Cheesecakes without eggs: recipe. Six dietary recipes from cottage cheese without eggs Cottage cheese without eggs

A few years ago, the idea of grating dough would have seemed as ridiculous to me as chop nuts with marine binoculars©. Now everything is different... “Grated dough? Wow! It's interesting and should be very beautiful. I will definitely try it!”

And for a whole week I dreamed of a grated pie with apples and cinnamon, but during this time someone chewed up the apples, and I had to urgently change the filling to cottage cheese. As a result, not only did I not regret this forced replacement one bit, but also... No, let's talk about everything in order.

For grated pie with cottage cheese we will need:

Components of grated pie dough:

  • 3.5 cups flour;
  • 200 grams of butter;
  • 1 cup of sugar;
  • 3 tbsp. sour cream;
  • 1/2 tsp. soda;
  • 1/2 tsp. ground cardamom;
  • a pinch of vanillin.

Components of curd filling for grated pie:

  • 800 grams of cottage cheese;
  • 2 tbsp. Sahara;
  • 4 tbsp. sour cream;
  • a handful of dried apricots, dates, raisins or other dried fruits.

As you may have guessed from the preface, the filling for a grated pie can be not only cottage cheese with dried fruits, but also fresh fruits (apples or pears), and in general anything you like, as long as it doesn’t leak out.

And the dough here is classic shortbread, so we do everything “by the book”: melt the butter in a water bath, rub the sugar in it with a spoon. Then add sour cream and mix everything well.

In a separate dish, mix flour, soda and spices.

Combine the butter mixture with the flour mixture and knead into a dense, elastic, excellent and tasty shortbread dough.

Now divide the dough into eight koloboks and put them in the freezer for half an hour.

We have time to make the cottage cheese filling. Let's get started! Place cottage cheese, sour cream and sugar in a dish and chop (if required) dried fruits.

And then mix it all thoroughly. The curd filling for the grated pie is ready.

Lightly grease a baking sheet with vegetable oil and grate five of the eight frozen dough balls on a coarse grater. Rubbing the dough turned out to be much easier than I thought; there won’t be any difficulties with it, honestly.

Distribute the grated dough evenly over the baking sheet and press down slightly with your hands.

We spread our curd filling onto the dough shavings.

And rub the remaining three balls over the filling so that the shavings evenly cover the pie filling.

The grated pie should be baked in an oven preheated to 180°C for approximately 30-35 minutes. During this time, the top will have time to brown a little. We take our masterpiece out of the oven, let it cool and, finally, take the first sample...

Wow! Shredded cottage cheese pie tastes exactly like good old socchi, which I absolutely LOVE. It turns out that, without realizing it, I learned how to bake succulents? And can I do this at least every day? It turns out that it is so. What wonderful news! And now you can do it too, for which I congratulate you. Bon appetit!
