This was an attempt to make a lighter version of the Georgian “lobiani”. Only in the Georgian version you need to take dry beans and then cook them.
I really don’t like boiled beans, so I decided to use canned ones.
The taste of freshly cooked beans with onions turned out amazing - exactly like fried mushrooms, you can’t tell the difference. Although later, in the pies, the taste became different - more starchy.
But as a filling, this mixture showed its bad side. Since it turned out to be quite liquid, the pies did not want to roll out into anything; they burst at the slightest pressure. It wasn’t until the fifth pie that I learned to cope with this - I stopped rolling them out with a rolling pin, and started stretching them with my fingers - first along the edges, and then in the middle.
The pies taste quite good. But next time I will still make regular plump pies with this filling - fried in oil or baked.
I absolutely did not like frying in a dry frying pan.

COMPOUND

50~70g butter for greasing

OPARA

2 cups (500ml) water, 2 teaspoons sugar, 50g flour, 7g Dr. Otker dry yeast or 5.5g SAF dry yeast or 25g live yeast

DOUGH

~450g flour, 50g vegetable oil, 1~1.5 tsp salt

FILLING

70~80g vegetable oil, 400g onion, 2 cans (400g each) beans, salt, pepper, if possible - utskho-suneli, ground coriander, thyme

Opara
Dissolve sugar and yeast in warm water and stir in flour.




Leave until the mass increases 2~3 times.




Dough
Place flour and salt in a large bowl.
Pour in the dough and vegetable oil.
Knead into a soft, elastic dough, adding more flour if necessary.




Filling
Place the beans in a colander, rinse with water and leave to drain while the onions are cooked.




Cut the onion into large pieces.
Pour vegetable oil into a frying pan or cast iron, add onions, close with a tight lid and set the heat to slightly below medium.




Simmer the onion, stirring occasionally, until it turns a translucent red color, remaining juicy and soft.
Slow simmering should take at least 30 minutes.




Drain the oil from the onion into a bowl.
Grind the onions and beans into the same bowl through a meat grinder.




Add spices.
Stir until the mass becomes homogeneous.
Taste and add salt to taste.




Product molding
Divide the dough into 10~11 parts of the same weight.
Roll them into balls.




Roll the balls into flat cakes.




Spread the filling onto the flatbreads.




Gather the edges of the flatbread to form a dough bag with the filling inside.




Try to secure the seam as best as possible.




Frying products
Place the pan on medium heat. Do not pour oil.
Flatten the round pie a little with your fingers.




Then roll it out with a rolling pin or stretch it with your hands.
The thinner and larger the pie, the better.




Place the patty in the pan and fry until the bottom side is browned.
Turn over and cook the other side under the lid.
While one pie is frying, prepare - stretch or roll out - the next one.
Place the finished pies in a stack on a dish, generously coated with butter.

To prepare you will need (based on 6 servings):

  • 3 glasses flour;
  • 2 tbsp. yeast;
  • 1 glass milk;
  • 2 pcs. chicken egg;
  • 3 tbsp. granulated sugar;
  • 50 grams butter;
  • ½ bunch green dill or cilantro;
  • 1 egg yolk for greasing pies;
  • 3 glasses beans(brown, dry, if canned, then 5 cans);
  • salt taste;
  • pepper taste;
  • olive or vegetable oil taste.

Making bean paste:

  1. Before cooking beans, soak them in water for 2 days.
  2. Cook the beans for about 30 minutes, testing them for doneness.
  3. Dry the beans.
  4. Grind the beans in a blender until smooth.
  5. Add salt and pepper to taste.
  6. Chop the greens and mix with bean paste.
  7. Add vegetable or olive oil to taste.

Preparation of the dough:

  1. Let's prepare the dough. Warm the milk slightly (if it is cold or hot, the dough will not rise).
  2. Mix milk, eggs, sugar, yeast and salt in a bowl, stir until the sugar dissolves completely.
  3. Pour 1.5 cups of flour into the future dough.
  4. Mix, cover with several towels, and leave in a warm place for 2 hours.
  5. After 2 hours, add the remaining flour and softened butter, knead the dough. It should become elastic. If necessary, add more flour.
  6. Cover the dough with a towel again and leave for 2 hours.

Preparing bean pies:

  1. Preheat the oven to 180°C.
  2. Cover a baking sheet with parchment and grease with oil.
  3. Divide the dough into small balls.
  4. Roll out the dough into a neat circle.
  5. Place the filling in the middle of the dough and pinch the edges to form a pie.
  6. Place all the finished pies on a baking sheet, seam side down.
  7. Brush the pies with egg yolk.
  8. Bake the pies for 20 minutes.

- salt – 1 teaspoon

For filling:
- dry beans – 3 cups
- honey – ½ cup
- sugar – ½ cup
- butter – 100 g

Cooking Ukrainian pies with beans

1. To make the filling, soak the beans in cold water for 6-8 hours, or overnight.

2. Drain the water, add cold water again two fingers above the beans, bring to a boil, reduce the heat to low and cook without salt until soft. The beans should be slightly boiled. During the cooking process, which will last about an hour depending on the type of beans, add cold water as they boil.

3. Drain the broth, if any, add oil and puree the beans. Then add sugar, honey and stir until smooth. Let the filling cool at room temperature.

4. For the dough, dissolve the yeast in slightly warm milk with the addition of 2 tbsp. spoons of sugar and let the mixture stand for 15 minutes so that the yeast is completely dissolved.

5. Melt the butter in a water bath, adding a teaspoon of salt. If it gets hot, cool until warm.

6. Beat eggs at room temperature with the rest of the sugar until white foam.

7. Combine the yeast, oil and egg mixtures and mix well.

8. Add sifted flour in small portions and knead the dough. It is better to have too little flour than too much flour. The dough should be soft, elastic and not stick to your hands.

9. Place the lump of dough in a saucepan or deep bowl, cover with a towel and leave in a warm place to rise. The dough should double in size.

10. Punch down the risen dough and knead a little more, adding vegetable oil (it is necessary so that the pies do not go stale for a long time).

11. Place the dough back in a warm place and let it rise again.

12. Punch down the dough again, knead a little, form into rolls, and cut into equal pieces.

13. Roll out the pieces of dough into flat cakes, put sweet bean filling on them and make pies.

14 .Place the pies, seam side down, on a baking sheet lined with baking paper and place in a warm place to proof for 15 minutes.

15. Brush the tops of the pies with lightly beaten egg and place in an oven preheated to 180 degrees.

16 .Bake the pies for about 20 minutes until golden brown.

17 .Remove the pies from the oven, with a piece of butter pinned on a fork, brush the top of the pies while still hot so that they become soft and airy.

18. Cool the Ukrainian bean pies on a wire rack, covered with a towel.

  • Oil - twenty milliliters.
  • Milk - two hundred milliliters.
  • Fresh yeast - twenty grams.
  • Flour - four hundred grams.
  • Salt - a teaspoon.
  • Eggs - two pieces.
  • Sugar - a teaspoon.
  • Canned beans - five hundred grams.
  • Onion - one head.
  • Salt - to taste.
  • Pepper - two pinch.
  • Garlic - two cloves.

Making pies

Initially, you need to prepare the yeast dough for bean pies. Why do we prepare the dough? Boil and cool the milk slightly. Pour it into a bowl, add yeast, three tablespoons of flour, a spoonful of sugar. Stir and leave for fifteen minutes. Then add flour to the bowl with the dough, beat in the egg, add oil and salt. Knead the dough well until it sticks to your hands. Cover the bowl with soft dough with cling film and leave in a warm place for sixty minutes so that it can increase in volume.

This time is more than enough to prepare the filling for the bean pies. Open the canned beans and place them in a colander. Leave in it until all excess liquid has drained. Then place the beans in the blender bowl. Fry the peeled and finely chopped onion in a frying pan until light brown. Place the onion from the frying pan onto the beans. Add crushed garlic cloves, ground pepper and a little salt to them.

Forming pies

Grind all filling ingredients until smooth using a blender. Now for the bean pies recipe you need to go back to the dough. The risen dough must be kneaded again and divided into ten equal parts. Form them into balls and cover again with film. Set them aside for another fifteen minutes. All preparations are completed, and you can begin to form pies directly from the dough and filling.

Dust the surface with flour and roll out each ball into a small oblong cake. Place the bean filling in the center and carefully pinch the edges of the dough. Form the remaining oval pies in the same way. Next, place baking parchment on the bottom of the baking sheet and grease it with oil. Place the prepared pies on a baking sheet, leaving a small distance between them. Let the pies rest for another twenty minutes. Then beat one egg with a whisk and brush all the pies well.

Place the pan in the oven. The pies will be ready in twenty minutes at an oven temperature of one hundred and eighty degrees. Transfer the browned fluffy bean pies to a plate and serve slightly cooled. Soft pastries filled with beans are tasty and nutritious. It can easily replace a full dinner.

Lush pies with beans in a frying pan

For the test:

  • Kefir - one and a half glasses.
  • Flour - four glasses.
  • Oil - three tablespoons.
  • Soda - a teaspoon.
  • Sugar - a teaspoon.
  • Eggs - three pieces.
  • Salt - a teaspoon.

For filling:

  • Canned red beans - six hundred grams.
  • Purple onion - three heads.
  • Tomato paste - two tablespoons.
  • Ground red pepper - three pinches.

Cooking according to recipe

First you need to prepare a soft and elastic dough for bean pies. Pour kefir and soda into a bowl in which it will be convenient to knead the dough. Stir and add sugar, vegetable oil, salt and eggs one by one. Beat with a blender, then add sifted flour in small portions and knead into a soft dough. Cover with a clean kitchen towel and let the prepared dough rest.

The next step is to prepare the filling for the bean dumplings. Open the cans of canned beans and drain them in a colander. Peel and wash the purple onions and carrots. Then chop them, chop the onion, and grate the carrots. Pour some oil into a saucepan and place it on the stove. After heating the oil, transfer the onions and carrots to a saucepan for frying.

Fry the vegetables, stirring for about ten minutes. Add tomato paste to them. Stir and place canned beans on top. Immediately sprinkle with red pepper, salt and stir. Simmer covered for another five to seven minutes. If desired, you can also add other spices to the filling at your discretion. Turn off the heat, transfer and grind the contents of the saucepan in a blender bowl. The filling for the pies is ready. But it definitely needs to cool down.

Next, you need to form pies from the prepared kefir dough and bean filling. Cut a small piece of the dough, shape it into balls and roll it into a round cake with a rolling pin. Place the bean filling in the middle of the rolled out circle. Join the edges well, giving the pie a round shape. Place the finished pie on a cutting board and press lightly with your hand. Make all the other pies in the same way. Place a frying pan with a thick bottom on the fire, pour oil into it and, after heating, fry all the cooked pies on both sides until a beautiful golden color. Place the fried bean pies on a large plate and serve with sour cream.

Preparing the beans

You bought beans - great! But you can’t start cooking it right away.

Firstly, you need to sort it out, since there is a very high probability that among the beans there will also be all sorts of pebbles and other debris. Those who are lazy then run the risk of ruining their mood and also being left without a tooth.

The next stage is soaking. It is advisable to add water in the evening and leave it in the refrigerator until the morning. During this time, the beans will swell and become a little softer. Aim for 6-8 hours.

If you skip this step, the beans will take a very long time to cook, and after eating them you may experience gas and other stomach problems. The fact is that during soaking, chemical reactions occur in the beans, during which harmful compounds (antinutrients) are destroyed.

Are the beans steeped? Great, drain the old water, pour in fresh water, put it on the stove and bring to a boil. Cooking time is 40-60 minutes, although it can be longer. Just take 1-3 beans to try from time to time. If they are soft, then the beans are ready and can be removed.

Add salt only at the very end, 10 minutes before the end of cooking. If you add it at the beginning, then, as practice shows, the cooking time increases greatly. Some people add soda, thinking that it will help it cook faster, but I personally haven’t noticed anything like that. Maybe I didn't add enough.

That's it, drain the water and let the beans cool. Now you can stew it, mash it and add it anywhere.

This is a simple, basic recipe on which you can create your own culinary masterpieces. The main thing is to understand the process itself, the essence!

These pies are prepared using yeast dough and can be either fried or baked in the oven.

Ingredients:

  • Ready-made yeast dough – 1 kg.
  • Boiled beans – 400-500 g.
  • Oil for frying;
  • Carrots – 2 medium size;
  • Onions - 2 medium heads;
  • Tomato paste (ketchup) – 3-6 tbsp. spoon;
  • Ground black pepper - a few pinches;
  • Salt – 2 pinches;
  • Flour for dusting the table;

Let's start cooking

  1. First, peel and wash the onions and carrots. Grate the carrots on a coarse grater and fry in oil over medium heat. After 10 minutes, add the onion cut into rings, tomato paste, salt, mix and fry until fully cooked - until they become soft. The main thing is that nothing burns.
  2. In the meantime, use a masher to mash the boiled beans until pureed. You can use a blender for this. Add pepper and a couple of tablespoons of vegetable oil.
  3. Now put the fried vegetables in the beans (along with the oil) and mix well. The filling is ready.
  4. Sprinkle the table with flour for convenience. Knead the dough and divide into several flagella. Divide each “sausage” into small pieces, which should then be rolled into flat cakes with a rolling pin.
  5. Place 1-2 tablespoons of filling in the center of each cake, then seal it in any convenient way.
  6. All that's left is heat treatment.
  • If you want baked pies, place them seam side down on a greased baking sheet and place in an oven preheated to 180 degrees for 30 minutes.
  • If you want fried pies, then heat the oil in a frying pan, place the pies there and fry on both sides until golden (3-5 minutes on each side).

This is such a simple recipe! The results are delicious and very filling pies that will serve as an excellent addition to soup or a snack during the day.
