    INGREDIENTS:

    • 180 g flour
    • 1 tbsp. milk
    • 1 tbsp. water
    • 2 large eggs
    • 1 tsp. Sahara
    • 1/2 tsp. salt
    • 1/3 tsp. soda
    • 1 tsp. lemon juice
    • 2 tbsp. l. vegetable oil
    • 4 large apples (900 g)
    • 1/2 lemon
    • 100 g sugar
    • 1 pack vanilla sugar
    • 1 tsp. cinnamon
    • 1 tbsp. l. cognac
    • 50 g butter

    COOKING METHOD:

    1. To make pancakes with apples, you first need to knead the dough for thin pancakes. To do this, beat the eggs with sugar and salt on high speed mixer until fluffy foam. In a separate container, mix milk and warm water.

    2. Suppress the baking soda by adding a few drops of lemon juice or 9% vinegar and pour into a bowl with eggs.

    Soda is often used in baking as a universal and most affordable leavening agent, giving pancakes an openwork structure with a small hole. However, if added dry, it can give products an unpleasant taste, so the soda must first be quenched with acid. This procedure is conveniently carried out directly in a teaspoon or tablespoon. After the soda foams strongly, it can be poured into the dough.


    3. Add half of the milk mixture to the dough and beat with a mixer.

    4. Pour sifted flour into the dough in 2 additions and mix thoroughly with a mixer so that there are no lumps.

    5. Add the remaining milk and beat again.

    6. Pour in vegetable oil, mix and the dough for thin pancakes is ready!
    7. Thoroughly coat the frying pan with vegetable oil and heat it very well. Using a small ladle, pour a portion of the dough onto it and, rotating the pan, distribute it in a thin, even layer over the entire surface. Fry the pancake over medium heat for 1 – 2 minutes until browned.

    8. Carefully turn the pancake over with a spatula and fry the second side for no more than 1 minute. Place the finished pancakes in a stack on a plate.

    Since vegetable oil is added to the pancake dough, you only need to grease the pan with oil once before baking the first pancake, after which there is no need to add oil.

    9. While the pancakes are baking, you can start preparing the apple filling for stuffing them. To do this, peel and seed the apples and cut them into small cubes.

    Important! To prevent the apple filling for pancakes from boiling into porridge, you should use strong, sweet and sour apples with dense and elastic pulp to prepare it.


    10. Melt the butter in a frying pan, add the chopped apples and pour the juice of half a lemon over them.

    11. Add sugar and vanilla sugar and cook the apples for 5 - 10 minutes over medium heat, stirring gently until the apples soften and the liquid that has separated from them has boiled away.

    I prefer to use brown sugar to make the apple filling, which is more beneficial and gives the apples a nice caramel flavor.


    12. At the end of cooking, add cinnamon and cognac to your taste (you can also use brandy, rum or Calvados). The apple filling for the pancakes is ready!

    13. Now you can start stuffing the pancakes. From this amount of ingredients I got 27 small pancakes with a diameter of 16 cm, and I decided to roll them into small tubes. If you had a large diameter frying pan, it would be more convenient to roll the pancakes into envelopes.


    Place a tablespoon of apple filling in a narrow strip on one edge of the pancake and roll it into a tube.
