Very tasty pies with dried apricots - small and crispy, absolutely without sugar.
From ready-made puff pastry.
They are simple and quick to prepare, and taste best warm and freshly baked, so we shape them and bake them immediately before eating.

1. Wash dried apricots and pour boiling water over them.

2. Thaw the puff pastry.

3. Turn on the oven to heat up to 220°C.

4. Carefully unwrap the defrosted dough.
Lightly roll out each layer and cut into “squares”.
I had 4 layers of dough, each cut into at least 6 pieces.

5. Place the soaked dried apricots in a colander and let the water drain.

Place 1 dried apricot on each “square” of dough.

6. Since our filling is not “flowing”, the pies can not be sculpted, but rolled like light croissants, starting from any of the corners.

Seal (or simply roll up) the open edges and place the pies seam side down on a baking sheet (at some distance from each other).

7. If desired, brush the top with yolk
(using a pastry brush, stir the yolk with a spoonful of water).

If you don’t lubricate it with anything, it won’t be any worse - the pies will rise even better. :)

8. Place the baking sheet with the pies in an oven preheated to 220°C, immediately reduce the temperature to 190°C.
Bake until nicely golden brown (about 20 minutes).

Attention: The baking mode for ready-made puff pastry is usually indicated on the package and it may differ slightly (or significantly) from that indicated here; be sure to read the instructions on the package.

9. Carefully remove from the baking sheet.
If you want them to remain crispy, do not cover them with anything,
If you want softer ones, cover the container with hot pies with a linen napkin.
It tastes best warm.

Hello dear readers ! I use baked goods filled with dried fruits when there are no fresh berries yet, and I’m already tired of jam. Puff pastry pie with dried apricots and we especially love raisins for their sweet and sour taste, the special aroma of southern fruits and cinnamon. This time I also used, as I often do, a frozen preparation.

Dried apricot pie with puff pastry

We will need:

  • Yeast puff pastry - 500 g
  • Dried apricots - 100 g
  • Raisins - 50 g
  • Cinnamon - 1/2 teaspoon
  • Walnuts (optional)
  • Egg for brushing dough
  • Oil for lubricating paper

Preparation:

I soak the dried apricots for the filling together with raisins for two or three hours in advance (you can also overnight). For this I take water at room temperature or lukewarm. There is enough of it to just cover the dried fruit. Then I heat the mixture without bringing it to a boil. I leave it to cool. Sometimes I cut chilled dried apricots into pieces. As a rule, I don't use sugar. I add finely chopped walnuts.

Lightly sprinkle the defrosted dough with flour and roll it out into a thin layer, dividing it into two parts. On a special form I place baking paper, greased with oil, and a layer of dough. I prick with a fork, make sides, sprinkle the dough with cinnamon and spread the filling. I cover it with a second layer of dough and pinch the edges. I grease with egg, prick the top layer of dough with a fork and bake, in this case in an air fryer, at 235 degrees on the middle rack at high speed for 25-30 minutes (I put it in an already preheated air fryer). So that the pie is properly baked and the top crust does not burn, as soon as it browns, I cover it with foil.

How to make puff pastry from ready-made puff pastry with dried apricots and honey

Thaw a small packet of puff pastry according to the instructions on the package.

Pour water over the dried apricots for half an hour to allow them to swell. Rinse it well. Cut into small pieces for filling.

Roll out the dough into a square shape.

There are usually 4 rectangle pieces in a 400 gram package of dough. Roll out each rectangle and divide into four parts. I do this with a curly knife. A package of dough makes 16 squares for the filling.

Place pieces of dried apricots in the center.

Add honey to the filling. I put half a teaspoon of honey in each puff pastry. For those with a sweet tooth, you can add a whole spoonful. Thanks to honey, the filling will be juicy, sweet and extremely tasty.

Fold the dough so that the filling is inside. I form triangles, but the shape can be any. To decorate the edges of the puff pastries, I decorated them with stripes using a regular fork.

All that remains is to simply transfer the finished puff pastries onto a baking sheet lined with foil/parchment greased with oil. Bake for 15-20 minutes at 175 degrees. During the baking process, the puff pastries will increase in size and acquire an appetizing golden brown color and honey aroma.

Serve the dried apricot puffs to your home tasters, hot or warm, on a plate.
