Pork is a protein and vitamin B rich food. For a long time, its opponents tried to prove that it was a heavy and harmful product for the body. However, scientists have refuted this version, establishing that humans digest pork in almost the same way as other types of meat. The main thing is to prepare it correctly. The maximum benefits can come from dishes created using the oven. In addition, pork can be boiled and fried. It makes rich first courses (pickle soups, soups, borscht) and juicy additions to side dishes (cutlets, shish kebab, escalope).

To make pork dishes especially tender and tasty, when choosing a piece of meat, you need to take into account the characteristics of different parts of the carcass:

  • Head. Usually butchers sell it whole or divided into two parts. It contains brains, tongue, heels, etc. They can be sold separately under the guise of offal. Cheeks are also prized. They contain not only snow-white lard, but also the most tender meat. You can use them to make Spanish bourguignon - cheeks fried in wine with vegetables. There are also ears: properly cooked, they become an exquisite delicacy.
  • Neck part. Loose meat with fatty streaks is concentrated here. It is ideal for stewing or frying. You can make cutlets from rib meat (a component of the neck part). In this case, the meat, separated from the bone, can be rolled into a roll and stewed. Bacon is also made from the boneless neck, which is either boiled whole or fried in small pieces. The neck also makes excellent kebabs, steaks, and escalopes.
  • The loin is the part of the back with the bone. It is prepared both in pieces and whole. Loin, cut into slices several centimeters thick, can become the basis of such a dish as a cutlet on the bone.
  • Ribs. They can be used to make a stew or broth. Ideal for baking or smoking. They can be either an independent dish or an addition to a dish that contains other ingredients.
  • Ham. It can be cooked whole, but due to the volume, even several families cannot cope with such a dish. That’s why the ham is usually cut in half. A steak is prepared from the upper sirloin; by the way, this same part is often used for frying over a fire, for example, in such a favorite dish as kebabs. The lower part of the ham, which contains much less meat, is used for broths or pickling.
  • Legs. They take some time to prepare because they need to be boiled for a long time. Next, experienced chefs roll them in breadcrumbs, fry them, and then, adding

Baked pork with mustard

The recipe for this pork is very simple and does not require many ingredients. After baking, it does not become dry, but remains soft and juicy. Such pork can easily replace sausages on the table with a more tasty and healthy product.

Baked pork with mustard

To prepare baked pork you will need:

  • Pork – 1 kg;
  • “Russian” mustard – 2-3 tablespoons;
  • Mayonnaise – 3 tablespoons;
  • Ground black pepper – 1 teaspoon;
  • Salt - to taste;
  • Garlic – 1 medium sized head.

Let's start cooking:

Step 1. It is better to take pork from the neck or loin, but if you don’t have one, then just take the pulp in one piece. Wash it and dry it with a paper towel; if the meat is wet, the marinade will not stick to it well.

Step 2. In a deep bowl, mix mayonnaise with mustard.

Step 3. Brush the piece of meat with salt and ground black pepper.

Step 4. Spread mixed mayonnaise and mustard on top. Place the meat in a deep bowl, cover with a lid and place in the refrigerator to marinate for 2 hours.

Step 5. Peel the garlic and cut each clove into 4 cloves; if it is large, you can cut each clove into 6 cloves.

Step 6. Now take the meat out of the refrigerator, place it on a piece of foil in which you will wrap it, take a sharp thin knife and make cuts 2 cm deep on the meat. To do this, simply insert the knife evenly into the meat to this depth without removing the knife from the meat, tilt it slightly so that you can see the indentation and place a piece of garlic in the cut. So stuff all the meat.

Step 7. Wrap the meat in foil. Place it on a baking sheet and place it in the oven preheated to 180° for 1 hour.

Step 8. When 1 hour has passed, unwrap the meat and let it bake for another 20 minutes until golden brown.

If you don't like fried meat, then don't open the foil, but just let it bake for 1.5 hours, wrapped.

Remove the meat from the oven, let it cool and cut it into slices.

Great( 3 ) Badly( 1 )

Pork, as one of the more tender types of meat, remains one of the most preferred in preparing almost all meat dishes, not only the second, but also the first, and appetizers and snacks. It pickles quickly, often becomes soft when fried, has a pleasant light color, and tastes good in any form: stewed, fried, boiled, baked, dried, dried, pickled. So how to cook the second pork dish, giving the meat more juiciness? The process depends on what kind of dish you plan to prepare.

The five most commonly used ingredients in second pork recipes are:

If it is a whole piece of meat baked in the oven, it is easier to marinate it overnight, leaving it in the refrigerator. As a rule, cuts are made in the meat and pieces of garlic are placed inside. Then it is coated with a marinade from the desired products, which can be: garlic, vegetable oil, vinegar, citric acid, soy sauce, mayonnaise, mustard, salt, and so on.

If you plan to cook roast in pots, it is a good idea to fry the pork in a frying pan without oil until light brown, “sealing” the juices inside. The same is done when preparing stews, meat sauce, any pan-dishes, including others - there is a wide selection of pork recipes for the latter.

Five of the fastest pork recipes for main course:

Any meat can be used in minced meat, no matter how tough it may be. The main thing is to remove the veins and films so as not to spoil the taste of the final product. The same applies to boiled pork: add it to already boiling water, sweeten it slightly, and add salt towards the end.

Any pork stew will be more delicious if you add 1-2 tablespoons of vodka during the cooking process. It will give the meat tenderness and softness, but at the same time it will evaporate without a trace, there will be no alcohol left. Add a little sourness to sauces - it will improve and soften the taste. Lemon juice or vinegar will do. Roasted meats will also benefit from this.
