Squid in cream. Squid in cream in the oven a la julienne Squid in cheese sauce

Squid is a valuable protein product that is affordable, quick and very easy to prepare. There are a lot of interesting recipes, one of the popular options is stewing in cream sauce.

The seafood in it will definitely not be tough, but will delight you with its tenderness and aroma. Shall we hit seafood?

Squid in creamy sauce - general cooking principles

The squid needs to be cleaned. You can throw the shellfish carcasses into boiling water for a few seconds, then scrape off the film with a knife. There is no need to pre-boil the carcasses, as they will then be stewed in the sauce. In general, the cooking time should not exceed 5 minutes, even 2 after the water boils is enough. But it is possible to keep seafood in fatty sauces a little longer, but it is not advisable. The taste will directly depend on the cooking time. In a few minutes you can ruin everything; the squid will become hard, dry, and rubbery.

You can use any cream for the sauce, but without additives; vegetable substitutes are not suitable. If the fat content is high, you can dilute it with milk or water.

What else is put in the sauce:

Onions, garlic, tomatoes;

Cheese of different types;

Olive oil, butter.

All dishes with squid are seasoned with spices. Black pepper is ideal; Italian herbs give a wonderful aroma: oregano, basil, you can use a ready-made Provençal mixture. There are many interesting recipes with the addition of mushrooms, various vegetables, olives, wine, they can be found below.

Usually they cook shellfish on the stove, since the stewing time is very short, everything is done quickly and simply, there is simply no need to preheat the oven. You will need a good wide frying pan. It is advisable that it comes with a tight lid that will not allow steam to escape and the sauce to boil down.

Creamy squid recipe.

A very quick, healthy and tasty dish for seafood lovers. Creamy squid is incredibly easy to prepare and is great for people watching their weight. The dish has virtually no calories, but is very filling. Pleasant to the taste. In general, I think for squid fans this is the most ideal option that absolutely anyone can cook. So let’s get started, I won’t bog you down, because it’s faster to prepare the dish than to describe it))

Ingredients:
3-4 squid carcasses
2-3 onions
Cream 150 ml.
Salt and pepper to taste
Black peppercorns, allspice and bay leaf 1 pc.
Vegetable oil for frying

Cooking squid in cream:
1. Of course, I’m not a professional in cleaning and cooking squid, but still, I’ll tell you how I cooked them. First, peel the raw squid. It doesn't come off very quickly, but it's still worth trying. Then boil the water (if desired, you can add spices - bay leaf, peppercorns and allspice). Dip the squid into it, cover with a lid and remove from the stove! They should stand in this water for about seven minutes, this way they will definitely not be overcooked! Or cook over low heat after boiling for a maximum of three minutes! If you overcook them, the squid will become tough and completely rubbery. My meat turned a little pink because I defrosted it in hot water, so I don’t advise you to do this. You shouldn't cook squid with the skin on either. In general, ideally after cooking, they should become a pleasant white color. I hope you can at least succeed)))

2. Next, I got rid of the chitinous plate, which is like a ridge on them. I cut off the ugly edges. Then I simply cut the meat into slices.

3. Cut the onion into half rings and fry in vegetable oil until golden brown.

4. Add cream to the pan. After boiling, add squid, salt and spices to the cream. Simmer for literally two minutes and turn off.

5. There you go. Squid in cream is a tasty and healthy dish. You can optionally replace the cream with sour cream if you want sourness to be present in the dish. Bon appetit and I hope you enjoy it.
