Soup with tomato, beans and meatballs from Family's

For a 5-liter saucepan you will need:

  • minced meat - 400 g
  • milk - 2-3 tablespoons
  • piece of bun
  • potatoes (average 6 pieces)
  • tomato paste (you can use ketchup without additives) - 2 tbsp.
  • canned beans (I like red, you can use any) - 2 cans (partially drain the juice from the cans)
  • 1 large onion
  • 1-2 cloves of garlic
  • allspice
  • black pepper
  • hot red pepper (for everyone!)
  • Bay leaf
  • salt.
  • other spices to taste, I used a little tarragon, suneli hops + fresh herbs

The minced meat for this soup is usually turkey with the addition of chicken. But today I didn’t make it to the turkey store, but I really wanted some soup with meatballs. Therefore, I used beef + pork (400g). To the minced meat I add a small potato grated on the finest grater (to make a puree) and a piece of bun pre-soaked in milk (about 2-3 tablespoons when soaked). The meatballs turn out airy and very tender.
Finely chop the onion and garlic and lightly sauté together. Cut the potatoes into cubes and place in boiling water.
We also send beans, onions, garlic, pepper and bay leaves, and salt there. Cook for 10 minutes (until the potatoes are almost completely cooked). While it’s cooking, make meatballs (I got 36 pieces) and carefully throw them into the pan. Cook until the meatballs are done (5 minutes). Next, I sprinkled dry spices on top and closed the lid for 10-15 minutes.
Place the finished soup on plates and sprinkle with fresh herbs.

Meatball soup from Efim

Thaw a ball of frozen homemade minced meat (pork/beef), add an onion (in a meat grinder).
Literally 1 tbsp in the pan. vegetable oil, finely chopped medium onion (1 pc.), carrots (1 pc.), lightly fry, literally 2 minutes, put on a plate, just carefully select all the carrots, otherwise they will turn into coals.
There is a little oil left in the pan, which is enough to prevent the meatballs from burning.
While I’m rolling the meatballs, I turn off the stove, because the thick bottom holds the heat well, when all the meatballs are already in the pan, I turn up the heat, fry for 5 minutes, pour boiling water over it.
I start peeling the potatoes, cut them into cubes, put them in boiling broth with meatballs, then carrots and onions, add large broken frozen bell peppers (from my garden), large ones, because for some reason we don’t eat them boiled, just for flavor. I add a few peas of black pepper (not allspice), salt, test the potatoes for doneness, and add some of the finest vermicelli. As soon as it comes to a full boil, I immediately remove it from the heat, close it with a lid, wait 3 minutes until the vermicelli reaches its proper temperature, pour it into plates, and into each plate there are a few leaves of the frozen parsley that I grew myself.

Cheese soup with meatballs from IRRA

This soup has been a favorite since my student days. It’s good even without meat, but with meatballs it’s absolutely royal!
I put a pot of water on the stove, quickly peel the potatoes, carrots, cut them (potatoes into cubes, carrots into strips), throw the potatoes into boiling water and let them boil for about five minutes. Then I add processed cheese; today I used Lebedevsky cream cheese as an experiment (I must say, the experiment was quite a success, the cheese dissolved well, the taste was very pleasant). While this is all boiling, I roll the meatballs. Today I have minced chicken breasts, I don’t add a little garlic to it, I don’t add salt or onions to this minced meatballs, I don’t like it, but that’s just for me. Beat the minced meat well, you can add semolina and let it stand. But I had no time, everyone was hungry, so the first portion went without semolina. I throw meatballs into the boiling soup, add frozen red pepper strips, carrots, let the meatballs float and simmer for about five minutes, then add spider web vermicelli, a few more minutes, greens and remove from the stove.
That’s it, the aromatic, rich soup is ready, and it’s impossible to tear the eaters away from the plate until the pan is empty.

Soup with plucked meatballs from Vassabi

I make soup as my mother taught me. We ate it often, so I like it in this form (it was one of my favorite soups as a child).
Minced meat - beef, pork, a little salt, black pepper, a little dill.
Place a whole onion and large carrots in boiling salted water (I don’t like them boiled, then I take them out, but the color and taste are just right).
We always make meatballs this way - we take a pinch from the total mass and immediately put it in the pan.
While the meatballs are cooking, I peel and cut the potatoes. Be sure to use straws (or thin cubes).
Place the potatoes in the pan until done.
Then I pour literally one and a half handfuls into a large pan, noodles - spider webs, set the pan aside, and stir. Do not cook under any circumstances, otherwise the porridge will come out.

Soup with meatballs and dumplings from NyutaAnyuta

For dumplings, take 2 eggs, a little salt, a spoonful of milk and flour (thicker than for pancakes, so that the dough does not stick), dip a teaspoon into a cup of water, and drop the other spoon into boiling water-broth.
Added Maggi chicken cube.
So, the dumplings floated to the surface, then frying (onions, carrots, garlic for flavor), after a couple of minutes potatoes, in small cubes, then chicken meatballs. After 5 minutes, I decided to add processed cheese, also finely cutting into cubes, and add spices and herbs to taste. The soup turned out tender because of the cheese and the dumplings were soft because of the spoon of milk.

My grandmother always fries noodles in soup in a frying pan without oil until golden brown. Then the soup gets a different aroma and taste, and the noodles don’t become soggy.

Diet soup with meatballs and my ideas about it.

WITH Eight years ago, I worked for some time in China.

At one point I got homesick and wanted simple, home-cooked food. And they took me to dinner at a small Russian restaurant. How happy I was when I saw Russian words and Russian names of dishes on the menu.

I ordered myself meatball soup. My mother cooks it so magically.

You can't imagine the look of surprise on my face when they brought me what they called meatball soup.

There was only broth and four meatballs. No onions, no carrots, no potatoes.

Of course, the soup was very tasty, but it didn’t fit in with my idea of meatball soup.

A couple of years later, after I started eating healthy and gave up potatoes, I remembered that Chinese meatball soup and began cooking it at home.

Over time, onions and carrots made their way into the recipe, and somehow cauliflower accidentally crept in.

Ingredients:

  • 1 PC. - chicken breast.
  • 1 PC. - carrot.
  • 1 PC. – onion.
  • 1 PC. - white of one egg.
  • 1 PC. – red bell pepper.
  • 0/5pcs. – a head of cauliflower, medium size.
  • Sea salt and pepper to taste.
  • 2 lit. - water.

Diet soup with meatballs, recipe.

Grind the chicken breast in a meat grinder. Finely chop the onion. Mix minced meat, onion and egg white. Salt and add any spices if desired. Mix everything very thoroughly and form into meatballs.

Cut the pepper into cubes, cut the carrots into slices, and separate the cabbage into inflorescences.

Boil water and carefully throw in the meatballs, after five minutes the carrots, and after another five minutes the peppers and cauliflower. Cook for another five minutes, turn off the stove and let the soup sit for 15 minutes.
