How to quickly clean a squid

Every culinary specialist, even a beginner, knows that before starting to cook this mollusk, it must be cleaned. This procedure is often difficult. But in fact, there is nothing difficult in it.

In order to quickly and easily free the squid from the film, let's open one little secret.

In our stores, squid is sold unpeeled and frozen. Therefore, the first thing to do is to defrost seafood at room temperature.

Next, put a pot of water on the fire and bring it to a boil. At this time, prepare a bowl of water and ice. As soon as the water boils, we lower the squid carcasses into it. After a few seconds, we take them out with culinary tongs and put them in ice water.

The film will burst immediately and will be easy to remove. It remains only to remove the ridge and the remains of the viscera.

Now you can start cooking squid in breadcrumbs.

Required Ingredients

In order to cook such an interesting and for many a new dish like squid in breadcrumbs, we need the following products:

  • carcasses of squids, without head and tentacles, four or five pieces;
  • five tablespoons of wheat;
  • four chicken eggs;
  • sunflower oil for frying;
  • one tablespoon of sour cream or mayonnaise;
  • salt and seasonings to taste;
  • breadcrumbs.

You can buy them in the store or make them at home. The process is simple: the leftover bread must be dried in the oven, and then crushed into crumbs.

How to cook batter

Before proceeding to the very recipe for squid in breadcrumbs, it is worth preparing the batter. It is extremely necessary for this dish, since only with its help it is possible to cover the surface of this seafood with a layer of crackers.

To do this, in a separate bowl, we use a whisk to beat chicken eggs with salt. Do this until a light foam forms. Then add a spoonful of mayonnaise or sour cream. Of course, you can do without them, but this way the batter turns out to be more tender. Beat again and gradually add flour. The batter should be the consistency of pancake batter. You can start cooking the squid themselves in breadcrumbs.

Recipe Description

Carcasses must be cleaned from the film and chitinous plate in any convenient way. Then boil the squid in boiling water with the addition of spices and seasonings. Do not do this for more than two minutes: they will still be fried.

After the prepared carcasses have cooled completely, we cut them into rings five to six millimeters thick. Now we roll them in flour and, in turn, dip them first into the batter, and then into the breadcrumbs (they should completely, on both sides, sprinkle the squid ring).

Immediately drop into boiling vegetable oil. This should be done in a deep fryer or in a deep frying pan. Squid in breadcrumbs should be fried until golden and crispy. We spread the finished rings on paper towels so that they absorb excess sunflower oil.

The dish is served on the table, sprinkled with finely chopped herbs. You can also serve any sauce with it. For example, ketchup or, alternatively, mix mayonnaise with garlic, passed through a press and finely chopped fresh dill.

  1. Defrost the squid completely.
  2. Pour boiling water over, drain the water and immediately pour a new portion of hot water. Hold for no longer than two minutes, after which the carcasses are cleaned of the remnants of the upper film and remove the inner plate.

  3. Cut the prepared seafood into rings as thick as the little finger.

  4. Break the eggs into a deep bowl, beat with a whisk. This will be the season.

  5. Pour flour and crackers on separate plates (salt is added to flour and mixed). Heat oil well for frying. Roll each squid ring in flour.

  6. Then lower into the ice.

  7. The best way to make breadcrumbs. By the way, I do not buy breadcrumbs, but cook them myself. Here's a simple one.

  8. Fry in a pan, about 4-6 minutes, that is, it will take 2-3 minutes for one side of the ringlet.
  9. After frying, put the rings on a paper towel to “remove” excess oil.
  10. To serve the dish, I highly recommend preparing some kind of sauce. The simplest is a mixture of sour cream, mayonnaise, dill and grated garlic cloves. You can also cut lime into thin slices for squid or add a few drops of citrus to mayonnaise.
  11. For a large company, you can fry squid rings according to a different recipe. The composition for batter is as follows:
    • 500 g flour
    • 2 eggs
    • 500 ml light light beer
    • 1 teaspoon of salt.

    The consistency of the batter should resemble sour cream, and its quantity is enough for a whole kilogram of rings.

How to cook squid simple and fast? Fry it in rings in breadcrumbs. It will be a great hot appetizer or even a light dinner. Serve with lettuce leaves or any vegetable salad.

If you bought frozen squid, defrost it “without temperature shock”, that is, transfer it from the freezer to the refrigerator overnight, the next day, if necessary, let it stand for another hour at room temperature - and you can cook. We will need peeled squid rings (you can buy frozen rings right away - this is the easiest way for this dish). If you bought a carcass squid, then after defrosting, pour boiling water over the carcasses for a couple of minutes (no more!) - the film will curl up and “move away” from the meat, after which you can easily remove it under cold running water. After that, remove the chord (something that looks like a spine) and cut the squid into rings about 1 centimeter wide. Next, let's start cooking.

Need to:

  • Squid rings - 0.5 kilograms
  • Lemon - a quarter of 1 lemon (more precisely, we will need lemon juice from a quarter of a lemon)
  • Soy sauce - 1 tablespoon (can be replaced with 0.5 teaspoon of table salt)
  • Seasoning for seafood (ready-made spices) - 0.5-1 teaspoon
  • Chicken eggs - 3 pieces
  • Wheat flour - 3 heaped tablespoons
  • Breadcrumbs (white, from breadcrumbs of the highest grade) - 4 tablespoons "with a slide"
  • Vegetable oil - approximately 0.5 to 1 cup (depending on the diameter of your pan)

Cooking:

Rinse squid rings (thawed and peeled) with cold running water, put in a colander and let the water drain.

Transfer the squid rings into a bowl or ladle, pour boiling water over it (literally for 5-7 seconds, you only have time to mix the rings slightly) and immediately drain the boiling water, throwing the rings into a colander. This procedure is necessary so that the squid rings begin to “hold their shape” and not flatten.

Next, we need to slightly “pickle” the rings. Squeeze the juice of a quarter of a lemon on them, pour soy sauce (or just salt), sprinkle with spices (seafood seasoning), mix.

Leave the squid rings marinated in this way to stand for 20-30 minutes.

Take three small bowls or just deep plates. In one of them, beat the eggs, mixing the whites and yolks, just with a fork, it is not necessary to beat strongly. Put the flour in another bowl and the breadcrumbs in the third.

We put it all closer to the stove. Pour vegetable oil into a deep frying pan (we already wrote about the required amount in the recipe for squid rings in batter, you can see this) and let the oil warm up very much.

Roll the squid rings (one at a time) first in flour, then dip in beaten eggs and roll in breadcrumbs - and put in a frying pan ( check out our video recipe!). We do this as quickly as possible. The rings are not laid close, but at some distance from each other. Fry the rings on a medium-strong level of heating, first on one side until golden brown for 1.5-2 minutes, no more!

Then turn over the squid rings and fry them on the other side, too, until golden brown and about the same amount of time (maybe a little less). Watch the time! If the squid is overcooked, it will be “rubber”, hard and tasteless.
