Curd pie made from puff pastry. Cooking cottage cheese pie from puff pastry Pie from puff pastry and cottage cheese

Delicious pie with cottage cheese

This tasty and satisfying pie with cottage cheese can be prepared with either store-bought puff pastry or thinly rolled plain yeast dough. The cottage cheese pie turns out very juicy, full of filling and very attractive in taste.

Our pie with curd filling is rolled up first into a roll and then into a spiral, like Greek pies like spanakopita (pie with spinach and feta). Curd spiral pie is prepared quite quickly, in about half an hour + 45-50 minutes in the oven.

What you need for a sweet pie with cottage cheese

  • Ready puff pastry (yeast or yeast-free) – 500 g;
  • Fat cottage cheese (9%), not liquid – 500 g;
  • Sugar – 5 level tablespoons;
  • Salt - a pinch;
  • Vanilla sugar – 1 teaspoon (if available);
  • Eggs – 2 or 3 pieces;
  • Candied fruits – 10 pieces or a handful of raisins (if available);
  • Butter - a small piece for greasing the mold (20 g).

This is the consistency of the cottage cheese for the filling – fatty and not runny.

How to make a pie with cottage cheese

1. Thaw the finished frozen dough according to the instructions on the package.

2. Make the curd filling for the pie

  • Combine cottage cheese with sugar (plain and vanilla), salt and candied fruits (cut into small pieces). Mix.
  • Lightly beat 2 eggs, pour a little to grease the top of the pie. The rest is added to the cottage cheese and stir well until the sugar dissolves.

This is the consistency of the filling for the cottage cheese pie. It is not liquid and does not flow. It would be possible to add 1 more egg to it.

If the curd filling is very thick, add 1 more egg to the curd. If the cottage cheese was damp and the mass came out liquid, then you need to add semolina to thicken and let it stand (so that the semolina disperses).

3. Roll out the spiral pie dough

Roll out the defrosted dough in length so that its area doubles. Remember that the rolling board and rolling pin should be sprinkled with flour (so that the dough does not stick). If the packaged dough is divided into 2 sheets, you should end up with 2 rectangles.

4. Assemble the pie with cottage cheese in the shape of a spiral

  • Place the filling on the dough, leaving 2 cm from each edge to make it easier to roll up.

This is how the filling is placed on the rolled out dough. Leave some space around the edges for easy rolling.

  • Roll the dough with the filling into a roll.

Roll the dough into a roll and place it in a baking dish, seam side down.

  • And place the roll with cottage cheese on a greased baking sheet or round baking dish in a spiral, starting from small turns to larger ones.

Forming a spiral from a roll filled with cottage cheese

  • The second roll should continue the spiral shape, dock it with the end of the first roll and continue laying out the sausage in a spiral.
  • Brush the pie with the egg-sugar mixture we set aside. Prick the pie in several places with a fork.

5. Baking a pie with cottage cheese

Preheat the oven to 200 degrees C and bake the pie on the middle shelf for about 50 minutes. I advise you to start monitoring the cake after 35 minutes of baking. The readiness of the pie is determined by the appearance of a golden brown crust and the unbearably alluring smell of cottage cheese pie!

6. What to do with the finished cottage cheese pie

Remove the finished pie from the oven, cover with a towel and let cool. Once cooled, the pie can be transferred to a plate for serving and slicing.

If you cannot eat the cottage cheese pie in one sitting, then cover the remaining pie with a lid or plastic bag so that the pie does not dry out.

What to add to the cottage cheese filling

In addition to candied fruits, you can put seedless raisins, prunes, dried apricots, and fresh berries (currants, gooseberries) into the pie filling.

If you use dried fruits, soak them in warm water for 20-30 minutes, dry them on a paper napkin and add them to the cottage cheese when soft.

Well, very tasty!

If there is no fat cottage cheese for filling

When you only have low-fat or low-fat cottage cheese (it is crumbly and dry), but you want a pie, you need to put a spoon or two of sour cream or heavy cream in it.

What shape to use for a spiral cake

The pan for this progoa should be slightly larger than the cake placed in it, because during baking the cake will grow to the sides and upwards. This volume of dough fits well into a round pie pan with a diameter of 26 cm (I baked in a silicone one).

Step 1: prepare the ingredients.

First of all, about 30–40 minutes, although it is possible 1 hour before the start of cooking, place a package of puff pastry on the countertop. Very carefully, of course, if possible, unfold the semi-finished flour product to its full length and leave it at room temperature to melt. Then turn on the oven to preheat at 200 degrees Celsius and grease the bottom, as well as the inner sides of the round non-stick or heat-resistant baking dish with a thin layer of butter.

Next, using a sieve with a fine mesh, rub the required amount of non-liquid, preferably loose, fatty cottage cheese into a deep bowl. Add salt to it, as well as two types of sugar: regular sand and vanilla. Add a couple of chicken eggs into it and mix everything well until it has a homogeneous consistency. The pie filling should be semi-thick and should not flow under any circumstances. Place the remaining egg in a small bowl, beat with a fork until lightly fluffy and proceed to the next step.

Step 2: form a layer cake with cottage cheese.

After some time, when the dough is completely defrosted, place it on a previously floured countertop and use a metal kitchen spatula to divide it into 2 equal parts. Using a rolling pin, we roll each of them in turn into a square or round layer, so that the area of the semi-finished flour product increases by 2.5, or preferably 3 times. If desired, the base can be made very thin, this will make the cake less tall, but rather layered and, naturally, more tasty.

After this, spread half of the curd filling onto the surface of one piece of dough, leaving 2 centimeters of free space on each edge, and roll it into a tight roll. Now, holding it with your palms at both ends, we roll the resulting product into a rope, resembling a rope in shape, and very carefully move it to the middle of the prepared form, rolling it up like a snail.

We do the same with the remaining dough and filling, dock the end of the second roll with the first and continue to lay it out in a spiral in the form of a ring pie. Then, using a baking brush, brush it with the previously beaten egg, pierce it in several places with the tines of a fork, and move on.

Step 3: bake a layer cake with cottage cheese.

If the oven has heated up to the desired temperature, place the still raw dessert there on the middle rack. Bake it for 45–50 minutes, but it’s better to start monitoring its readiness after 35 minutes, puff pastry comes in different qualities.

As soon as the pie is covered with a ruddy beige-brown crust, we put oven mitts on our hands and move the pan with the fragrant-smelling product onto a cutting board previously placed on the countertop. Let the baked goods cool completely to room temperature, then lift them with a wide kitchen spatula, move them onto a tray or large flat dish and serve them at the table.

Step 4: serve layer cake with cottage cheese.

Layered pie with cottage cheese is served at room temperature as a dessert. Serve it on a tray, a large flat dish, or immediately in portions on plates.

As an addition to this yummy, you can offer powdered sugar, whipped cream, sour cream, jam, jam, your favorite cream, condensed milk, melted chocolate, a couple of scoops of ice cream and, of course, tea or any other drink to your taste. Cook with love and enjoy homemade food!
Bon appetit!

If the filling turns out to be too thick, add another chicken egg to it; if it is very liquid, then pour a couple of tablespoons of semolina into the curd mass and let the mixture stand for 15–20 minutes so that the cereal swells;

If desired, you can add raisins, candied fruits, dried fruits, dried berries or fresh fruits to the filling, but it is better to soak the latter in warm water for 20–30 minutes before use to make them softer, then dry with paper towels and only then put in the curd mixture ;

Don't have a large baking dish? Then prepare the pie on a baking sheet lined with baking or parchment paper;

The cottage cheese is too dry and low-fat, but you still want to make a pie? No problem - add a couple of tablespoons of sour cream or cream to this product.

Let's first prepare the filling for a quick layer pie with cottage cheese and cottage cheese. To do this, grate hard cheese; I had soft, lightly salted Adyghe cheese, I mashed it with my hands. Mix cheese with cottage cheese, add a piece of softened butter, salt, spices and herbs if desired. Mix the curd and cheese filling for the lazy puff pastry pie well.

Preparing a layer cake with cottage cheese is very simple and quick; no special skills are required. And at the end we get a crispy sweet crust, a tender crumb and vanilla cottage cheese in the filling. A pleasant tea party for your household will be guaranteed.

It is very important to choose high-quality cottage cheese for the filling that does not float after adding sugar, and then your efforts will be rewarded.

According to the recipe, you need to add an egg to the curd filling and brush the top of the pie with the egg. I thought that two pieces would be too much, I always have them left after greasing the pies, and I divided one in half, they are quite large, 70 grams each. Part of the egg mass went into the cottage cheese, and part of it I greased the pie. If your eggs are not large, then take 2 pieces.

To prepare a puff pastry pie with cottage cheese, take all the products on the list.

Shake the egg and divide into two parts - larger and smaller. Add most of it to the cottage cheese, add sugar and vanillin. The amount of sugar is arbitrary, according to taste, since cottage cheese varies. The filling should be quite sweet. If desired, you can also add raisins or candied fruits to the cottage cheese.

High-quality cottage cheese is mixed with sugar and egg and does not float and keeps its shape. Working with him is a pleasure.

Prepare the streusel. To do this, rub the flour, sugar and butter with your fingers until crumbs form.

Thaw puff pastry and divide into 2 parts. Roll out each part thinly into an even rectangular layer.

Place the dough with the narrow side of the resulting rectangle facing you (see photo). Make parallel cuts on both sides, leaving the middle intact. Place the curd filling in the center and tuck the end edges of the dough inward.

Braid a neat braid. Do the same with the other pie. Or make one big one.

Transfer the puff pastries with cottage cheese to a baking sheet and brush with the remaining egg.

Sprinkle the tops of the pies with streusel. Bake at 180 degrees for about 20-30 minutes. Make sure the top browns evenly.

I then put the pies under the grill. Everyone's oven bakes it differently, but the crust should be golden brown.

Puff pastry pie with cottage cheese is ready. This is a pleasure!
