Ingredients

To prepare herring stuffed with cheese and cucumber, we will need:

herring - 1 pc. or 2 fillet halves;

boiled egg - 2 pcs.;

processed cheese - 1 pc.;

garlic - 1 clove;

bell pepper - a couple of cubes;

fresh cucumber - a couple of cubes.

Cooking steps

Prepare food. First hard-boil the eggs and cool. Peel the eggs. Grate the eggs and processed cheese on a fine grater, add garlic, passed through a press, mix the filling well.

Place 1/2 of the prepared cheese and egg filling on one half of the herring fillet.

Place the cucumber and pepper slices on the cheese filling and press lightly.

Place the remaining filling on top of the vegetables.

Place the other half of the herring on top of the filling.

Wrap the snack tightly in cling film, tie it well on both sides and put it in the freezer for an hour, then put it in the refrigerator for a couple of hours.

Herring roll with cheese, of course, is not as popular a snack as sandwiches or pickled champignons, but it will be very useful for the variety of the holiday table. With such an appetizer you can easily surprise and delight your guests who don’t even know about it. There can be several dozen options for preparing a herring roll. More than ninety percent of all recipes are based on cheese. Cheese for herring fish roll is taken in the form of processed cheese, classic processed soft cheese “Yantar” or cream cheeses. In addition to the cheese, greens and vegetables are added to the filling - carrots, bell peppers, cucumbers, green onions, olives.

Product composition

  • one large carcass of lightly salted herring (or two fillet halves);
  • 100 grams of processed (or cream) cheese;
  • 40 grams of butter;
  • dried or fresh dill (to taste);
  • 3 sprigs of parsley;
  • half a teaspoon of lemon juice.

Step-by-step cooking process

  2. We clean the herring, remove the entrails, head, tail, and fins. Carefully remove the black film (it will taste bitter in the finished dish).
  3. Separate the fillet from the bones and cut into two parts. Sprinkle the fillet halves with lemon juice.
  4. You can do it a little differently. Cut off the tail and head of the herring carcass. Use a sharp knife to cut open the stomach. Remove all entrails. After this, rinse the fish with cold water. Cut out the dorsal fin. Now use a knife to make a light cut on the inside along the spine. Carefully open the fish carcass.
  5. Take out the spine. Remove all large bones from the resulting fish fillet. As a result, you should get something like this from fish fillets for a herring roll with melted cheese. As you can see in the photo, the fish fillet turned out to be not quite even; the part in the middle of the fillet, where the ridge was located, has a depression.
  6. To make the herring roll beautiful, we need to get a more even layer of fillet. Place it on a cutting board, skin side down.
  7. Cover with cling film. Using a chop mallet, lightly pound the fish fillet, starting from the sides and gradually moving towards the center. This way, the meat will move to the center of the fillet, where there was a depression.
  8. Place the processed cheese and soft butter into a small bowl (it is better to remove these products from the refrigerator in advance and let them sit at room temperature).
  9. Mash the cheese and butter well with a fork, add dried or fresh dill and chopped parsley.
  10. Advice. Instead of oil, you can use mayonnaise and add one clove of garlic, passed through a press.
  11. Mix the mixture thoroughly and spread it on one half of the fillet. Cover everything with the second half of the herring and press lightly with your hands. Or we grease the whole carcass with the resulting filling and roll it into a roll (lengthwise).
  12. Wrap the herring in cling film and place in the freezer for 20 minutes.
  13. Then take it out, cut it with a sharp knife, crosswise, into pieces 1.5-2 centimeters wide.
  14. Place them on a serving plate, decorate them at your discretion and serve.

The ingredients that make up the dish are ridiculously simple, and even a novice housewife can prepare it.
INGREDIENTS
1 lightly salted large herring
1 processed cheese
1 tsp. sour cream
1 tsp. mayonnaise
1 tbsp. l. sweet pickled pepper
3–5 sprigs of parsley (or other herbs to taste)
black pepper to taste
bread for serving
French mustard for serving
The herring must be peeled and boned and divided into fillets. Place the fillets overlapping on cling film and cover with the latter. Pound the herring with a hammer until the surface is evenly flat. Ready! Remove the top film.

Mash the melted cheese, add mayonnaise and sour cream. Mix thoroughly.

Place the resulting mixture on the herring fillet in an even layer, pepper to taste.

Place chopped pickled pepper and parsley on a layer of processed cheese. By the way, if you add pickled cucumbers instead of pepper, the dish will be no less tasty!

Carefully wrap the herring in a tight roll, helping yourself with cling film.

Place the delicious snack in the freezer for 1 hour. When the roll has cooled, cut it into neat rings with a diameter of 1.5–2 cm.

You can serve this amazing herring roll on slices of bread (black or white), cut into rings and garnish with French mustard. Consolidation!

To fill the rolls, mash the processed cheese with a fork, adding one teaspoon each of sour cream and mayonnaise.

The filling is placed on the herring. You can add your favorite spices. Black pepper and coriander go well with herring.

You can add pickled peppers or cucumbers on top. Salted ones are also suitable. Add parsley, dill or green onions. This way the rolls will not only be tasty, but also very colorful.


All that remains is to roll the fish into a tight roll. Since the herring lies on the film, this is very easy to do. Now you need to leave the roll in the freezer for 1 hour.

The first step is to clean the herring and then fillet it. Remove the skin from the fillet and carefully remove all the bones.




Place the herring fillets on cling film so that the bellies overlap. Cover with cling film and then beat the top a little with a hammer. The fillet should eventually become absolutely identical throughout its entire thickness.




The cheese for herring rolls needs to be heated to room temperature by simply placing it on the table in advance. We grease the top of the herring with cheese; if it is warm, then this will be quite easy to do. Do not overdo it with the spread, otherwise you will not be able to wrap the roll.
We used the sandwich spread. But we still recommend that you use processed or curd cheese.
