Open one hard-boiled egg, to do this, put the egg in a ladle with cold water, put it on the fire and after boiling, cook the egg for at least 10 minutes.

Place the yolk in a deep cup, mash it with a fork, add two more raw yolks.

Break chicken eggs into a deep, large bowl, measure out sugar and baking powder; we also added 1 tsp for flavor. cinnamon and a packet of vanillin.

The ingredients must be lightly whisked until a light foam forms, and then pour in kefir at room temperature. Important: the sugar must be completely dissolved.


Melt the butter and pour it into our mixture. Don't overheat the oil: you don't want it to start boiling. Otherwise the cookies will fail.

The result was an oily sweet mass. Break one chicken egg into it. Mix the ingredients thoroughly in the bowl again.

Start sifting the wheat flour into the resulting mixture. Do not ignore the sifting process, this will saturate the flour with oxygen, and this will only improve the taste of the shortbread cookies. Add flour in parts, stirring immediately.

Quench the soda with acetic acid and add it to the dough along with the flour.

When you knead the dough, roll it into a ball, wrap it in film and put it in the refrigerator for 20 minutes.

Roll out the chilled dough on a floured surface into a layer about a centimeter thick. Cut out cookies using special cutters or a glass.

Line a baking sheet with parchment paper. Lay out the cookie dough. There is no need to lubricate the parchment with anything; margarine-based cookies will not stick.

  • 180g butter
  • 330g flour
  • 1 egg + 1 yolk for brushing
  • 60ml orange juice
  • 115g sugar

Then bake the cookies at +180° C for about 10 minutes and decorate their tops (when cool) with any thick jam.

Oatmeal with raisins

If we were to rank cookies, oatmeal would definitely be the healthiest. To prepare it, it is better to use coarse oatmeal, which is rich in fiber. First, sift 360 g of flour into one bowl and mix it with 5 g of baking powder, 0.5 teaspoon of soda, 1 teaspoon of salt, 5 g of ground cloves, 2 g of ground cinnamon and 1 g of ground allspice. Separately, grind 225 g of softened butter with 340 g of refined and 60 g of brown sugar. After this, add 3 eggs one at a time. Now you need to add prepared flour with spices, 225 g of oatmeal and 115 g of pre-soaked and dried raisins into the dough. Divide the dough in half, roll each half into a log about 3 cm in diameter, wrap in cling film and put in the refrigerator for an hour. When the mass has cooled, cut it into “patchlets” and bake at +170° C for about 15 minutes.

"Crow's feet" on cottage cheese

Another famous and healthy cookie is “Crow's feet”, which are prepared using cottage cheese. They are incredibly easy to make. 200 g of softened butter should be mixed with the same amount of cottage cheese rubbed through a sieve. Then add to the mixture 250 g of sifted flour, 1/2 teaspoon of baking powder, 1 teaspoon of vanilla sugar and 2-3 tbsp. spoons of regular refined. Place the kneaded dough in the refrigerator for an hour, then roll it out and cut out circles with a glass. After that, sprinkle each piece with sugar, fold it in half with sugar grains inward and then in half again. You should end up with a triangle, which you need to roll in sugar on one side again and make a dent on top with a fork so that future cookies look like crow's feet. These delicacies are baked at +200° C for about 20-25 minutes.

Almond-coconut with filling

Almond-coconut pastries with a creamy filling made on a meringue base are incredibly delicious. To create it, beat 10 egg whites with 140 g of sugar until thick foam. Separately combine 220 g of coconut flakes, 50 g of almond flour and 200 g of powdered sugar. Then mix this mass with the whipped egg white, put it into a pastry bag and squeeze it through a tube onto a baking sheet covered with parchment - make a tight row to row so that you get an even layer about 0.7 cm thick. Bake the dough at +170° C for about 15 minutes during which to make the filling. For it, bring 100 g of lemon juice and 100 g of butter to a boil. Separately, beat 300 g of sugar, 3 whole eggs and 5 yolks and mix them with the slightly cooled lemon-cream mixture. Then boil the cream to the consistency of thick sour cream, pour it onto a layer of cooled dough and cover with a second layer of dough. After this, the workpiece should be put in the refrigerator, kept there for about an hour and cut into cookies of any shape. Before serving, it is advisable to sprinkle the masterpiece with powdered sugar.

Italian biscotti

In Italy, there are several names that identify different forms of baked goods. The most popular, of course, are amaretti and biscotti. The latter are translated as “twice baked” - first they are baked in the form of a loaf, then it is cut into slices and then put into the oven again. Historians believe that the first Italian biscotti were prepared back in the 13th century in the city of Prato (Tuscany). According to legend, it was these cookies that Christopher Columbus took with him on his campaigns.

Provencal “boats”-navettes

From traditional Provencal cuisine you can borrow classic cookies - navettes. They differ from their counterparts in their bizarre boat-shaped shape. Sift 500 g of flour, add a pinch of salt, 250 g of sugar and mix. Make a well in the center and pour 3 eggs and 80 g of melted butter into it. Then gradually pour in 100 ml of water and knead into a smooth, elastic dough. Transfer it to a table sprinkled with flour and knead until the mass stops sticking to your hands.
