Ingredients

  • sour cream - 100 g;
  • raisins (seedless) - 100 g;
  • vanilla sugar - 10 g;
  • sugar (sand or powder) - 100 g;
  • cottage cheese - 400 g.

How to make homemade curd mass with raisins

First of all, prepare the raisins. Buy a product of any variety only with good quality and preferably without seeds inside. Pre-rinse it in running water several times. Boil water in a kettle and pour in the raisins for 10 minutes. If the dried fruit is quite dense, during this time it will soften sufficiently. If the raisins are very soft, keep them in boiling water for about five minutes.

The sour cream in this recipe is 20% fat, but you can use another one to suit your taste. Place it in a deep bowl. Add vanilla and regular sugar. Arm yourself with a spoon and mix thoroughly until the sugar crystals dissolve. It will take about five minutes. The process will go faster if you use powder instead of sand.

Add sour cream sauce to cottage cheese. If possible, use country cottage cheese. It is much healthier and tastier, especially for our children. You can cook it yourself.

The fattier the product, the tastier the curd mass and, of course, the higher the calorie content. Mix all ingredients until a homogeneous consistency is obtained. It's a bit difficult to do this with a spoon.

You will need a kitchen immersion blender. Punch until the curd mass has a consistency similar to cream. If you don’t have a blender, rub the cottage cheese through a fine strainer before using it, maybe several times.

Place the swollen raisins in a colander. Let the water drain. Take a few paper towels and dry thoroughly on all sides. The berries should not be wet.

Add the prepared dried fruits to the curd mass. Stir until the raisins are evenly distributed.

The curd mass with cottage cheese raisins is ready. Now you see how easy it is to prepare an incredibly tasty dessert that not only children, but also adults will enjoy eating. The curd mass according to this recipe is thin. If you like thicker desserts, use either thick country sour cream or reduce the amount of sour cream by 20%.

Serve in individual bowls, garnished with raisins and fresh thyme or mint leaves. Enjoy your meal!

  • You can add any dried fruits or berries to this dessert if you wish, the cooking process will not change;
  • If you don't have sour cream at home, you can use heavy cream in the recipe.

Curd mass is very easy to prepare at home. If you want a more complex dessert, add gelatin diluted in water to the sweet curd mixture in addition to raisins (4 parts water to 1 part gelatin). Pre-heat it until it boils and strain through a sieve or cheesecloth. Place in silicone molds and let harden in the refrigerator. In just an hour you will have a delicious curd-jelly delicacy.

Cottage cheese is healthy, but not everyone likes it. It is especially difficult to explain to children that they need to eat cottage cheese, whereas a young body needs this product. But the children happily gobble up the sweet curd mass, which is used as an independent dessert or used for making cheesecakes, pies and other baked goods. This delicacy is not in short supply: it is available on the shelves of any grocery store. But purchasing a quality product at an affordable price is not easy: the cheaper the cottage cheese delicacy, the less cottage cheese it contains, which is replaced with vegetable raw materials. Housewives who want to pamper their loved ones with sweet products made from cottage cheese often have no choice but to make curd mass at home. The decision to prepare the product yourself allows you to choose a recipe to suit your taste, because this delicacy can be prepared with the addition of sour cream, butter, eggs, dried fruits, fresh or frozen berries. You can even find ways to make unsweetened cottage cheese spread to use as a spread on sandwiches.

Cooking features

It is not difficult to make curd mass: even if you choose the most complex recipe, any housewife can cope with this task. To get the best results, she will need to know a few things.

  • The quality of the products used to prepare the curd mass is critical. If you purchase a curd product containing vegetable fats, the delicacy you will get is no healthier than store-bought. The most delicious and healthy curd mass is obtained from home-made cottage cheese. Butter, if it is included in the dessert, cannot be replaced with spread. The sour cream must be fresh; the percentage of its fat content is not decisive.
  • To prepare the cheese mass, you can use cottage cheese of any fat content, but usually preference is given to a product with a fat content of 9%.
  • To obtain a mass that has a pleasant consistency, the cottage cheese must be passed through a sieve or meat grinder. You can stir the food with a spatula or use kitchen appliances: a blender, a mixer.
  • If the curd mass contains dried fruits, they should be steamed before adding to the curd mass, that is, pour hot water for 10–15 minutes, then squeeze out. Large dried fruits (dried apricots, prunes) are chopped before adding to the curd mass; raisins, dried cranberries and other small berries are left whole. You need to mix them into the cottage cheese last, without resorting to the help of kitchen appliances.
  • When preparing curd mass with fresh or frozen berries, you first need to sprinkle them with sugar and drain off the released juice. It is useful for making fruit juice or syrup, and it is better to add berries to cottage cheese with a minimum juice content so that the mass does not turn out to be too liquid and unappetizing.

Technologies for preparing curd mass may vary slightly depending on the chosen recipe. By following the instructions that accompany it, you will not make mistakes and get the expected result.

  • Add raisins. Stir the curd mass with a spatula, trying to distribute it evenly.

The finished mass needs to be cooled, after which it can be served. You can make any curd mass with raisins, prepared with sour cream, eggs, and butter. It is only important to take into account that raisins are sweet, and so that the mass does not turn out cloying, you should put a little less sugar in it than when preparing it without raisins.

  • Cut the steamed dried apricots into small pieces, add to the curd mass, stir.

You can place the dessert in bowls and serve. The mixture will be no less tasty if you replace dried apricots with prunes.

  • cottage cheese – 0.4 kg;
  • thick sour cream – 50 ml;
  • fresh dill – 20 g;
  • cumin – 5 g;
