Prepare all ingredients in advance. The egg and kefir can be taken out of the refrigerator so that they “reach” room temperature, but this is not important.

Peel the most delicious boiled sausage from the casing and cut into cubes. You can even grate the sausage on a coarse grater.

Pour kefir into a large bowl and crack a large chicken egg into it. If the egg is small, then you can use a couple of pieces.

Now you can add wheat flour, previously sifted through a sieve.

Place the sausage cut into small pieces into a bowl. Sometimes you can use ham, but the sausage should not be dry.

Add sugar, salt, spices, soda. Pancakes shouldn’t be sweet, but they shouldn’t be bland either.

Mix everything well and let the dough stand for about 20 minutes, then you can put the bowl in the refrigerator.

Grease a frying pan with vegetable oil and place it over low heat. After a minute, you can begin to spoon out portions of the dough with a small spoon. Fry for 2-3 minutes on one side.

Carefully turn the pancakes over to the other side and fry for another 2-3 minutes.

Remove the pancakes from the pan and serve immediately while hot.

With kefir, the dough always turns out just perfect, and the pancakes come out fluffy and even slightly crispy. We will fry the pancakes in regular vegetable, refined oil, which does not foam and does not have a pronounced taste. Homemade scented oil can be very foamy. So I don't recommend using it today. - 200 grams of kefir,
- 1.5 cups flour,
- 0.5 tsp. l. soda,
- 0.5 tsp. l. salt,
- a couple of pinches of granulated sugar,
- 100 grams of sausage,
- 60 grams of hard cheese,
- vegetable oil for frying.

Pour soda into kefir, stir and let stand until the soda is activated and begins to turn into bubbles.




We cut into cubes the filling we need: sausage and cheese. I used boiled sausage. It works well for this recipe. The cheese should be hard, it cuts well with a knife and melts well.




Add the filling to the kefir base.






Add flour to knead our pancake dough.




Mix the dough and achieve a thick consistency, but so that the pancakes can be spooned into the frying pan. After the dough has stood for about 5 minutes, comes to its senses, and infused, we begin to fry the pancakes.




Pour oil into a frying pan, heat over medium heat, spoon in the pancakes and start frying.






Turn the pancakes over to the other side when one side, the bottom, is cooked through.

Salt the egg and beat lightly with a whisk. Mix kefir with soda.
My kefir “didn’t fizz” when adding soda, so I used a trick - poured in 1/2 tsp. vinegar. The result is in the photo. I barely had time to click the camera shutter before I ran away!


Pour it little by little into the egg mixture, stirring thoroughly with a whisk. Leave the mixture for 5 minutes.


Add sifted flour into the kefir mixture in small portions, mixing thoroughly. The finished dough should have a consistency similar to thick sour cream.


Peel the sausage and cut into cubes. If desired, you can add finely chopped herbs to the dough for pancakes with sausage.


Place the chopped sausage into the dough and mix everything carefully.


Heat vegetable oil in a frying pan. Place small dough balls onto the pan with a spoon. When the top has set, you can lay out the faces, as I did (from olives, capers, sprigs of herbs).


Turn the pancakes over and fry them until golden brown (on both sides).


Before serving, finished pancakes can be topped with sour cream.

Fry the pancakes until golden brown on both sides over medium heat.

Make the pancake batter thick so that it does not drip off the spoon.
