I love making baked goods from ready-made puff pastry and find a lot of advantages in this product. So, it can be stored frozen for a long time. Then the jam puffs can be made in literally half an hour, and most of this time will be spent on baking.

What to make from puff pastry? Yes, anything: a large pie, small pies, sweet puffs, puffs with meat, fish, mushroom filling, etc. But the easiest way, of course, is to make puffs with jam from ready-made puff pastry.

While the dough is frozen, I immediately unroll it and cut it along the folds, leaving the layers for 15-20 minutes. During this time, the dough will expand and become pliable.

I cut the layers into squares and put thick jam in the center of each.

I pinch the squares together like dumplings and place them on a greased baking sheet.

Bake for 20-25 minutes until the top is browned. During the baking process, a little jam will leak out, there’s no way around it.

You can transfer the frozen dough from the freezer to the refrigerator in the evening and then by the morning it will be ready for further use. This is the most gentle defrosting method, which allows you to preserve the quality of the semi-finished product.

    Place the thawed dough on a floured table and sprinkle flour on top. It should be rolled out to a thickness of 3-4 mm. This should be done by always moving the rolling pin in one direction: only away from you or only towards yourself. This precaution is necessary to preserve the flaky texture of the dough.

  2. Next, you should cut the cake into squares measuring 10 by 10 cm. This should also be done carefully so as not to pull the dough. A round pizza cutter or kitchen scissors work best. If you don’t have anything at hand other than a regular knife, then they don’t need to cut, but press the dough.

  3. After this, fold one square in half diagonally. Then use scissors to make two cuts parallel to the short sides of the triangle, 1 cm away from the edge. The cuts should not be connected.

  4. After this, the square must be returned to its original state.

  5. Place the separated strips crosswise.

  6. Place a teaspoon of apricot jam in the center of the resulting figure.

  7. In the same way, you need to form and fill the remaining squares of puff pastry with filling. The resulting blanks must be carefully transferred to a baking sheet lined with parchment. You should leave some space between the puffs, as the dough will increase significantly in volume during baking.

  8. Bake at 180 degrees for 15-20 minutes. During this time, the dough will rise well and lightly brown.

  9. The puff pastries must be transferred to a plate until they cool completely. After baking, the filling will be in the cavity. If desired, you can add another spoonful of jam, crushed nuts or pieces of fruit from the jam. Sprinkle the cooled baked goods with powdered sugar.   • puff pastry – 500 g,
  • thick jam (I used orange jam) – 200 g,
  • starch – 3-5 tbsp. l.,
  • egg – 1 pc.,
  • powdered sugar (optional).

Let's start with the test. Both yeast and yeast-free puff pastry will work for these puff pastries. With the first, the puff pastries will turn out taller, softer and more fluffy, with the second - not so fluffy, crispy and with a more layered structure. The choice is yours. I prefer the yeast-free version. Remove the dough from the packaging and place it on a flat surface lightly dusted with starch. We also lightly dust the top and cover it with something so that the dough does not dry out.

When the dough becomes soft, lightly dust it with starch again and roll it out into a thinner layer. Layer thickness: 2-3 mm. The puff pastries can be of any shape; I make one of the most traditional options - envelopes. We divide the layer into rectangles of equal size. My package contained 2 layers of dough, each of which I rolled into 6 rectangles.

On one half of the rectangles we make cuts (oblique or straight), stepping back from the edge by about 1 cm.

Then we put jam filling on the whole part. I took orange - it is moderately sweet, with a slight sourness, ideal for baking. But absolutely anything will do, the main thing is that it is thick enough so that the sweet filling does not spread over the baking sheet.

We coat the edges of the rectangle with beaten egg - this way the puff pastries will not open at the place of fastening.

And immediately cover the jam filling with a piece of dough with slits. We press the edges first with our fingers, and then, to be sure, we go over them with a fork. If the fork sticks to the dough, dip it in starch.

It’s worth noting right away why starch is indicated in the recipe. It is added when your jam is quite liquid. Starch allows you to thicken the filling so that it does not leak out during baking, without losing its taste.

If your jam is very thick, you don't have to add starch, but it's better to be on the safe side. Both corn and potato will do.

We take out the package of dough from the freezer. Unwrap it and defrost it at room temperature.

Sprinkle a table or large cutting board with a little flour or starch. Roll out the dough with a rolling pin into a large rectangular layer approximately two to three millimeters thick.

Take a sharp knife and cut the layer into six equal portions. Lightly cut each one in half. On one half we visually draw a square, make through cuts with a knife diagonally from one edge to the other.

Mix the jam with starch into a thick, homogeneous mass. Place the filling on the half of the dough that has no cuts. Break a chicken egg, separate the yolk and beat it with a fork. Take a silicone brush and brush each puff with jam.

The approximate thickness of the layer is a couple of millimeters. Then we measure out squares of approximately seven by seven centimeters and cut them with a sharp knife.

Immediately cover the work surface with baking paper. This will make it more convenient to transfer the finished baked goods to a baking sheet or immediately place them on it.

Place a portion of jam in the center of each layer. If it is a bit runny, add a little starch to it and stir. This way the jam will not leak out during baking.

Break the egg with a fork, carefully brush the edges of the bases, but leave another egg to grease the formed puffs.

Now take the opposite edges of the dough with your fingertips, bring them together and seal them. We bend the remaining two edges slightly inward to form a small partition. This way we get beautiful open envelopes, but the jam remains inside.

Set the oven to preheat to 180 C, grease the puff pastries with the remains of the chicken egg.

Bake for about twenty minutes.

When the baked goods are ready, remove the baking sheet from the oven. Cool the puff pastries completely and sprinkle with powdered sugar. This is how we serve it on the table. To ensure that the powder is distributed evenly, use a sieve or sifter.

In this version, we will prepare not simple pastries, but beautiful curly ones. You just need to try a little, do everything as indicated in the recipe. You will get very beautiful elegant puff pastries with jam, just like from a bakery.

We already know how to make beautiful curly puff pastries. Let's add some walnuts to them. They go well with any jam and add an interesting flavor.

How to cook

It is best to immediately buy the dough, which is divided into large plates, so it will be more convenient to form the blanks.
