T cod is a fish that should be on the menu of every family. Some housewives, sighing, will say: “My family doesn’t like fish, so I don’t cook it...” Perhaps it’s worth changing the recipe.   • vegetable oil - 6 tbsp.
  • dill

Step-by-step process for cooking at home

  1. Prepare the ingredients.
  2. Start by preparing the marinade. Wash and peel the onions and carrots. Cut the onion into medium-sized pieces, chop the carrots on a coarse grater.
  3. Heat a frying pan, pour in half the amount of sunflower oil. Fry carrots and onions in oil for about 2-3 minutes, stirring. During this time, the onions will turn white and the carrots will turn bright orange.
  4. Add peppercorns (5-6 pieces) to the onions and carrots. They can also be ground and then added to the marinade. Add tomato paste, vinegar, salt and stir into the pan.
  5. Wash and finely chop the dill.
  6. Add dill to the pan with the marinade and add water. Stir evenly with a spatula. Now let the marinade simmer under the lid until the water boils. During this time, the marinade will prepare: the onions and carrots will become soft, and salt, vinegar and pepper will saturate them. Try what happened. Add salt or vinegar to taste if it feels like it's missing. It is a successfully prepared marinade that will ensure 70% of the success of the dish. In the future, its taste will permeate the fish.
  7. Now let's move on to the fish. You need to do everything as quickly as possible so that the marinade does not have time to cool. If you bought whole fish, gut it and cut it into pieces. Dredge the fish pieces in salted flour. Then place it in a heated oil (with the remaining vegetable oil) frying pan. Fry the fish on both sides for 2-3 minutes, and then remove.
  8. Select all the bones from the fish and remove them. Cut the remaining meat into small pieces.
  9. Divide the finished marinade into 2 parts. Cover the bottom of the pan with one, and move the other towards the edge in a mound.
  10. Now spread a heap of the remaining marinade on top of the cod pieces. Close the lid and leave to cook for about 14-18 minutes on the lowest heat. Then turn off the gas and do not open the lid. Let the cod under the marinade cook in a warm place and be better saturated with the taste and smell of the marinade.

Preparation does not take much time and all you need is:

  • cod (whole carcass or fillet) – 0.7 kg;
  • flour – 1/3 cup;
  • carrots – 150 g;
  • tomatoes – 200 g;
  • onion – 100 g;
  • salt – 10 g;
  • sunflower oil – 30 g;
  • boiled water – ½ cup.

Cooking cod will take no more than one hour. The nutritional value of one hundred grams of the dish is 85 kcal.

Having selected a whole fish, you should remove all the fins, entrails, bones from the ribs, and the spine from the carcass, leaving only the fillet, which should be slightly salted. Peel all the vegetables and cut them at your discretion or - onion into half rings, tomatoes into cubes, coarsely grate carrots.

The cod should be fried in a small amount of oil until it acquires a beautiful golden color - this will take about ten minutes. In the remaining heated oil, fry the onion, add the carrots after a couple of minutes, and after the same period of time, add the tomatoes, add water, add salt, and stir. 1. Cut the onion into medium or slightly smaller pieces, grate the carrots with a coarse grater.

2. In a saucepan or thick-walled frying pan, heat a couple of tablespoons of vegetable fat and add chopped vegetables. Stirring systematically, cook for three minutes on low heat until they soften.

3. Season to your taste, add a little salt and tomato. Pour in vinegar, water and, increasing the heat, bring to a boil. Reduce heat again and cook the sauce for another five minutes.

4. Carefully scrape the skin of pre-thawed cod steaks with a knife. Dip the fish in flour and fry in oil on all sides until cooked. Cool, separate the meat from the bones and skin, and break it into small pieces with a fork.

5. Place half of the still hot marinade on the bottom of the saucepan. Place pieces of fried cod on it and cover with the remaining vegetables.

6. Cover the saucepan with a lid and simmer the dish at low heat for a quarter of an hour.

Marinated cod: classic recipe with fresh tomatoes in the oven

Ingredients:

Half a kilo of cod (fillet);

Five small carrots;

Four large onions;

Five fresh medium-sized tomatoes;

Two tablespoons of quality flour;

Large bay leaf;

Three allspice peas.

Cooking method:

1. Rinse the thawed cod fillet well and pat dry several times with a towel or napkin.

2. Cut the fillet into pieces, three centimeters wide, add a little salt and fry in vegetable oil, achieving a pleasant golden hue.

3. Take any fireproof dish and place pieces of fried fish along its bottom. You can take a wide frying pan or saucepan without plastic handles.

Ingredients:

Cod – one and a half kilograms;

Large onion;

Two sweet bell peppers;

Carrots – 2 pcs.;

White baking flour - 1 tbsp. l.;

200 gr. unsalted tomato paste;

Dry herbs and spices - to taste.

Cooking method:

1. Fry finely chopped carrots and onion half rings for 3 minutes over low heat in refined sunflower oil. During this time, the vegetables will soften slightly and give up their juice to the marinade.

2. Add tomato and chopped bell pepper. Stir and continue to simmer for a quarter of an hour.

3. At the end of cooking, add salt, spices and dry herbs to your taste. You can sweeten it a little, but it's not for everyone.

4. Scrape the skin of previously defrosted fish with a knife to remove any remaining scales. Gut the remaining innards and rinse well, especially the belly. Cut off the fins and remove the tails with a knife. Dry and cut into pieces of desired size.

Marinated cod: a classic recipe for a slow cooker

Ingredients:

A kilogram of cod fillet;

Five large carrots;

Four onions;

Half a glass of white flour;

One glass of drinking water;

Half a liter of pure, without spices, tomato;

Four umbrellas of carnations;

Two small bay leaves;

A spoon of vinegar, preferably wine;

Spoon of granulated sugar;

To taste – allspice peas.

Cooking method:

1. Rinse the pre-frozen fillet and pat dry with a towel, cut into small rectangular pieces.

2. On the multicooker panel, set the “Baking” function. Pour two tablespoons of clean oil into the bowl and fry the pieces of fish in it. Be sure to bread the cod in flour before frying.

3. Place the fried fish in a separate bowl, and pour two more tablespoons of oil into a clean bowl and dip the onion, chopped into half rings, into it. Fry without changing the mode until it becomes transparent.

6. Pour water over the vegetables and, closing the multicooker lid, bring to a boil.

7. After this, change the mode to “Stew” and continue cooking.

8. After 10 minutes, open the lid, pour in vinegar, salt, stir and taste. If necessary, add the missing ingredients and add the fried fish to the marinade. Carefully, trying not to break the pieces, stir and leave to simmer for one hour.

Cod marinated in the oven with wine

Ingredients:

A kilogram, or a little less, of large cod;

2–3 onions;

Small sized carrots;

A large spoon of thick, not spicy tomato;

Half a lemon;

0.3 cups “Cahors”;

5 peppercorns;

Lavrushka.

Cooking method:

1. We clean the fish carcasses from scales, cut off the fins, slightly capturing the skin, gut them and cut them into medium-sized pieces. We cut along the back to the ridge and add salt.

2. Pour a pinch of coarse salt onto the bottom of an ordinary frying pan, without special coatings, heat it up and add oil. We wipe the cod pieces from moisture, bread them with flour, making sure there are no lumps, and fry, turning on all sides.

3. Fry coarsely grated carrots and onions, chopped and then chopped with a knife. We continue the process until the vegetables noticeably soften. Pour wine into the pan and add lemon rings. Next, undiluted tomato and seasonings are added there.

4. We bring the dish to condition in a non-metallic container - porcelain, glass, etc. First, we place the fish loosely, and place the marinade on top of it.

Ingredients:

Large cod fillet – 1 kg;

300 gr. carrots;

2 tbsp sifted flour;

200 gr. salad onions;

0.5 cups of ketchup without strong aromatic additives;

50 grams of sugar;

Light seasonings, optional.

Cooking method:

1. Boil portions of pre-cut fish, almost until fully cooked. We do this by lowering the cod into boiling water, where the spices and onions have already boiled for a couple of minutes. Remove from the heat and quickly and carefully catch the pieces from the broth.

2. Fry finely chopped onions and medium-length carrot sticks quickly in boiling oil. Do not let the vegetables darken, you just need to soften them.

3. Add ketchup and sugar, simmer, uncovered and slightly lowering the temperature, for 8–10 minutes, until the consistency changes noticeably.

4. In 100 ml of the previously obtained fish broth, dilute the flour and pour it into the vegetables. Add salt and pepper, taking a sample. We achieve the required viscosity by adding the same fish broth; the time for heating the marinade is not limited, but you should not overexpose it.

5. Divide the vegetable marinade into three parts, and the fish in half; place the dish in a bowl of the appropriate size, placing the marinade on the bottom and top. Between these layers there will be two layers of fish, also layered with marinade.

Recipe for marinated cod in the oven, baked in foil

Ingredients:

Kilogram of cod, gutted, any size

Onions - up to half a kilogram;

0.5 heads of garlic;

“Rkatsiteli” – 1 glass, plus a little in reserve;

Large and juicy carrots – 1 pc.;

A tablespoon of good honey;

Juice of 0.3 medium, thin-skinned lemon;

Large, fleshy tomato;

Bay leaf - several leaves;

Ground aromatic pepper.

Cooking method:

1. Mix salt with spices and rub them on the gutted and cleaned fish. We first cut the carcass into pieces weighing up to 100 grams. Place tightly in a bowl, pour in wine, shake slightly so that it penetrates between the pieces. After waiting at least half an hour, drain the liquid. We blot the fish to remove moisture and any remaining spices, place it on a roasting pan, wrap it in foil, and bake.

2. Cut the onion into large, clear half rings and pour boiling water over it for a minute. In this way, remove the bitterness, rinse the onion in a large volume of cold water.

3. Add honey, a couple of tablespoons of good oil, bay leaves to the onion in a heated frying pan and sprinkle with grated carrots. Simmer everything together for three minutes.

4. Peel the tomato - scald it with boiling water and remove it with a knife blade. Grate and mix into vegetables, salt and add lemon juice. Keep the heat on the lowest setting for up to five minutes.

5. If the frying pan is thick-walled and deep enough, put some of the marinade temporarily in another bowl. Place the pieces of baked fish and the marinade in layers; the first and last must be the vegetable layer. It remains to warm up for about 10 minutes so that the marinade is slightly absorbed into the fish.

Cod under marinade - cooking tricks and useful tips

Do not fry the carrots and onions too much, otherwise the marinade will turn out dry.

Add vinegar, lemon juice or lemon juice in small portions, stirring and taking a sample each time. If the recipe allows it, it is best to mix the vinegar with other liquids so that it has a minimum concentration.
