Meatballs with gravy is an inexhaustible culinary theme. It's fast, simple, convenient, tasty and quite varied. If you want more satisfying - make from minced meat, or you can from chicken or mixed. To cook meatballs with tomato sauce you will need:

  • minced lean pork - 300-350 g;
  • onion - 2 pcs;
  • a slice of white loaf - 1 pc;
  • carrots - 0.5 pcs;
  • sweet pepper - 1 pc (optional);
  • tomato sauce - 4 tbsp. l;
  • sour cream 15% fat - 2-3 tbsp. l;
  • water - 1 glass;
  • egg - 1 pc;
  • paprika, black pepper, Provence herbs - 0.5 tsp each;
  • salt - to taste;
  • sunflower oil - 3 tbsp. l;
  • mashed potatoes, greens - for serving.

How to cook meatballs with gravy. Recipe

I don’t buy ready minced meat, I prefer to scroll a piece of meat through a meat grinder. This time there was a pork shoulder, minced meat from it turns out juicy and not very fatty. After the meat, I chopped the onion and a piece of loaf soaked in water. If minced meat is purchased, then also add onions and bread to improve the taste and texture of minced meat.

In a bowl, beat the egg, add to the minced meat. To reduce calories, you can use only protein, after whisking with a whisk until light foam.

I add spices and salt. I don't make meatballs spicy, if you like it to feel spicy, use more pepper and add dried or fresh chili and garlic.

I mix with my hands, then beat the minced meat so that it becomes homogeneous, viscous. The meat will soften even more, when beaten it will “stick together” with other products, the minced meat will turn out to be almost homogeneous, sticky. What is very important - blanks from it will keep their shape well and will not fall apart when roasted or stewed. I beat it off in the same way as a cutlet mass: I collect a little in the palm of my hand and throw it back into the bowl with a little effort. After a few minutes, you will get the same mass as in the photo. If it's too steep, I add a spoonful of water.

I pinch off or separate the pieces with a teaspoon, roll them into balls, placing the minced meat between the palms.

Pour a couple of tablespoons of oil into a saucepan or frying pan. I spread a portion of meatballs, leaving a distance between them so that they are quickly fried on all sides.

Fry meatballs over medium heat until lightly browned. I transfer it to a plate. I add oil to the saucepan and send the next batch.

While the meatballs are fried, I cut the onion, carrot (you can grate) into small cubes and take out the sweet pepper frozen in pieces. Pepper is not necessary, but the more variety of vegetables in the gravy, the tastier it is. By the way, the taste of meatballs is largely determined by the gravy, so you need to try to make it very tasty.

In the same bowl where the meatballs were fried, sauté onions and carrots until soft. The fire is medium, it takes about three minutes to roast.

Then I add sweet pepper. I have frozen, so first I had to fry the onions and carrots, and then add the pepper (it will release a lot of juice). If the pepper is fresh, send it to the pan at the same time as other vegetables.

When the liquid from the pepper evaporates, I pour in the tomato sauce, fry for a few minutes so that the taste becomes more contrasting, saturated.

I return the meatballs, gently mix with the sauce and vegetables. I'm warming up.

I add water (if you want to make more gravy, pour in 1.5 cups of water). Bring to a boil, add salt. I cover tightly with a lid and leave the minced meatballs with gravy to simmer over low heat for 15 minutes, until the carrots and peppers are soft.

Meatballs with gravy go well with a side dish of potatoes, any cereal, with a salad of fresh vegetables. Meat balls can be prepared from various types of meat and fish, which makes it possible to experiment with this dish.

  • 400 gr minced meat mixed;
  • egg;
  • 100 gr soft cheese;
  • 250 gr tomato puree;
  • 125 grams of water;
  • 1 st. l. breading;
  • 50 gr green onion feathers;
  • ½ tsp salt;
  • spices "for meat" to taste;
  • 1 tsp mixtures of aromatic herbs;
  • 1 tsp Sahara;
  • a couple of tablespoons of flour.

We chop the green onion.

We rub the cheese on a fine grater.

Mix the egg with salt and spices for meat. Add cheese and mix well. Pour in the breading and mix again - you should get a mixture that slightly gathers into lumps.

We combine the prepared mass with minced meat and onions. We knead with our hands.

We divide the minced meat into balls weighing about 30 g, bread in flour and fry until golden brown in hot oil.

While the products are fried, prepare the sauce: combine mashed potatoes, sugar, herbs in a saucepan or saucepan with a thick bottom. Dilute the sauce with a glass of water. If the puree is thick, you can increase the amount of liquid.

Bring the sauce to a boil over low heat, lower the finished meatballs, simmer, cover with a lid for a third of an hour.

On a note. To make the meatballs dense and juicy, beat the bag of minced meat several times against the bowl in which it was kneaded. It is this procedure that helps to give a good ability to hold the shape, and not the number of eggs.

Recipe for Chicken Meatballs in Cream Sauce

  • minced chicken - 1 kg;
  • onions - 2 units;
  • a slice of wheat bread;
  • ground pepper;
  • sea ​​salt - 1 tsp;
  • half a glass of milk (for soaking bread and adding to minced meat);
  • cheese - 200 gr;
  • cream - 400 ml;
  • garlic clove;
  • bunch of cilantro.

Season minced meat to taste, salt.

Soak the crumb in milk, squeeze.

Add the crumb and milk to the minced meat, mix everything by hand.

Three cheese on a fine grater. We add a quarter of the cheese to the minced meat, the rest is needed for the sauce.

Chop the onion very finely, or chop with a food processor. Add to minced meat, mix thoroughly.

In a deep form, greased with oil, spread the round meatballs. We put in the oven at 200 degrees for a quarter of an hour.

In the meantime, prepare the sauce: mix cream, pressed garlic, pepper, salt, mix everything. Finely chop the greens, add to the sauce. Do not forget about the cheese chips, which were prepared in advance.

Almost ready meatballs are removed from the oven, poured with marinade, evenly distributing cheese and greens over meat products. We reduce the temperature to 180 degrees, put the meatballs for another half hour.

On a note. Bread crumb can be replaced with oat bran in the ratio of 1 slice of crumb = 2 tbsp. l. bran.

Bake with sour cream sauce and rice in the oven

  • rice - ½ stack;
  • minced meat - 400 gr;
  • onions - 1 for minced meat and 1 for sauce;
  • garlic cloves;
  • carrot;
  • egg;
  • sour cream - 250 gr;
  • tomato. pasta - 3 tbsp. l.;
  • salt - 1 tsp;
  • pepper - ½ tsp;
  • ground coriander - ½ tsp;
  • flour - 2 tsp

Grind the onion and garlic with a blender.

Boil rice until half cooked.

We collect minced meat, combining with an egg, onion-garlic mass, spices, do not forget to salt. Lay out the rice. Mix well.

Prepare the sauce: cut the onion into small cubes, carrots into large three. Saute vegetables for a few minutes.

Meanwhile, in half a glass of water, dilute a few pinches of salt, flour. We stir well.

Put the pasta and diluted flour in the frying, mix. If desired, add spices, and for more gravy, you can pour in a little more water. We leave it on a slow fire - boil.

While the sauce is preparing, we form meatballs, put them in a mold. Fill with gravy, cover with foil and bake in a hot oven for a third of an hour, then remove the foil and cook for another 10-15 minutes.

  • pork and beef fillets - 250 gr each;
  • tomato sauce - 150 gr;
  • bulb;
  • water - a glass;
  • salt - 1 tsp;
  • spices "For minced meat" - 1-2 tsp

Wash the meat tenderloins, pass through a meat grinder along with onions, season and salt. Mix well - minced meat for meatballs is ready.

We offer to cook meatballs with gravy in a pan according to special, French motives.

Meatballs:

  • minced meat (any) - 500 gr;
  • egg;
  • garlic cloves - 2-3 units;
  • parsley - 5 branches;
  • flour;
  • salt pepper;
  • butter.

Sauce:

  • lard - 100 gr;
  • ham - 50 gr;
  • tomatoes - 200 gr;
  • onion - 1 small;
  • olives / olives - 175 gr;
  • flour - a spoon;
  • broth - 350 ml;
  • cayenne pepper - on the tip of a knife.

Preparation of minced meat: we press the garlic cloves, chop the greens, mix all the products for the dish in one bowl. Be sure to beat off the bowl.

Cooking meatballs: we form balls of minced meat, fry in a pan.

Prepare the sauce: chop the onion, cut the bacon and ham into small cubes, fry everything together for several minutes. In the meantime, chop the tomatoes, heat the broth. We combine them with the onion-meat preparation, season, add the remaining products and, stirring, cook for a few more minutes. After we spread the meatballs in the sauce, simmer for up to a quarter of an hour. Olives add saltiness to the dish, so you don't need to add salt to the sauce.

  • minced fish - 500 gr;
  • a glass of cooked rice;
  • egg;
  • oil sl. - 1 tbsp. l.;
  • chopped fresh dill - 2 tbsp. l.;
  • a set of spices "For fish" - 1 tsp;
  • flour as a breading;
  • salt pepper;
  • mold oil.

Sauce:

  • tomatoes - 400 gr;
  • tomato paste. - 2 tbsp. l.;
  • water - a glass;
  • sugar - 2 tsp;
  • coriander, ground pepper and salt - ½ tsp each.

Mix minced meat with rice, finely chopped onion, butter (or homemade mayonnaise), chopped dill, beat in an egg, salt and pepper. Mix everything well with a spoon.

We roll meatballs from minced meat, roll in flour and spread in a greased form. We bake in the oven at 220 degrees for a quarter of an hour.

In the meantime, prepare the sauce: dilute the flour with plenty of water, and the pasta with the rest of the water. After we combine all the ingredients, the tomatoes should be very finely chopped, or chopped with a blender. Work well with a whisk.

We cover the products with the sauce and send them to the oven for another 25 minutes.

Spoon sauce over them.

Cover the pan with a lid. Turn the heat down to low so nothing burns. Leave meatballs with semolina to stew in tomato sauce for 5-7 minutes.   • Pork - 600 grams

Ready minced meat can be purchased at the supermarket, but it is better to cook it yourself. To do this, install a sieve with small holes for fine grinding in a meat grinder and pass meat, garlic and onions through it.

Salt the minced meat, pepper and put any spices. I really like to use ground nutmeg and a pinch of red pepper. Well, you can add herbs, spices or finely chopped greens to your taste to enrich the taste.

Stir the minced meat well and beat it a little, this will give it elasticity, airiness, lightness and uniformity. The more uniform the minced meat, the tastier the meatballs will turn out.

Form small meatballs. As a rule, they are made a little larger than cherries, so that it is convenient to eat them whole. It is most comfortable to form them with wet hands, then the minced meat will not stick to your hands, and the meatballs will turn out smooth.

The semi-finished product is ready, start frying it. To do this, pour vegetable or other oil into the pan and heat well.

Put all the meatballs in the pan and fry them for about 10 minutes over medium heat, turning occasionally.

In the meantime, meatballs are fried, take care of the sauce, which will give the dish a special piquancy. Put the tomato paste, sour cream, bay leaf, ground wig, peppercorns, salt and black pepper into the pan.

Fill everything with water.

Meatballs in tomato sauce is a dish prepared with slight variations throughout Italy, in addition to being offered as a main course, it can also be used as an accompaniment to various types of pasta and spaghetti.

  • Olive oil - 2 tbsp. l.
  • Garlic - 3 tooth.
  • Tomatoes in own juice (mashed) - 500 g
  • Tomato - 250 g
  • Minced meat (beef) - 500 g
  • Bulb onion (medium) - 1 pc.
  • Breadcrumbs / Breading (a glass of 200 grams) - 1 stack.
  • Chicken egg - 2 pcs
  • Parsley - 15 g
  • Basil - 15 g
  • Salt - 1.5 tsp.

Cut tomatoes into small pieces.

For the sauce, heat the olive oil in a saucepan over medium heat. Saute minced garlic for 1 minute until soft.

Add crushed tomatoes to the garlic.

For this dish, I used pureed Pomi tomatoes. Since they are made from natural, SUN-RIPENED tomatoes, they have an excellent taste, which we have already missed over the winter, as they offer us in the markets and in stores completely tasteless and watery.

Boil. Cook, covered, over low heat for 30 minutes.

Allow to cool slightly and add 0.7 tsp. salt Using an immersion blender, blend the sauce until smooth.

Chop onion with parsley.

Lightly beat the eggs.

  • 700-800 g tilapia fillet (cod, lemonema, haddock, pike perch, etc.)
  • 1 onion smaller than medium
  • 40-45 g oatmeal (or 4-5 slices of white loaf)
  • 4-6 art. tablespoons of milk (water)
  • 1-1.5 teaspoons turmeric
  • white pepper (or a mixture of peppers), salt

  • Onion - 2 pcs.;

  • Chicken egg - 1 pc.;
  • Baton - 3 pieces;
  • Salt - to taste;
  • Sugar - 1 teaspoon;
  • Ground black pepper - to taste;
  • Dried dill - to taste;
  • Bay leaf - 1 pc.;
  • Carrots - 1 pc.;
  • Tomato paste - 2 tablespoons.

Cooking:

1. You can take any meat that you prefer. But we cook with beef tenderloin. We cut it into small pieces and twist it in a meat grinder. We clean 1 onion and garlic, send it there to the meat.

2. Soak the pieces of loaf in milk.

3. Mince salt and pepper to taste. We break into it a chicken egg, a soaked loaf. We mix and form our meatballs of small size. Fry them in a pan until golden brown.

Of course, you can cook them from anything and how you want. Only from minced chicken they are more tender. Such meatballs can be considered dietary.

Ingredients:

  • Minced chicken - 0.5 kg .;
  • Onion - 2 pcs.;
  • Tomatoes - 3 pcs.;
  • Garlic - 3 cloves;
  • Flour - 5 tablespoons;
  • Tomato paste - 2 tablespoons;
  • Salt, pepper - to taste;
  • Greens - to taste.

Cooking:

1. Add finely chopped garlic to the prepared minced chicken. Salt and pepper. Add 2-3 tablespoons of flour.

Since the minced chicken is liquid, we need to make it a little thicker. For this we use flour, but you can use semolina or bread.

2. While the minced meat is infused, we will prepare the vegetables. We clean the onion. We cut it into half rings and do the same with tomatoes. Greens, in our case it is dill, finely chopped.

3. Lubricate the baking dish with vegetable oil with a brush. With wet hands form meatballs and roll them in flour. We put it in the form. We put in the oven, preheated to 180 °, bake for 15 minutes.

4. Cooking tomato sauce, I already wrote in detail above. Cut the vegetables into half rings and overcook until tender. Add tomato paste, salt and pepper to them. Pour a glass of water and simmer for ten minutes.

5. We take the meatballs out of the oven and pour them with tomato sauce. Bake in the oven for another 15 minutes. Sprinkle the finished meatballs with finely chopped herbs.

With the advent of the multicooker, the life of many housewives has become easier. I threw the ingredients into it, set the time and that's it. She will cook herself and signal that everything is ready. But this is not enough. It needs to be delicious.

Ingredients:

  • Minced meat - 300 gr.;
  • Fresh tomatoes - 2 pcs.;
  • Tomatoes in their own juice - 3 pcs.;
  • Zira - 2 pinches;
  • Garlic - 1 clove;
  • Chili pepper - 1 pc.;
  • Salt, pepper - to taste.

Cooking:

1. Add zira, salt and pepper to minced meat. Mix thoroughly and knock out so that it becomes homogeneous.

  • Homemade minced meat - 250 gr.;
  • Chicken egg - 1 pc.;
  • Potatoes - 2 pcs.;
  • Cream - 2 cups;
  • Onion - 1 pc.;
  • Breadcrumbs - 50 gr.;
  • Salt - 1 teaspoon;
  • Water - 1 glass;
  • Ground black pepper - 1/2 teaspoon;
  • Soy sauce - 1 tablespoon;
  • Butter - 2 tablespoons;
  • Flour - 4 tablespoons.

Cooking:

1. Peel and finely chop the onion. Fry it in butter until golden brown.

2. Boil the potatoes and mash them into a puree, and moisten the breadcrumbs with water and stir.

  • Salt, pepper - to taste.

Cooking:

1. Any minced meat that you have is laid out in a deep cup. We clean one carrot and three on a fine grater. Peel and chop one head of onion. Put the vegetables in a bowl with minced meat. We drive in a chicken egg. Add chopped herbs to taste. Salt and pepper. We mix everything into a homogeneous mass.

2. We form meatballs from minced meat and roll in flour. Fry them in vegetable oil on both sides until golden brown.

Cooking:

1. We clean vegetables. We shred the cabbage. Vegetables cut into small cubes. Throw potatoes, cabbage and bay leaf into a pot of boiling water.

2. While the vegetables are cooking, prepare the minced meat for the meatballs. You can cook it with a meat grinder or a food processor, but we will use a blender. Put the chicken fillet, onions and a little fresh parsley into the bowl. We grind everything into minced meat.

3. As a rule, minced poultry is watery, so it needs to be made a little thicker. To do this, we will use hard cheese (so that it does not melt much in the soup). We rub it on a fine grater and put it in minced meat. Also add salt and spices to it to taste. Mix and make small buns.

4. When the soup with vegetables boils, put finely chopped onions and carrots into it, let it boil for 5 minutes. Discard the chopped bell pepper and meatballs. Salt to taste. When the meatballs begin to float, they are almost ready. Let it boil for 5 minutes and at the end pour the greens.

Minced meat is beaten so that it becomes more sticky and all the ingredients begin to work better with each other, and the meatballs do not fall apart during cooking.

3. We form meatballs the size of a walnut. Roll in flour and fry in vegetable oil on both sides until golden brown. We put them in a saucepan.

4. Prepare the sauce. Put the tomato paste in a glass of boiled water, salt a little and mix. Pour the meatballs with this, add the bay leaf and simmer over low heat for 10 minutes.

5. In half a glass of boiled water, stir the sour cream and flour until smooth. Pour into a bowl and stir gently. Cover with a lid and simmer over low heat for 15-20 minutes.
