Muffins are wonderful baked goods. These adorable little cupcakes are great for breakfast or as a snack throughout the day. You can use them to greet guests or, when going on a visit, cook something interesting yourself. Fortunately, the variety of muffin recipes allows you to choose any one that suits your taste. Try baking wonderful carrot muffins, the recipe is simple and even a novice cook can handle it. Step-by-step photos will show all the stages of preparing these delicious vegetable muffins.

How to make carrot muffins. Kefir recipe

Grate the carrots on a fine grater. Add sugar, salt, egg, cinnamon and honey to it. If you like the taste of cinnamon, you can add a full spoon.

Mix everything, beat until foamy bubbles form. After this, add refined oil and mix again.

Pour soda into kefir. Do this in a suitable sized container. When stirred, kefir will quench the soda, active release of carbon dioxide will begin and the liquid will almost double in volume.

Pour the foamed kefir into the rest of the ingredients and mix them.

By the way, turn on the oven to maximum: it needs time to warm up.

Now it’s the turn of the flour to combine with all the products. Sift it - it will become more airy and the muffins will rise better later. Do not add all the flour at once, do it in parts: the risk of leaving flour lumps will be minimal and the dough will be easier to knead.

The finished dough is viscous and tight: it will flow off the spoon with great reluctance.

Divide the dough into the molds, filling them about two-thirds full. Place a nut half in the middle of each mold.

Walnuts can be replaced with any other nut: hazelnuts, almonds, cashews, peanuts. This could be sunflower seeds, a pinch of poppy seeds or special colored sprinkles.

Check if the oven is warm enough and only then place your future muffins there. For the first ten minutes, keep the temperature high (200-230 degrees), during which time the dough in the molds will miraculously rise.

If there are children in the house, invite them to see this magic - they should like it. Of course, do not forget about safety measures.

Reduce oven temperature to 170 degrees. The carrot muffins need to bake for about 25 minutes more. Check doneness: pierce the cake with a match or toothpick. If the wooden stick comes out dry, then the baking is ready. Turn off the oven, unload your dessert from its depths and let it cool.

It's time to try delicious carrot muffins, the step-by-step recipe with photos is ready, use it and... Bon appetit!

Carrot muffins - basic cooking principles

Carrot muffins can serve as a dessert or savory pastry. The basis for the dough is carrots and fermented milk products. To prevent the muffins from being dry, add vegetable or butter fat to the dough.

Carrots are combined with kefir, sour cream or yogurt, fat and eggs are added. Shake well until smooth. Dry ingredients are mixed separately. The liquid and dry mixtures are combined and the dough is kneaded to the consistency of thick sour cream.

Nuts, candied fruits, pieces of fruit or berries are added to sweet muffins. Savory muffins are made with cheese, bacon or vegetables.

On top of the baked goods you can decorate with whipped cream, cream, glaze, or sprinkle with sesame seeds and powdered sugar.
