granulated sugar - regular and vanilla. Thanks to this, the taste becomes softer and more delicate, it contains shades of creme brulee.

The origin of the drink is very curious, since it was invented in Russia, more precisely, in Moscow. Let us remind you that the birthplace of most types of coffee is Italy, and the world owes the appearance of drinks with a lot of water (Americano) or the addition of milk to the Americans.

If we talk about Rafa coffee, it was first prepared by the barista of the Coffee Bean coffee shop chain in the early 90s for a foreigner named Rafael. The visitor was not a big fan of cappuccino and latte, so he asked to prepare a drink especially for him, in which the taste of espresso would not be so distinctly felt.

The staff prepared espresso for the guest and whipped it with light cream and sugar. The guest liked the result of such an experiment, and then it was appreciated by all of Raphael’s friends, who ordered “coffee like Raphael’s.” Ultimately, the name was transformed into the more convenient Rough Coffee, and then (like the drink itself) migrated to other specialized establishments.

Currently, Raf coffee is offered by most coffee shops not only in Moscow, but also in other cities of Russia, while it is almost never found in foreign establishments.

Composition and calorie content

The composition of the classic Raf is quite simple - a serving of espresso (25-30 ml), 100 ml of cream with a fat content of no more than 11% and 2 teaspoons of sugar. The latter is represented by ordinary sand and vanilla sugar, taken in equal quantities.

The energy value of a 130 ml serving is 135-150 kcal. However, it is more convenient to calculate the calorie content each time, taking into account the ingredients of the drink. A serving of espresso is the lowest in calories – only 2 kcal. The main load comes from cream, the calorie content of which is 120 kcal per 100 ml, and sugar. Regular has an energy value of 377 kcal per 100 g (19-22 kcal per teaspoon), vanilla - 288 kcal (about 14-20 kcal per teaspoon).

If supplements are used, this usually results in increased calories. The most nutritious is, of course, honey - 312 calories per 100 g of product or 30-35 kcal per teaspoon. The calorie content of orange juice is about 36 kcal, lavender is 23 kcal per 100 g of product.

If caramel, toppings, and chocolate chips are used for decoration, this also affects the total calorie content of the drink.

Rough coffee, especially in coffee shops where it is served in large glasses, can hardly be called a diet drink. If you are watching your figure, it is better to immediately include it in your daily calorie intake and not consume it at unplanned times. The drink itself is sweet, rich and high-calorie, so it does not need additional desserts.

Difference from cappuccino and latte

Rough coffee, latte and cappuccino are prepared on the basis of espresso with the addition of milk or cream and sugar, but these drinks are very different from each other.

Unlike cappuccino, Raf coffee is prepared with cream, which makes its taste softer, and creamy notes are more clearly felt in it. The preparation technology also differs - for cappuccino, milk is frothed separately and poured into espresso. Raf involves simultaneously whipping espresso, cream and sugar, which makes its structure more airy.

If we compare latte with Raf coffee, then first of all it should also be noted that the recipe involves the use of milk, not cream. Some of the milk is simply heated, while the other is whipped using a steam vent. Lattes are usually laid out in layers - first, heated milk, then a layer of espresso is carefully poured (along the walls of the glass), followed by a cap of whipped milk. It is logical that such a drink is served in a glass goblet to demonstrate the transition of layers.

For latte, it is important that the ingredients do not mix, while for Raff coffee the ingredients are mixed in one container. It turns out that the difference is due to the preparation technology, which, in turn, entails differences in the serving of drinks.

Classic recipe

The classic recipe is considered to be the one used to prepare coffee in the early 90s at Coffee Bean. You can repeat the drink only if you have special whipping equipment and a coffee machine. The latter will help prepare the “correct” espresso with a 25-30 second extraction time. The whipping apparatus will allow you to achieve uniformity of the drink and obtain a light, airy, foamy texture.

To prepare one serving of Raf coffee according to the classic recipe, you will need the following ingredients:

  • 50 g espresso (essentially a double shot of traditional 25 ml espresso;
  • 100 g of cream, the fat content of which is no more than 11% (if only a fatty product is available, it must first be diluted with milk);
  • 1 teaspoon each vanilla and regular sugar.

First of all, you need to brew espresso. The flow sheet indicates that 7-8 mg of ground coffee beans per 25 ml of water is required. While the coffee machine is preparing the drink, you need to warm up the dishes for serving Raf coffee. This could be a ceramic mug or a transparent glass with a low stem.

Cream should be used at room temperature; cold cream will not whip well and will cool the drink. The cream is placed in the pitcher, sugar is added there, after which the prepared espresso is poured into it. Now you need to beat the resulting mixture using the steam vent of the coffee machine. The drink is ready, all that remains is to serve it beautifully.

Varieties

You can brew Raf at home if you don’t have a coffee machine in a cezve. First you need to prepare coffee from 50 ml of water and 1 teaspoon of ground coffee. Grinding the beans immediately before preparing coffee will make the taste of the drink brighter. For the same purpose, you can throw a pinch of salt at the bottom of the cezve or preheat the ground grains at the bottom of the cezve for a few seconds.

It is better to pour coffee with cold, unboiled water; the heat should be moderate. It is important to warm the coffee beans, receiving beneficial substances, taste and aroma from them, but not to allow the drink to boil. As soon as you notice foam rising, remove the cezve from the heat and strain the coffee.

At the same time, heat the cream. You can do this in a water bath or place them in the microwave for a couple of minutes. Next, you should combine 2 teaspoons of sugar (it is better if it is vanilla and regular sugar taken in equal parts), heated cream and brewed coffee and beat the mixture well with a blender. When fluffy foam appears on the surface, the coffee is poured into a serving bowl. It is advisable to preheat it over steam.

You can decorate the drink with chocolate or coconut shavings or topping.

Rough coffee is a real field for culinary experiments. You can add alcohol, citrus juice, honey to it. This only enhances the taste of the drink.

Orange Raf coffee is very popular. The recipe for making it is in many ways similar to the one used to prepare the classic drink, however, instead of vanilla sugar, 20 ml of fresh orange juice is used. It should be without pulp. Instead of juice, you can use orange sugar, then the citrus flavor will be felt to a lesser extent.

This version of Raf coffee quenches thirst, has citrus freshness, and in addition, speeds up metabolism and helps eliminate toxins.

Replacing sugar with honey will make the drink more viscous in taste, spicy and aromatic, and also more beneficial for the immune system. You will need 1 or 1.5 teaspoons of natural honey. This method involves first combining 50 ml of freshly brewed espresso and 100 ml of cream. Only after this, honey is added and the coffee is whipped.

Preparing Raf coffee according to this recipe usually involves serving it in ceramic cups. Ground cinnamon is used as decoration. The honey drink has a warming effect, so it is rightfully considered more of a winter drink.

Fans of nuts or Snickers bars will appreciate the nutty Raf. The recipe includes a fairly high-calorie nut butter, so the cream is replaced with milk. For 50 ml of espresso you will need 100 ml of milk, a tablespoon of peanut butter, and cane sugar or caramel syrup to taste.

First of all, the paste needs to be diluted in a small amount of milk to the consistency of thick sour cream, then pour the resulting mixture into the pitcher. Add warmed milk, sugar or syrup there.

Brew espresso and pour it into the pitcher, then beat the composition using a steam vent or blender. Afterwards the drink is poured into cups and decorated.

For this recipe, it is important to choose high-quality pasta. It should be as natural as possible, and the main component must be nuts.

Instead of vanilla sugar and vanilla, you can use lavender. Lavender Raf has a pronounced calming effect and is an excellent stress reliever. This recipe uses lavender flowers instead of vanilla sugar. You will need half a teaspoon of dry raw materials.

Lavender flowers must first be ground in a coffee grinder with a teaspoon of regular sugar until it becomes a homogeneous aromatic powder. Otherwise the process is identical to the classical one. Espresso is brewed (in a coffee machine or Turk), combined with cream, and lavender sugar is added. All ingredients are whipped until foamy.

This drink is traditionally decorated with lavender flowers. They go well with a slice of orange.

Fusion cuisine offers unusual Raf cheese coffee. From the name it is clear that the drink will have not only creamy, but also cheesy notes.

To prepare it, coffee is brewed in a cezve from 2 glasses of water and 2 teaspoons of ground coffee. Usually spices are added to coffee - cinnamon, ground ginger, nutmeg, cloves. But you can refuse to use them or adjust the amount to your taste.

Add 50 g of soft cheese to 100 ml of heated cream and thoroughly beat the mixture with a blender until smooth. After this, all that remains is to combine the coffee, 2 teaspoons of sugar (regular and vanilla) and the cream cheese mixture in a warm pitcher and beat.

A little advice from professionals will help you get even more delicious and aromatic Raf coffee.

  • It is better to put vanilla sugar in the cream before heating it, so it will dissolve better and fully release its taste and aroma.
  • If the fat content of the cream is high enough, and there is no milk on hand to dilute it, you can even do this with boiled water. Interestingly, more and more often, when milk and cream are added to coffee, it is called Raf coffee in English.
  • Vanilla sugar in a drink, unlike baked goods, can behave quite aggressively, making coffee cloying and tasteless. It is recommended to start adding it with 3 g per serving, increasing to 5-6 g (just a teaspoon) if necessary.

If you don't like vanilla, you can replace it with cane or orange sugar, or use honey or lavender.

Raf coffee is served in a cappuccino cup. In this case, the sprinkles on the surface of the cup look harmonious. You can also present the drink to guests in a transparent latte macchiato glass. In this case, the balloon cap and the delicate creamy shade of the drink will delight you.

As a rule, for a large (180 ml) glass, use a double portion of espresso, and also increase the amount of other ingredients accordingly.

Vanilla Raf coffee must be served in a heated container, this way the taste of the drink is better revealed. The temperature of the glass should be such that it is comfortable to hold in your hands.

There is also a variety of double Raf coffee. In this case, the volume of espresso and cream is doubled, but it is better to adjust the amount of vanilla sugar to taste so as not to get an overly cloying and spicy drink.

Raf coffee should be served immediately after preparation, before the foam has settled on its surface and the drink has had time to cool.
