To prepare breast with mushrooms and cranberries, you need to remove the skin from the bird (you can treat it to a stray cat or dog) and cut off the fillet. Boil broth from the carcass in a very small amount of water.

Of course, it is better to cook such a breast with mushrooms with chanterelles, but you can also use oyster mushrooms and even champignons, but the taste will change somewhat.

Ingredients

Chicken breast – 1 piece

Mushrooms (chanterelles, oyster mushrooms, champignons) – 300-400 g

Egg – 1 piece

Flour – 5-6 tablespoons

Beer or milk – 70-100 ml

Vegetable oil

Cheese (optional) – 100 g

Boil the chanterelles in a small amount of water, wash the other mushrooms well. Chop quite finely and fry with vegetable oil until tender. Add salt.

Cut the fillet, make a deep cut on the side and open it like a book on a board, then carefully beat it off, covering it with cling film. You should get two such cakes from two fillets.

From the remaining meat and bones, cook a very small amount of broth and set it aside for now.

Remove the skins from the tomatoes and cut into slices. Cut the pepper into pieces. Place vegetables on top in the same form.

Make broth from the remaining parts of the breast. Place sour cream in half a glass of broth, squeeze out the garlic, add salt and mix thoroughly. Pour the sauce over the breast with mushrooms and vegetables.

Cook in the oven for about half an hour until done. Remove, add grated cheese and return to oven for a couple of minutes.

Recipe No. 4. Breast with mushrooms in a frying pan

To prepare this breast with mushrooms, you don’t need an oven, and you only need a little time.

Ingredients

Chicken breast – 1 large

Champignons – 300 g or package frozen

Sour cream – 200 g

Garlic – 3-4 cloves

Flour – 2 tablespoons

Salt, curry or other spices to taste

Oil for frying

Cut off the meat and boil the bones in a small amount of water.

Cut the chicken into pieces, beat it, then cut it into strips.

Wash the champignons, you can peel them, then cut them into small slices.

Place the chicken in a deep frying pan or saucepan with oil and fry for 7-10 minutes. Add mushrooms to the meat, add salt, cover and cook for about 7 minutes.

To the broth (depending on whether you like gravy, you can take half a glass or a glass; the amount of flour should also be adjusted to taste, or without it at all), add flour dried in a frying pan, and then sour cream and garlic passed through a press. You can add curry. Mix everything well with a whisk and pour the contents into a saucepan. Cook everything together for another 7-10 minutes.

This breast with mushrooms goes very well with fluffy rice as a side dish.

Recipe No. 5. Breast with mushrooms for the “Superpuff” holiday

In order to prepare the breast with mushrooms “Super Puff” you will need portioned molds. It is better to use glass ones, but ceramic and even foil ones are also suitable.

Ingredients

Breast – 1 piece

Whole champignons – 300 g

Boiled smoked ham – 4 slices (you can also take the neck or carbonate, to your taste)

Gouda type cheese – 300 g

Onion – 1 onion

Canned pineapple – 4 pucks

Ready puff pastry – 1 sheet

Salt, pepper, oil for frying.

Cooking method

First we cook everything in a frying pan.

Cut four beautiful pieces from the fillet and beat them through cling film. Fry until half cooked and place in molds.

Wash and peel the mushrooms. Select four small, beautiful mushrooms and place them on a rack in the oven to bake for 15 minutes. Chop the remaining mushrooms and fry with chopped onions in the same frying pan. Place on chicken.

Lightly fry the ham slices on both sides and place on top of the mushrooms.

Place pineapple pucks on top of the ham.

Pour a little pineapple juice or broth (from half a glass) into the frying pan, add mayonnaise, finely grated cheese, curry, mix everything well and pour into molds. Place in the oven for 10 minutes.

Defrost the dough, roll it out lightly, and put it on the molds as lids. Stick previously baked mushrooms in the middle. Poke holes with a fork and place in the oven until browned.

This breast with mushrooms can be a satisfying and tasty meal for the whole family.

Champignons – 400 g

Potatoes - approximately 6-8 tubers

Sour cream – 200 g

Onion – 2 onions

Carrots – 1-2 pieces

Cheese – 150 g

Oil for frying

Rosemary goes very well with this mushroom breast.

Cooking method

Boil potatoes in their skins. Peel, cut into fairly thin rounds and lightly fry them.

Cut the onion into half rings, grate the carrots coarsely. Fry in a frying pan.

Chop the breast fillet, add chopped mushrooms and simmer in a small amount of water for about ten minutes.

Place a layer of potato rounds in a baking dish, then chicken and mushrooms, again potatoes, onions and carrots, potatoes. Mix sour cream with the rest of the broth in which the chicken was stewed, add salt and spices and pour the sauce over the dish. Sprinkle the top with grated cheese and bake in the oven for 10 minutes at 180 degrees.

Oyster mushrooms – 400 g

Chicken breast – 1 piece

Champignons – 300 g

Wheat bun

Soft cheese – 200 g

Garlic – 3-4 cloves

Fresh dill and parsley – a bunch

Tomato paste – 2 tablespoons

Salt, pepper - to taste

Butter – 100 g

Oil for frying

Cooking method

Remove the breast from the bones and divide into two parts. From one half, make minced meat, adding an egg, a loaf of bread soaked in milk, half of the garlic, tomato paste and chopped herbs. Don't forget to add salt.

Chop the other half quite finely and simmer together with the champignons in a small amount of water until tender. Cool. Mix with grated cheese and remaining garlic. Grate the frozen butter and stir into the filling. It’s better to stir in with a spoon, otherwise the oil will quickly become sticky if you use your hands.

Make flat cakes from the minced meat, put the filling on them and mold them into zraz.

Wrap zrazy in breading and fry like regular cutlets.

Recipe No. 9. Breast skewers with mushrooms

Ingredients

Chicken breast

Whole champignons, medium or large size

Place wooden skewers in water in the evening so that they are well soaked.

Cut the breast into small pieces and pour over the marinade. For example, lemon juice with water and a drop of balsamic vinegar or just mayonnaise.

Wash the champignons. Only caps can be used.

Cut the onion into pieces suitable for stringing.

Thread the pieces onto skewers, alternating chicken, mushrooms and onions. Bake in the oven or microwave using the grill mode. If there is no such mode, then first cook the kebabs, covering them from drying out with foil or placing them in a baking sleeve, and then open and bake at high temperature (about 250 degrees).

Chicken breast with mushrooms - subtleties and useful tips

  • Chicken breast is the healthiest chicken meat. However, many people do not like its dry taste. To avoid this, you can lightly stuff the breast with frozen butter and bake it in a special sleeve.
  • It's better to buy a whole breast. Although the fillets should not have been frozen in the store, they could have done so, and then the meat would be dry and tough.
  • To quickly chop garlic, first crush the clove by pressing flat on it with a knife.
  • It is now customary not to clean champignons, but only rinse them with cold water and wipe them with a napkin. But this is not for everybody: the unpeeled skin is a little noticeable in the dish.
  • Wild mushrooms should be placed in cold water, brought to a boil and the water drained. Be sure to boil them.
  • But champignons and oyster mushrooms don’t need to be boiled, but fried right away. If you are 100% sure of the origin of the champignons, then you can put them in the dish completely raw.

Heat vegetable oil in a saucepan. Fry the onion for 2-3 minutes. Then add the chicken breast and fry until the juice stops releasing.

Wash the mushrooms. Thaw frozen mushrooms completely and squeeze out excess water. Do not cut very large.

Add to chicken breast and fry for 3-5 minutes. Season with spices and pepper.

Then add sour cream and stir the meat.
