Chinese weakly fermented oolong Huang Jin Gui (Golden Cinnamon) got its name due to its wonderful aroma, reminiscent of the fragrance of a flowering cinnamon tree, and the color of the tea leaves, similar to gold.
In China, there are two legends relating to the origin of this tea. One of them says that a peasant accidentally passing by saw an unusual yellow tea bush. Surprised that the tree was growing in an inappropriate place, he transplanted the plant closer to his home. A year later, the grown bush yielded a harvest of tea, extremely fragrant and delicate. Soon it began to be grown everywhere in Fujian.
There is another, no less beautiful legend associated with this golden drink. Allegedly, a long time ago in Anxi County there was a custom of giving blue-green things to newlyweds at weddings. And so the newly-made spouses once received two sprouts as a gift. These were tea bushes. The plants planted in the garden near the house by the newlyweds have taken root. And the soon harvested tea leaves had a wonderful, delicate cinnamon aroma and an exceptional color, similar to gold. This is how, according to legend, they began to breed this oolong with beautiful name- Golden cinnamon.
Tea production
The production technology of Huang Jin Gui involves the initial drying of tea leaves in the fresh air, after which they are crushed so that the juice begins to release. In this way, the oxidation process is accelerated.
The next step is to distribute the raw materials on bamboo mats to saturate them with oxygen.
Heat treatment occurs at low temperatures. The leaves are slightly fried in vats prepared for this. At the same time, the drink does not lose best qualities green tea, also taking everything valuable from oolong tea.
Taste, color, aroma
Golden cinnamon has a deep and rich aroma that breathes freshness and lasts quite a long time after several brewings. The present notes of mountain flowers and fruits transform into the creamy sweetness of the golden drink.
The aftertaste of this infusion is long and fresh, leaving the impression of the purity of mountain air, with a subtle cinnamon and nutty aftertaste, somewhat reminiscent of homemade pie cinnamon.
When brewed, Huang Jin Gui acquires exactly that golden color with a hint of green, for which it got its name.
How to brew
Proportions for preparation: 5-7 grams of tea leaves (that’s 1 tsp) per cup of 120-150 ml. Water temperature is 85-90 degrees, preference should be given to bottled water.
- Rinse the teapot and the tea leaves itself.
- The first spill does not exceed 10-15 seconds and the water must be drained. Then the time of each brew increases slightly. Good tea withstands 4-5 repeated brewings.
Huang Jin Gui is drunk slowly, in small sips, to be able to fully feel its taste and exquisite aroma.
